Steps:
- Preheat oven to 425 degrees F.
- Pat chicken dry. Place a chicken breast in a large zip-top bag and zip the top (make sure to release any air in the bag first), then place it on your poultry cutting board. Using a meat mallet like this one, pound to flatten the chicken. Repeat the process with the remaining chicken breast pieces.
- Season the chicken with kosher salt and pepper on both sides and place in a large mixing bowl or dish. Add spices, minced garlic, extra virgin olive oil, and lemon juice. Combine to make sure the chicken is evenly coated with the spices and garlic.
- In a large lightly oiled baking dish or pan, spread the onion slices on the bottom. Arrange seasoned chicken on top, and add the tomatoes.
- Cover the baking dish tightly with foil and bake for 10 minutes covered, then uncover and bake for another 8 to 10 minutes or so. Watch carefully. This can take less or more time depending on the thickness of your chicken breasts. To be sure the chicken is cooked through, use an instant digital cooking thermometer. It should register 165 degrees F.
- Remove from the heat. Let the chicken breasts rest (cover with foil or another pan) for 5 to 10 minutes or so before serving. Uncover and garnish with fresh parsley and basil. Enjoy!

Steps:
- Preheat oven to 425 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.
- Stir marinara sauce, tomatoes (in their juice), and uncooked rice together in the prepared dish (or in a separate bowl).
- In a small bowl, combine diced, uncooked chicken with Italian seasoning and salt.
- Add seasoned chicken to the rice mixture and stir to completely combine. Transfer to prepared baking dish.
- Cover tightly with foil or with a lid.
- Bake for 35 minutes, remove the cover, and give the dish a good stir. At this point the chicken should be cooked through and the rice should be just about tender (but still slightly al dente). If the rice is too hard, cover the dish and return to the oven for 5-10 more minutes, or until it's ready.
- Once the rice is just about tender, sprinkle mozzarella and Parmesan cheeses over top. Return dish to the oven, uncovered, for about 5 more minutes, or just until cheese is melted and rice is completely done.
- Garnish with parsley before serving.

- First wash the Bone-In Chicken Leg (4 piece) and grab a couple paper towels to make sure you dry off the legs. Removing excess moisture will help to render the fat in the skin and make it incredibly crispy. Make 4 long deep incisions on the chicken.
- To a ziplock bag, place the chicken legs inside together with the Italian Seasoning (2 tablespoon), Vegetable Oil (1 tablespoon), and Salt (to taste). Massage the herbs and spices into the legs.

- I suggest using a large zip-top bag for the chicken to sit in the marinade in. Place the chicken into the bag.
- In a mixing bowl , whisk together the vinegar, oil, garlic, seasonings, and sugar. Then pour it over the chicken in the bag and seal the bag. Move the bag around as needed to assure that the chicken gets fully covered with the liquid. Place the chicken in the refrigerator for a minimum of two hours. You can allow the chicken to sit in the refrigerator overnight.
- When you are ready to bake your chicken. Preheat your oven to 350 and prepare a 9 X 13 glass baking dish (I like to lightly spray mine).
- Remove the chicken from the bag and place it in the dish. If you have any doubts about baking the chicken with the marinade you can simply discard it and use another batch to use. I like to lightly cover the chicken with foil to help keep the chicken moist.

- Preheat oven to 375°F. Line a large, rimmed baking sheet with heavy-duty aluminum foil. Prepare chicken by removing skin, if desired.
- In a medium bowl, combine olive oil, salt, garlic powder, and pepper. In another bowl or shallow dish (like a pie plate), measure out 2 cups of Italian breadcrumbs. (Measure an additional 1/2 cup of breadcrumbs and leave them in the measuring cup so that you can easily add them to the bowl if additional crumbs are necessary, but they don't get contaminated with raw chicken juice in case you don't need them.)
- Dip a piece of chicken in the olive oil mixture, coating it on all sides. Place chicken in breadcrumbs and turn and press it into crumbs until evenly breaded. Place on baking sheet. Repeat with remaining chicken pieces.
- Bake for 40 minutes. Using a metal spatula and/or tongs, carefully turn each piece of chicken over and bake for an additional 10 to 20 minutes, or until chicken is done (reaching an internal temperature of 165°F).
SHEET PAN ITALIAN CHICKEN WITH TOMATOES AND VEGETABLES

- Cover a large cutting board with a sheet of plastic wrap, lay the chicken on top, then stretch a second sheet of plastic wrap across the top. Lightly pound the chicken breasts to an even 1/2-inch thickness (this will help them cook more quickly and evenly). Uncover the chicken and discard the plastic. Sprinkle the chicken with 1/2 teaspoon kosher salt and place in a large ziptop bag.
- In a large measuring cup or mixing bowl, whisk together the olive oil, balsamic vinegar, Italian seasoning, garlic powder, black pepper, and remaining 1/2 teaspoon salt. Pour half of the mixture into the ziptop bag (watch for spills). Seal the bag, removing as much air as possible. Gently "squish" and turn the bag so that the chicken is evenly coated with the marinade, then lay the bag flat in a baking dish to catch any drips. Place in the refrigerator to marinade for 30 minutes or up to 8 hours.
- While the chicken marinates, prepare the vegetables. Leave the tomatoes whole. Cut the zucchini into 3/4 inch dice (you can leave the peels on). Trim the ends off of the green beans. As you cut, place the vegetables in a second ziptop bag. Pour in the remaining balsamic mixture, seal, and place in the refrigerator with the chicken.
- When you are ready to cook, preheat your oven to 425 degrees F. Remove the chicken and veggies from the refrigerator and let stand at room temperature while the oven heats. Generously coat a large, rimmed baking dish with nonstick spray or line with parchment paper or a silicone baking mat. Arrange the veggies around the edges of the pan and place the chicken in the center. The veggies can overlap a little, but make sure the chicken is not sitting on top of them.
