1/2 pound orange roughy fillet
1/2 cup lemon juice
1 teaspoon walnut, avocado or vegetable oil
1 1/2 teaspoons fresh marjoram leaves or 1/2 teaspoon dried marjoram leaves
1/8 teaspoon salt
2 medium roma (plum) tomatoes, chopped (3/4 cup)
1/2 bell pepper, cut into rings
1 small onion, sliced

Steps:

  • Place fish in shallow glass dish. Mix lemon juice and walnut oil; pour over fish. Cover and refrigerate at least 15 minutes but no longer than 1 hour.
  • Heat oven to 375°F. Drain fish; discard marinade. Sprinkle fish with marjoram and salt. Place fish on 12- to 15-inch length of aluminum foil or parchment paper. Top with tomatoes, bell pepper and onion. Wrap fish in foil, sealing tightly. Place on cookie sheet.
  • Bake about 15 minutes or until fish flakes easily with fork.

  • Heat oven to 350°F. Place margarine in 12x8-inch (2-quart) glass baking dish. Heat in oven for 3 to 5 minutes or just until margarine sizzles. Remove baking dish from oven; tilt to coat bottom with melted margarine.

4 orange roughy fillets
12 slices fresh or salt-cured preserved lemon
8 slices fresh lime
2 tablespoons fresh cilantro (stems removed and chopped)
1 tablespoons fresh jalapeno pepper (seeds and veins removed and finely chopped)
4 tablespoons unsalted butter
salt (to taste)
Black pepper (to taste)

Steps:

  • Preheat oven to 400 degrees.
  • Tear off 4 sheets of aluminum foil that are large enough to fold over an orange roughy filet and have a few inches to spare on each side to seal the packet. On each sheet, place a filet slightly off center and add 3 lemon slices and 2 lime slices on top. Top each filet with a quarter of the cilantro and jalapeno pepper, and then top with 1 T. butter. Sprinkle salt and pepper on top to taste.
  • Seal the packet by folding the aluminum foil in half over the ingredients. Fold the three open sides one at a time and over several times to seal the foil packet completely. The packets should be tight enough to hold in steam, but still loose enough to allow room for the air to expand.
  • Into the preheated oven, place the packets and cook for 15 minutes. (If using filets that are still frozen, add a couple minutes to your cooking time.)
  • After cooking, open the foil packets carefully to avoid the hot steam. Discard lime and lemon slices. You can either transfer the filets to plates or leave them inside of the foil packets. Top with a flavorful salsa, such as spicy peach salsa, and serve.

1 pound Orange Roughy (cod or catfish fillets, fresh or frozen )
1 cup onion (chopped)
1 cup red pepper (or green, chopped)
2 teaspoons garlic (bottled, minced)
1 tablespoon oil
1 can cream of mushroom soup ( or cream of shrimp soup, Do Not Dilute)
3/4 cup half-and-half cream (or light cream)
1 teaspoon lemon juice
1/2 teaspoon lemon-pepper seasoning
1/4 cup bread crumbs (fine)
1/4 cup Parmesan cheese (freshly grated)

Steps:

  • If using frozen fish, thaw, rinse and pat dry with paper towel. If necessary, cut fish into serving size pieces.
  • Put the onion, sweet pepper and garlic in a large skillet or frying pan with hot oil and cook just until tender. Place the cooked vegetables into a 2-quart greased baking dish. Place the fish on top of the vegetables and bake uncovered in 400 degree oven for 10 minutes.
  • In the skillet/frying pan used for cooking the vegetables, combine the soup, half-and-half cream, lemon juice and lemon-pepper seasoning. Bring to a boil then reduce heat and simmer uncovered for 5 minutes.
  • Pour the soup mixture over the fish. Combine the Parmesan cheese and bread crumbs in a small bowl. Sprinkle over the soup and fish. Bake uncovered for 5-10 minutes more or until the bread crumbs are brown.

1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon lemon pepper seasoning
1 egg white
1/4 cup plain bread crumbs
1/4 cup cornmeal
1 1/2 teaspoon finely grated lemon zest
1/2 teaspoon dried basil or dill

Steps:

  • Preheat the oven to 450 degrees F. Grease a shallow baking dish large enough to hold the fish in a single layer. Combine the flour, salt, and lemon pepper seasoning in a shallow dish. Beat the egg white until frothy and place in another shallow dish. Combine the bread crumbs, cornmeal, lemon zest, and basil (or dill) in another shallow dish. Dip one side only of the fish into the flour mixture, shaking off any excess. Dip the same side into the egg white then into the bread crumb mixture. Press the bread crumbs so they adhere. Place the fish coating side up in the baking dish. Tuck any thin edges of the fish underneath the fillet so they don't overcook. Place the fish in the oven and bake at 450 degrees F for 6-12 minutes (depends on thickness of the fillets), or until the fish flakes easily with a fork. Serve hot.

