BAKED PEACHES

Baked Peaches image

Baked Peaches are DELICIOUS and EASY! Fresh peaches with maple syrup, brown sugar and cinnamon, baked until warm and tender. Add ice cream or caramel or enjoy them just as they are!

Provided by Erin Clarke / Well Plated

Categories     Dessert

Time 35m

Number Of Ingredients 9

3 fresh, very ripe peaches (halved and pitted)
2 tablespoons extra virgin olive oil
2 tablespoons pure maple syrup or honey
1 tablespoon brandy (bourbon, or rum (optional))
1 tablespoon coconut sugar or light brown sugar
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon kosher salt
Vanilla ice cream, Greek yogurt, or heavy cream, for serving

Steps:

  • Preheat oven to 350 degrees F. Lightly coat a 9x9-inch or similarly sized baking dish that's large enough to hold the peach halves in a single layer with nonstick spray. Pick a dish that's sized to where your peaches fit comfortably side by side, but there isn't too much excess room around them. Arrange peaches cut-side up in the dish.
  • In a medium mixing bowl, stir together the oil, maple syrup, brandy, coconut sugar, vanilla, cinnamon, and salt. Spoon the mixture over the peaches, filling the center and letting it run over the sides.
  • Bake peaches, uncovered, until the peaches are cooked through and fork-tender, about 30 minutes. Serve warm, topped with vanilla ice cream, Greek yogurt, or a pour of heavy cream, as desired.

BAKED NECTARINES (OR PEACHES)

Baked Nectarines (Or Peaches) image

Make and share this Baked Nectarines (Or Peaches) recipe from Food.com.

Provided by HomemadeChef

Categories     Dessert

Time 25m

Yield 3-4 serving(s)

Number Of Ingredients 6

1 lb nectarine
1/2 cup light brown sugar, packed
2 teaspoons cinnamon
4 tablespoons butter
1 cup honey graham crackers, crushed (if you use cinnamon graham crackers, just leave out the cinnamon)
3 cups vanilla ice cream

Steps:

  • Cut up nectarines into bite sized pieces. (Figure about 1-1/2 nectarines per person.).
  • Place in bottom of baking dish.
  • Sprinkle with brown sugar (I usually use no more than a tablespoon per nectarine) and cinnamon (as much as you want).
  • Then crush graham crackers over the top, about one whole graham cracker per nectarine.
  • Then, randomly place small pads of butter over the top -- you don't need much, but it keeps the top moist.
  • Then, bake at 400 for 15 minutes or until desired softness.
  • Let it cool for a little bit, then scoop over ice cream.
  • You can use peaches instead of nectarines if you can't find them, but I have found that nectarines turn out sweeter and juicier.

BAKED NECTARINES & RASPBERRIES WITH ALMONDS & HONEY

Baked nectarines & raspberries with almonds & honey image

One of the simplest ways to showcase summer fruit, this dessert is finished with a crunchy amaretti biscuit and flaked almond topping

Provided by Jane Hornby

Categories     Dessert, Treat

Time 45m

Number Of Ingredients 11

125ml white wine
2 tbsp clear honey
4 ripe yellow-fleshed nectarines
100g crunchy amaretti biscuits
1 large egg yolk
1 tbsp toasted flaked almonds
1 tbsp golden caster sugar
1 tbsp butter
1 vanilla pod , split and seeds loosened
175g raspberries
clotted cream or thick Jersey cream, to serve

Steps:

  • Mix the wine and honey, and stir to dissolve. Halve and stone the nectarines, and place them, flesh-side up, in a medium ceramic baking dish. Crush the biscuits well, then add the yolk, 2 tbsp of the wine mixture and the flaked almonds. Mix together, then spoon into the nectarines where the stones were. Use all of the mixture.
  • Scatter the sugar over the nectarines, then top each mound of biscuit mixture with a little knob of butter. Pour the remaining wine and honey around - but not over - the fruit, add 1 tbsp water, then tuck in the vanilla pod. Can now be chilled for up to 4 hrs.
  • Heat oven to 180C/160C fan/gas 4. Bake the nectarines for 30 mins until the fruit is soft and the biscuit filling is crisp and golden. Carefully stir the raspberries through the pan juices, then leave to cool for 15 mins before serving with cream.

BAKED NECTARINES WITH ALMONDS & MARSALA

Baked nectarines with almonds & Marsala image

Create a delicious Italian-style topping for peaches and nectarines for a simple summer dessert

Provided by Sarah Cook

Categories     Dessert, Dinner

Time 1h

Number Of Ingredients 9

6 nectarines , halved, stones removed
100g amaretti biscuits
100g butter , softened
85g ground almonds
85g golden caster sugar
1 egg
1-2 tbsp toasted, flaked almonds
250ml marsala
Greek yogurt or crème fraîche , to serve

Steps:

  • Heat oven to 180C/160C fan/gas 4. Sit the nectarine halves snugly in a baking dish, cut-side up. Put the amaretti biscuits into a large bowl and use the end of a rolling pin to bash into crumbs. Add the softened butter, ground almonds, caster sugar and egg, and stir together.
  • Push spoonfuls of the mixture into the cavities of the nectarines, piling more on top until the mixture is evenly divided among them. Scatter with almonds, then carefully pour the Marsala into the dish through a gap between the fruit so the topping doesn't get soggy. Bake for 40-50 mins until golden and crisp, and the fruit is soft. Eat warm with the juices spooned over, and a dollop of Greek yogurt or crème fraîche alongside.

