EASY COPYCAT KFC CHICKEN RECIPE
We set out to make copycat KFC chicken, and it was easier than we thought to make fried chicken that tasted as good as what you'll find at KFC.

- In a large bowl, combine the flour with the herbs and spices and set aside.
- Meanwhile, in another large bowl, whisk together the buttermilk and egg, mixing until they're well combined.
- Add the chicken to the buttermilk bowl and toss to coat. Cover the bowl lightly with plastic wrap or a lid and let it sit for 30 minutes, or as long as overnight. If marinade times exceed 30 minutes, place the bowl in the refrigerator.
- Meanwhile, preheat the oven to 175 degrees Fahrenheit. Line a baking sheet with aluminum foil. Set an oven-safe wire cooling rack inside the sheet and set aside.
- In a large Dutch oven, heat about 3 inches of oil. If you're using an electric tabletop fryer, fill the unit to its MAX line.
- Preheat the oil to 350 degrees over medium-high heat, using a deep-frying thermometer to check the temperature. When the oil reaches 350 degrees, reduce the heat to medium-low.
- Remove a chicken piece from the buttermilk, allowing any excess liquid to drip off. Place the piece in the flour mixture and press down firmly, allowing the flour to adhere on all sides. Shake off any excess flour and carefully drop the chicken into the hot oil. Continue dredging chicken until the fryer is full but not overcrowded; you should be able to fry three to four pieces at a time.
- Cook the chicken for about 12 minutes, turning halfway through, until the crust turns an appealing golden brown color.
- Transfer the chicken pieces to the prepared baking sheet and place it in the oven.
- Allow the oil to return to temperature before adding more chicken. Repeat the dredging and frying process with the remaining pieces of chicken.
- When all the chicken is fried, let the pieces sit in the oven until each reaches an internal temperature of 165 degrees.
- Sprinkle each piece of chicken with a few shakes of MSG before serving. If you're unsure about food additives like MSG, feel free to skip the extra seasoning.

KFC OVEN BAKED "FRIED" CHICKEN TENDERS
Crunchy and perfectly seasoned, it really does taste like KFC! It is a mash up of my own recipe, the "11 Secret Herbs and Spices" from the Homemade KFC recipe by Every Nook & Cranny, and the coating recipe from this Best Baked "Fried" Chicken by Carlsbad Cravings.. Marinating makes the chicken extra juicy but if you don't have time to marinate, this is still worth making! (See Note 3) PS I know it looks like a lot of salt but it's not overly salty, it's KFC level salty. Reduce salt and/or celery salt if desired.

- 1. Place thawed chicken breast tenderloin strips in a bowl of milk. Let soak for 20-30 min. Preheat oven to 400 degrees. Cut 1/2 stick of butter into a few pieces and place in a 9x13 pan. Melt butter in pre-heated oven.
- 2. Spread melted butter around the bottom of the pan. Lightly spray the pan, if needed, to make sure that there are no dry spots
- 3. Shake excess milk off of chicken and completely coat each piece with the seasoning mix. You can either shake the chicken in the bag, until coated, or dip each piece in the bowl until coated. Place each piece of chicken in the pan.
- 4. Cook for 20 min. Turn each piece of chicken and continue cooking for 20 more minutes, or until cooked through. ENJOY!

- Put chicken in zip lock bag or dish (that you can cover), add the buttermilk, shake to thoroughly coat and place in the refrigerator overnight.
- Then when you are reading to make your KFC style feast, the following day you can go to the next step.
- Very lightly toast the pieces of bread (I find this gives a much crispier coating) and allow to cool
- Preheat oven to 200c, fan 180c or 400f (gas mark 6)
- Place lightly toasted bread in a food processor and blitz until fine breadcrumbs.
- Line a large baking tray with some parchment paper and spray with spray oil
- Add the breadcrumbs to a bowl, along with all the herbs and spices and mix thoroughly
- Remove the chicken pieces from the bag (or dish) and discard of the bag and leftover buttermilk.
- Add the breadcrumb mix to a dish or plate.
- One by one dip each chicken piece in the beaten egg and then roll into the breadcrumbs (pat the breadcrumbs firmly into the chicken with hands to ensure each chicken piece is thoroughly covered with the breadcrumb mix.
- Place the chicken pieces onto the parchment lined tray and spray over the top with spray oil.
- Bake in the oven for approx 45 mins, until the chicken is lovely and golden and cooked through.