I love buttery, lemony white fish so I devised this simple recipe. For this dish, you can use roughy, tilapia, whitefish, halibut.... any nice white fish fillet. And this is a great way for NEWBIES to seafood to break in. The technique is pretty forgiving of mistakes and the fish WILL be done, but not overcooked. Enjoy!

4 orange roughy fillets
8 tablespoons butter, melted (no margarine!)
2 lemons, halved
1/2 teaspoon paprika
8 fresh parsley sprigs (curly Italian parsley is best)
cooking spray

Steps:

  • Pull off four sheets of good quality aluminum foil, each about 24 inches long. Double each one over so it's a foot long and spray with the cooking spray.
  • Pre-heat the oven to 375-degrees F.
  • Lay out a fillet on each sheet of foil and pull the sides up a bit so that it will hold liquid.
  • Squeeze a half lemon over each fillet. Cut up the spent lemons into wedges and put the pieces around the fish.
  • Pour the melted butter equally over each fillet. Lightly dust the top of each fillet with the paprika. Instead of paprika, you could substitute Old Bay Seasoning, which yields an excellent flavor. In any case, you may not need all the spice, depending on the size of your fillets.
  • Close the foil and make a seal. Place the closed foil bowls into the oven, middle rack, and bake for 15 minutes.
  • Revove the foil bowls from the oven, carefully open them to expose the filets and place them all on a sheet pan. Re-set the oven to "broil" (on "high" if there is a setting), and return the fish to the oven just above the middle rack. Broil for just a few minutes until you see very slight browning, no more than 5 minutes.
  • Garnish with the parsley sprigs and serve hot with basmati rice on the side. (See: Recipe #217802 ). You can just leave the fish on the foil and place it on serving plates if you wish.

0.25 cup yellow onion (1/4 cup almost shaved yellow onion)
0.25 cup basil (1/4 cup thinly sliced basil)
20 cherry tomatoes (20 halved cherry tomatoes)
4 tbsps white wine (4 tablespoons dry white wine)
4 tbsps olive oil (4 tablespoons olive oil)
4 ounces orange roughy fillets (4 6 ounces orange roughy fillets)

Steps:

  • Fold four 24x12 inch pieces of aluminum foil, heavy duty preferably, in half crosswise. Open and place on a work surface.
  • Divide zucchini and summer squash evenly between the pieces of foil and arrange on layers on one half of each piece of foil. Divide equally and add the onions and sliced basil to it.
  • Drizzle each packet with 1 tablespoon of wine and ½ tablespoon olive oil. Season with salt and pepper.

2 large Lemons (12 thin slices of fresh lemon)
3 large limes, (2 thin slices fresh lime)
2 tablespoons fresh cilantro, stems removed and chopped
1 tablespoon fresh jalapeno pepper, seeds and veins removed and finely chopped
4 tablespoons butter
lightly salt and pepper, to taste (to taste)

Steps:

  • If preparing indoors, preheat oven to 400 degrees.
  • Tear off 4 sheets of aluminum foil into sections large enough to fold over fish filets, with another couple of inches on each side to seal. Place a filet slightly off center on each sheet and add 3 lemon slices and 2 lime slices on top of each. Top each filet with ¼ of the cilantro and jalapeno pepper. Top with 1 T. of butter and sprinkle with salt and pepper, to taste.
  • To seal packet, fold aluminum foil in half over the ingredients. Fold the 3 open sides, one at a time, over several times to seal the packet completely. The goal is to seal the packet tight enough to hold in the steam, but allow enough room for the air to expand.
  • Place foil packet in preheated oven for 15 minutes, or place on hot grill over medium, direct heat and cook for approximately 8 - 10 minutes. Add a couple minutes to your cooking time if starting with frozen filets.
  • To serve, open the foil packets, carefully avoiding the hot steam. Discard lemon and lime slices. Transfer filets to plates (if desired) or leave inside foil packets. Top with spicy peach salsa and serve.

4 4oz Fish Fillets - any firm white fish
1 C. Japanese Panko Bread Crumbs
1 T. onion powder
1/2 T. garlic powder
1 1/2 t. Paprika
2 egg whites, beaten
1/2 C. flour
salt/pepper to taste

Steps:

  • Rinse Fillets and pat dry; Mix flour and dry spices in ziplock or shallow bowl; beat egg whites in another bowl; panko crumbs in 3rd bowl or another ziplock bag. Press both side fillet into flour mixture, dredge in egg mixture, and then press into Panko crumbs. Place flllets in 8 x 13 pan lined with foil and baker at 400 until flaky.

Pour 1 tablespoon of white wine on top to aid in the steaming. Add the herb sprig on top. 5. Fold up the parchment paper similarly to a present. These can be made before hand too. 6. Roast in the over for 20 minutes. SERVE!
