- Preheat the oven to 425 degrees F (220 degrees C).
- Mix Spicy Italian Sausage (1 pound), Yukon Gold Potato (6), Cremini Mushroom (1 cup), Husk Tomato (1 cup), Garlic (1 handful), Shallot (2), Olive Oil (1/4 cup), Bay Leaf (2), Dried Thyme (1 tablespoon), Dried Rosemary (1 tablespoon), and Balsamic Vinegar (1 tablespoon) together in a baking pan coating everything evenly.
- Cover with aluminum foil and bake for 30 minutes.
- Remove foil and mix ingredients so they don't stick to the pan. Bake uncovered for another 30-45 minutes or until potatoes are cooked through and golden brown.
- Keep checking and feel free to mix every now and then depending on how caramelized or crispy you like everything.

- Preheat the oven to 400 F degrees.
- In a large bowl combine the apple cubes, fingerling potatoes, baby carrots, onion, sage and rosemary. Drizzle the honey and olive oil over, season generously with salt and pepper then toss really well so that everything.
- Arrange the veggies and apples in a large shallow roasting pan. Arrange the sausages in and around the vegetables.
- Bake for 30 minutes or until golden and cooked through.

I have had to adapt all my cooking to avoid anything that can induce heartburn. There are so many things I can't eat, I was about to despair of ever figuring out anything tasty I could cook. After much browsing, I came up with this fabulous recipe. All of my friends now make this recipe, so it's not just for heartburn sufferers! Of course, you can always add garlic or onion, but I guarantee you won't miss them! I usually use chicken thighs and the only sausage I can eat is bratwurst, but Italian would be yummy, of course.

- Preheat oven to 450 degrees F (230 degrees C). Prepare a large baking dish with cooking spray.
- Pour half of the olive oil into a large skillet over medium heat. Cook the bratwurst in the hot oil until browned on both sides, about 5 minutes; set aside. Add the remaining olive oil to the skillet and return to heat; brown the chicken pieces in the hot oil 7 to 10 minutes; season with salt while cooking; set aside and return the skillet to heat. Heat the potatoes in the skillet until lightly browned. Arrange potatoes, chicken, and bratwurst in the prepared baking dish; season with salt and drizzle with 2 tablespoons olive oil; sprinkle with about half of the chopped rosemary.

- Rinse and cut cherry tomatoes in halves. Rinse and cut bell pepper in strips, then cut into 1 inch bite size chunks. Arrange in a single layer on the parchment paper lined baking sheet.
- Drizzle olive oil then sprinkle Italian seasoning over the vegetables. Toss to coat.
- Preheat your oven to 400 degrees F (205 degrees C) and line a baking sheet with parchment paper (or aluminum foil).

- Preheat the oven to 200°C.
- Slice the sausages into 4cm pieces and place in a large roasting pan.
- Add the potatoes, paprika, rosemary, garlic cloves, sea salt and pepper.
- Tear the ciabatta into bite size pieces and add to the roasting tray.

- Place the potatoes in a medium pot and cover with cold water. Season the water with a little salt and bring to the boil over a high heat. Parboil the potatoes for 15 minutes or until a knife inserts into them easily. Remove and drain and slice into 1cm rounds.
- Using a peeler, shave strips of rind from the lemon and arrange in the bottom of a large oven tray.