- Pat chicken completely dry inside and out (avoid washing regarding salmonella contamination concerns); remove innards and set aside
- Make a cut in skin between leg and breast; push the leg away from body and leg-joint should pop open
- Cut legs away through the joint; repeat on other leg
- Cut through middle joint of leg to separate into a thigh and a drumstick
- Find wing tip joint and cut through it; remove tips and set aside with stock bits
- Remove back piece by cutting along each side of back under where leg was, between fine bones

- Find base of neck with fingers; use kitchen sheers to cut off neck at base (may take two cuts) and remove aside with soup stock bits
- To remove backbone, use poultry shears to cut along each side of backbone; remove and set aside with soup stock bits
- Lay breast side down, bone side up; cut breasts in half through breastbone by holding tip of large knife on board; push back of knife down and cut or slice through breastbone
- Determine half way point in one breastbone to divide into 2 equal portions; hold tip of large knife on board, push back of knife down and cut or slice through breast producing 2 equal portions
- Repeat with second breast; set aside and note that there are now 8 similar sized pieces of chicken ready to prepare for recipe
- Preheat oven to 425; rub olive oil evenly onto each chicken piece and lightly season each piece with fine salt
- Mix all dry rub ingredients together; dredge oiled chicken well to coat
- Prepare baking sheet by covering with parchment paper and setting rack on top of sheet to enable chicken pieces to drip onto paper below
- Place dredged chicken on rack over parchment covered or foil-lined baking sheet; bake for 45 minutes until skin is golden and crisp
- Remove from oven and serve immediately
MY OVEN FRIED CHICKEN (KFC COPYCAT)
My Oven Fried Chicken is a KFC Copycat, is BAKED not fried, and has a fantastic flavor and crunch. What more could you ask for in "fried chicken" without all the grease! - Place the chicken parts with the skin on in a plastic bag and pour the buttermilk in to coat. Squeeze the air out of the bag and seal. Massage the chicken and buttermilk with your hands to coat evenly and allow to marinate in the refrigerator for 30 minutes minimum up to several hours.
- Preheat your oven to 425°F. In a medium sized bowl using a whisk, mix together the flour, Panko, baking powder and 11 herbs and spices. Set aside.

- Cut each chicken breast into 4 tenders.
- Have the marinade previously prepared by mixing the hot sauce and buttermilk in a bowl.
- Put the chicken tenders in the marinade and let them soak for half an hour.
- Beat the eggs in one bowl. Mix the flour and spices in a separate bowl.
- Dip the marinated chicken tenders in the flour and spice mixture, in the bowl with eggs, and once again in the flour and spice mixture.
- Shake off any excess flour before placing the tenders on a baking sheet. Do this with each chicken tender.
- Add canola oil in a dutch oven, around 3 inches deep, and heat it to 350°F.
- Place the chicken tenders in the heated oil and fry until golden brown, or 5 to 7 minutes.It's best to fry in small batches.

- Start with trimming two skinless boneless chicken breasts. Try to use breasts of about the same size. If thick, flatten to 3/4 inch thick with a meat mallet or heavy pan.
- Mix 2 cups buttermilk or milk. The original recipe in the Tribune used an egg in the marinade. I no longer use it but you can if you want. Add the chicken and allow to marinate in the refrigerator for 30-60 minutes.
- Preheat oven to 375° convection or 400° conventional. Mix the 11 spices with the flour.
- Prepare an oven-safe pan with 2 teaspoons vegetable oil. Remove chicken breast one at a time, allowing the excess marinade to drain off. Dip in the spice/flour mix, cover completely, shake to remove excess, and on a rack.
- Allow to sit for 20-30 minutes. This will help the coating to stick. Give any of the coating on the breasts that looks dry a light spray of PAM and move into pan with melted butter.
- Bake until internal temp of 165°, about 35-40 minutes. Cooking time will vary some due to oven variations, the size, and thickness of the chicken, and the pan used.
- If you want gravy, remove chicken from pan. Mix 1 cup of chicken broth with 4 tablespoons flour either by whisking or in a shaker. Over medium-high heat, add 1 more cup of chicken broth to the pan and bring to a boil. Slowly add the flour mixture while whisking continuously until thickened and then a few more minutes. If some of the breading come off the chicken, leave it in the gravy for extra flavor.
