Steps:
- Make the cookies: Whisk the flour, baking soda and salt in a medium bowl. Beat the butter and granulated sugar in a stand mixer fitted with the paddle attachment on medium speed until fluffy. Beat in the egg, then beat in the vanilla and almond extracts. Reduce the mixer speed to low; add the flour mixture and beat until combined. Cover and chill 1 hour.
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Scoop 1-inch mounds of dough onto the prepared baking sheets, about 2 1/2 inches apart; flatten the mounds with your fingers. Bake until the cookies are golden around the edges, about 10 minutes. Let the cookies cool 10 minutes on the baking sheets, then transfer to racks to cool completely.
- Make the frosting: Beat the butter, almond and vanilla extracts, and salt in a stand mixer fitted with the paddle attachment on medium speed until light and fluffy. Add the confectioners' sugar and beat until smooth and creamy. Transfer to a piping bag fitted with a small star tip. Pipe the frosting onto the cooled cookies and top with nonpareils or Jordan almonds.

BAKED-ON COOKIE FROSTING
Cookies with this baked-on frosting store well and can be stacked, and even frozen, once they have cooled. This works best with cutout cookies and best when it is piped on, as opposed to spread. This is also a great way to decorate delicate-textured cookies that could break by spreading frosting on. I found this recipe on the Land O' Lakes website, and I made up the variations myself. The yield depends on how you pipe the frosting and how big the cookies are, of course, so I just put that it makes enough frosting for 2 dozen cookies. Have fun!

Steps:
- Combine all of the frosting ingredients in small bowl, with a hand mixer, until smooth.
- Spoon the frosting in plastic resealable food bag.
- Cut a very small tip from one corner. Decorate cookies with frosting to create desired designs. Sprinkle with sugar, if using.
- Bake as directed on the cookie recipe. If desired, sprinkle with sugar again while still warm.
- Tip: If frosting is too thick, stir in 1/8 to 1/4 teaspoon hot water; if too thin, stir in 1 to 2 teaspoons flour.
- For cinnamon-vanilla frosting: Substitute vanilla extract for the hot water and add 1/4 teaspoon ground cinnamon.
- For lemon frosting: Substitute fresh lemon juice for the hot water. You can add 1/2 teaspoon lemon zest for extra flavor, if desired.

- In the bowl of your stand mixer, or a large mixing bowl, combine the shortening and vanilla extract using the whisk attachment. Beat until well combined and a creamy consistency.
- Add the confectioners sugar and heavy cream in alternating amounts, starting with the first cup of confectioners sugar. Then add a drizzle of heavy cream (1/2 to 1 TBSP at a time), and alternate again until all of the confectioners sugar has been incorporated.
- Add enough heavy cream when alternating so that your stand mixer or handheld mixer can work with the frosting as it comes together (if the frosting is too stiff, add more liquid).
- The amount of liquid can vary greatly depending on your temperature and humidity (weather conditions). Use enough liquid to get a consistency that is typically thicker than store bought frosting, but that will still pipe or spread easily when applied to cookies.

- Using a hand or stand mixer, mix together the sugar, butter, and shortening just until combined., With the mixer on medium speed, gradually add the extracts and the desired amount of water or milk.
- Less liquid will yield a stiffer frosting that will dry slightly and make cookies easier to stack; more will result in a softer, buttercream-like consistency, one that stays soft for several days., Beat on high speed until fluffy, 1 to 2 minutes.
- Remove from the mixer bowl, and use immediately; or store airtight at room temperature, until ready to frost cookies.

- In another larger bowl, beat together the butter, sugar, and salt until light and fluffy, about 1 to 2 minutes. Add the flour-cocoa mixture to the beaten butter, a few tablespoons at a time, and continue to mix until all of the flour is incorporated. The mixture will look quite crumbly, however, the dough is actually quite pliable.
- Line a work surface with a large piece of wax paper. Dump the chocolate cookie dough onto the wax paper and begin shaping it into a log with your hands. Roll the log, flattening the edges of it as you go, until it is smooth, and about 7-inches (18-cm) long. Move the cookie dough log down to the bottom edge of the sheet of wax paper. Roll the dough completely in the paper. Once rolled, twist the ends of the paper to secure.

- Combine the powdered sugar, 2 tablespoons (30 ml) of milk, light corn syrup, and vanilla extract in a large mixing bowl and whisk until well combined and no lumps remain. The mixture will be pretty thick at this point.
- Add 1/2 teaspoon of milk (5 ml) at a time to the remaining 2/3 of the mixture until the icing reaches a filling consistency. When you lift your whisk or spoon from the bowl, the icing should quickly melt back into the bowl of icing.
- Place the outline icing and fill icing in separate piping bags (or zip lock bags) and cut the tip off of each one. Outline each cookie with the outline icing, then use the fill icing to fill in the cookie. Use a toothpick if needed to move the icing around and fill in any empty spots.

- In a medium bowl, whisk the heat-treated flour, cornstarch, and salt together. Set aside. Using a handheld or stand mixer fitted with the paddle attachment, beat the butter on medium speed in a large bowl until smooth and creamy, about 2 minutes. Add the brown sugar and mix on medium until light and fluffy, about 3 full minutes. Using a rubber spatula, scrape down the sides and up the bottom of the bowl as needed. Add the egg whites and vanilla extract and mix until fully incorporated, about 2 minutes.
- Add half of the flour mixture and mix on low just until the powdery texture of the flour disappears, about 15 seconds. Immediately add the rest of the flour mixture and mix until combined. Remove the bowl from the mixer and use a rubber spatula to fold in the chocolate chips.
- Using a handheld or stand mixer fitted with the paddle attachment, beat the butter in a large bowl on medium speed for 3 minutes, or until light, fluffy, and completely smooth. Add the vanilla extract, milk, and salt and beat until combined. Using a rubber spatula, scrape down the sides and up the bottom of the bowl as needed. Add the confectioners’ sugar, then beat on low speed for 15 seconds. Switch to medium-high speed and beat the frosting until super light and fluffy, about 4-5 minutes. The frosting will become lighter in color as air is whipped into it.