BAKED PEACHES

Baked Peaches image

Categories     Dessert     Side     Bake     Peach

Yield 4 servings

Number Of Ingredients 5

4 ripe freestone peaches
1 cup huckleberries, blackberries, or raspberries (optional)
3 to 4 tablespoons sugar
1/2 cup white wine, Beaumes-de-Venise or other dessert wine, or water
Whipped cream or vanilla ice cream (optional)

Steps:

  • Preheat the oven to 375°F. Halve the peaches and remove the pits. Arrange the peaches in a shallow gratin dish, cut-side up, in a snug single layer. If you like, fill the cavity of each peach with berries. Sprinkle the sugar over the peaches and berries-more or less, depending on the fruits' sweetness. Drizzle the wine or water over the fruit. Bake the peaches for about 20 minutes, until juicy and tender. Serve warm with their juices and, if you like, with softly whipped cream or vanilla ice cream.
  • Notes
  • If you prefer, peel the peaches before baking: Drop the peaches in boiling water for 20 seconds or so, just enough to loosen the skins. Lift them out and plunge immediately into ice water. When cool, slip off the skins.
  • In place of the berries, the peaches are delicious baked with an almond stuffing: Cream together 1/4 cup butter and 1 tablespoon sugar. Blend in 1 small egg yolk, 1/4 cup lightly toasted and chopped almonds, and 4 crushed macaroon cookies. Spoon the stuffing into the cavities of the peaches and bake. The stuffing is equally good with pears, nectarines, or apricots.

23 NECTARINE RECIPES TO MAKE THIS SUMMER - PUREWOW

From purewow.com
Author Taryn Pire
  • Nectarine Salad with Cucumber, Basil and Goat Cheese. Fresh, herbaceous and oh so refreshing, this salad is destined for your next summer picnic. Feel free to add savory or crunchy elements, like prosciutto, baby spinach or toasted pine nuts.
  • 20-Minute Grilled Jerk Chicken with Mango-Nectarine Salsa. Sweet tropical fruit is just the match for smoky, charred chicken. Might we suggest saving some of the citrusy salsa for taco night?
  • Nectarine and Wisconsin Burrata Bite Crostini. As if the balsamic-kissed appetizer wasn’t fancy enough, each hors d’oeuvre is sprinkled with basil-infused lemon sugar before it’s served.
  • Corn Fritter Caprese with Peaches and Tomatoes. Behold, summer on a plate. Not only does this dish combine fresh corn, juicy tomatoes and in-season stone fruit, but each fritter is loaded with gooey mozzarella and salty Parmesan to boot.
  • Linguine with Bacon, Peaches and Gorgonzola. Fact: You can never have too many 30-minute meals up your sleeve. And this one is virtually foolproof, while also being fancy enough to serve at a casual alfresco dinner.
  • Fried Mozzarella, Basil and Nectarine Stacks with Balsamic Glaze. The two-ingredient glaze is honestly so simple that you’ll never lean on store-bought again.
  • Grilled Chicken with Nectarine Relish. Don’t feel like firing up the barbecue on a weeknight? Use a grill pan on the stovetop instead. (We’re also betting that pickled red onions in the relish would taste just as divine as raw ones, BTW.)
  • Nectarine and Fig Summer Salad with Crispy Pancetta. Not only are there sliced nectarines in the salad, but the whole thing is also tossed in a sweet, tangy nectarine vinaigrette.
  • Honey-Ginger Cedar Plank Grilled Salmon with Avocado Salsa. Not to steal the spotlight from the fish, but we’re most psyched about the uber-versatile salsa.
  • Grilled Peach, Chicken and Ricotta Pizza. Store-bought pizza dough is our love language. We use it to make cinnamon rolls, calzones and, most importantly, this barbecue-friendly pie that’s equal parts smoky, creamy and summery.

PEACH VS. NECTARINE: WHAT'S THE DIFFERENCE? | MYRECIPES
2019-09-05 Peaches and nectarines taste extremely similar—so much so that it’s unlikely anyone will ever notice if you use nectarines in your peach tart or pie. However, there are a couple things to keep in mind before you make the switch: Peach skin is ever-so-slightly thicker than nectarine skin, which makes it a bit more difficult to use unpeeled in cooked desserts. Many people believe nectarines ...
