PEAR GINGERBREAD COBBLER

Steps:
- Preheat oven to 350°. In a large saucepan, combine the first five ingredients; bring to a boil. Reduce heat; simmer, uncovered, 10 minutes or until pears are tender, stirring occasionally., In a small bowl, mix cornstarch and cold water until smooth; stir into pears. Bring to a boil; cook and stir 2 minutes or until thickened. Stir in crystallized ginger. Transfer to a greased 8-in. square baking dish., In a large bowl, beat buttermilk, sugar, molasses, egg and oil until sugar is dissolved. In another bowl, whisk the remaining ingredients; gradually beat into buttermilk mixture. Pour over pear mixture., Bake 20-25 minutes or until filling is bubbly and a toothpick inserted in center comes out clean.

- In a large bowl, combine sugar and ground ginger. Stir in the pears, crystallized ginger and lime juice; set aside., Pour butter into an ungreased 11x7-in. baking dish. In a small bowl, combine the flour, sugar, baking powder, lime zest, salt and ginger. Stir in milk. Pour over butter (do not stir). Spoon pear mixture over the top. , Bake at 350° for 50-55 minutes or until bubbly and golden brown. Cool for 10 minutes before serving.

PEAR COBBLER
A rustic batter is dropped onto fresh pears before being baked for a healthier dessert. Using less sugar than most recipes I've seen, the crisp flavor of the pears is highlighted. My family and I enjoy this at breakfast. I leave 1 or 2 of the pears unpeeled to add a bit of color.

- Preheat the oven to 400 degrees F (200 degrees C). Butter a round 9x2-inch, 6-cup baking dish.
- Fill a large bowl halfway with water and add lemon juice. Peel all but 1 of the pears. Core and cut all the pears into eighths. Add pear slices to lemon water to keep them from browning.
- Combine egg and milk in a bowl and whisk until combined. Set aside.
- Whisk flour, baking powder, 2 tablespoons cane sugar, and brown sugar together in a separate bowl. Use a fork to cut cold butter into flour mixture until it resemble pebbles.
- Drain pears and put into a bowl. Sprinkle with corn starch and 1/4 cup cane sugar; toss to coat.
- Pour milk-egg mixture into the flour mixture. Mix batter until just combined. Add pears to the prepared baking dish. Drop batter by spoonful onto the pears.
- Bake in the preheated oven until browned on top, about 25 minutes. Allow to cool for 10 minutes before serving.

PEAR GINGER CRUMBLE

- Preheat the oven to 375 degrees F.
- For the topping: Combine the ingredients in a medium bowl and work together with a fork or with your fingertips until the ingredients are moistened.
- For the filling: Combine the pears slices, lemon juice, and ginger in a large bowl. Add the sugar and flour and toss to blend.
- Spray an 8 by 8-inch baking dish with cooking spray. Transfer the pear mixture to the dish. Sprinkle the topping over the pears. BAKED PEAR & GINGER COBBLER -WHOLE GRAIN GOODNESS
This fresh and easy dessert (or breakfast) dish cooks up quick and tastes decadent, although it is very light and made with very little fat and whole grains for good nutrition no one will ever guess is in there! I combined two recipes from my great aunt and made healthy substitutions to make it very low in fat, filled with whole grain goodness and guilt free without sacrificing any of the taste.

- Preheat oven to 375.
- Prepare the crumble topping by combining the first six ingredients and blending with a fork until moistened.
- Prepare the pears by peeling and then slicing the pears (discard the core) and tossing with lemon, white flour and if desired, the 2 tbsp of sugar. (I have made it without this added sugar, because my pears were nice and sweet by themselves).
- Spray a shallow dish with butter flavored cooking spray, then layer the pears evenly. Sprinkle the crumble topping over the pears.
- Bake about 30-35 minutes on center oven rack until the crumble is a golden brown.
- This is best served slightly warm or at room temperature. I finish with a dollop of freshly whipped cream, or vanilla ice cream and watch it dissappear!

EASY PEAR COBBLER RECIPE
This is our most popular pear cobbler recipe. A sweet cake-like batter tops a delicious cinnamon-spiced pear filling in this easy cobbler.

- Gather the ingredients.
- Pre heat oven to 325 F (165 C /Gas Mark 3), and place the rack in the middle. In a large bowl, mix the pears with 1/2 cup of the sugar and let stand.
- Put the butter in a 2-quart baking dish and place in the oven until melted, about 5 minutes.
- Combine the remaining sugar, flour, baking powder, cinnamon, and salt in a mixing bowl. Mix well.
- Whisk together the milk and egg in a separate small mixing bowl.
- Slowly combine the milk and egg mixture with the dry ingredients to make a batter.
- Pour the batter over the melted butter. Do not stir.
- Spoon the sliced pears over the batter. Do not stir.
- Bake in the preheated oven for 50 to 60 minutes, or until nicely browned and the pears are tender. If the topping appears to be browning, cover the dish with foil and continue baking until the pears are tender.
- Remove the cobbler from the oven and set it on a rack to cool slightly. Enjoy the cobbler hot or cold with a scoop of ice cream or whipped cream.

Invert the dough, centered, over the fruit. Discard the paper. Using a greased sharp paring knife, cut large decorative slashes in the dough to vent steam. Sprinkle the dough evenly with the remaining 1 tablespoon sugar. Place the baking dish on a rimmed baking sheet (to catch any overflowing juices).
