These are very good. When baked correctly they have almost a Corn Nut® consistency. I love garlic powder and chili powder on mine, but feel free to experiment with other seasonings.

1 (15.5 ounce) can white hominy, drained and rinsed
1 tablespoon garlic powder
1 tablespoon chili powder
1 tablespoon vegetable oil

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C). Line a baking sheet with a sheet of aluminum foil.
  • Pat the rinsed hominy dry with paper towels and place into a mixing bowl. Sprinkle with garlic powder and chili powder. Drizzle with the vegetable oil, and toss until evenly coated. Spread onto the prepared pan in a single layer.
  • Bake in the preheated oven, stirring every 10 minutes, until the hominy is crisp and dry, 40 to 50 minutes. Allow to cool to room temperature before serving.

Butter, for greasing the pan
8 slices bacon, chopped
1 onion, chopped
1 red bell pepper, chopped
One 30-ounce can hominy, drained and rinsed
3/4 cup half-and-half
Hot sauce, to taste
1/2 cup grated Cheddar
1/2 cup grated Monterey Jack cheese
Kosher salt and freshly ground black pepper
1/2 cup breadcrumbs

Steps:

  • Preheat the oven to 375 degrees F. Butter an 8- or 9-inch square baking pan.
  • In a large skillet, fry the bacon over medium-high heat until crispy, 5 to 7 minutes. Remove and drain on paper towels. In the bacon fat, cook the onion and pepper until just starting to brown, 6 to 8 minutes. Stir in the hominy, half-and-half and hot sauce. When the mixture is bubbling, turn off the heat and stir in the bacon and some of the Cheddar and Monterey Jack, reserving some of the cheese for later. Taste and adjust the seasoning with salt, pepper and more hot sauce if needed.
  • Pour the mixture into the prepared pan and top with the remaining cheese and the breadcrumbs. Bake until the top is golden brown and the casserole is bubbling, about 20 minutes. Let rest for 15 minutes before serving.

1 garlic clove, minced
1 cup sour cream
3/4 cup shredded cheddar cheese, divided

3 cans (15 ounces each) golden hominy, drained

Steps:

  • In a small skillet, cook onion in oil until tender. Add garlic; cook 1 minute longer. Remove from the heat. In a large bowl, combine onion mixture, sour cream, half of the cheese, milk, chilies and cumin. Stir in hominy. , Pour into a greased 2-qt. baking dish. bake, uncovered, at 350° for 30 minutes or until heated through. Sprinkle with remaining cheese.

I love hominy, and I wanted to make a pie or quiche using it. Somehow the flavors of the bacon, cheese, and tomatoes crept in. Of course, everything is better with bacon, cheese, and tomatoes, right?

2 large (10" or larger) flour tortillas
2-3 slice pepper bacon, thick sliced
1/2 c onion, thinly sliced
1 can(s) golden hominy, well-drained
3 large eggs, beaten
1/3 c cream or milk
1 c jack or pepper jack cheese, shredded
1/4 tsp each salt and pepper
2 roma tomatoes, thinly sliced

Steps:

  • 1. Preheat oven to 350°F. Spray or brush a 9-inch pie plate with olive oil. Heat tortillas for 20-30 seconds in the microwave or a hot dry skillet to soften them. Place one tortilla in the plate, fitting it in like a piecrust. Spray or brush tortilla with olive oil, then sprinkle with half the grated cheese. Fit the second tortilla over the first. Set aside.
  • 2. Cut bacon into ½-inch pieces. Cook bacon in a skillet until not quite crisp. Remove and drain on paper towels. In rendered bacon fat, cook onion until soft but not browned. Drain well.
  • 3. In a mixing bowl, stir together hominy, beaten eggs, cream, grated cheese, onion, salt, and pepper until well combined. Pour carefully into tortilla shell. Place sliced tomatoes in a single layer on top to cover pie. Top evenly with the bacon.
  • 4. Bake for 25-35 minutes, until eggs are set and tortillas are nicely browned. Check at 15 minutes, and cover edges with foil or a pie guard if tortilla browns too quickly. Allow to cool 15 minutes before slicing. Slice with sharp knife. May be served at room temperature.

  • Drain beans and transfer to a 6-quart slow cooker. Heat oil in a large skillet over medium heat. Add onions and poblanos; cook, stirring occasionally, until tender, about 4 minutes. Add garlic, ancho chile powder, chili powder, oregano and cumin; cook, stirring often, until fragrant, about 1 minute. Transfer the mixture to the slow cooker. Stir in broth and hominy. Cut a piece of parchment paper to fit inside the slow cooker and press it directly onto the pozole. Cover with the lid and cook on Low until the beans are tender, 7 to 8 hours.
  • Stir salsa, lime juice and salt into the pozole. Serve topped with cabbage, sour cream, radishes and cilantro.

This is an old family favorite I got from an old Better Homes & Gardens Ground Meat Cookbook. It's super easy and was great after working all day and having to feed 3 hungry growing boys. Now grown, they still request this dish. We like to serve with a salad and a pan of cornbread is a must! If you have a cast iron skillet - use it! No need to dirty another dish. Brown the meat per directions, add everything in and slide it into the oven.

1 1/2 lbs ground chuck
1/2 cup onion, chopped
1 (15 ounce) can yellow hominy
1 (16 ounce) can stewed tomatoes
1 tablespoon chili powder
2 tablespoons all-purpose flour
1/2 teaspoon salt & pepper (mixed or to taste)
1 cup cheddar cheese, grated

Steps:

  • Preheat oven to 375 degrees.
  • In large skillet brown ground chuck and onion till done. Drain well. Stir in stewed tomatoes (including juice), drained hominy, chili powder, flour, salt & pepper. Mix well.
  • Pour mixture into 2 quart greased casserole dish.
  • Bake for 20 minutes.
  • Top with cheese and continue baking for 5 minutes or until cheese has melted.

1 deep dish pie pastry
6 cups diced potatoes
1/4 cup butter
1 large onion, diced
2 leeks, chopped
4-5 cloves garlic, minced
2 teaspoons minced fresh thyme
1 teaspoon salt
1 teaspoon pepper
3/4 cup heavy cream
8 oz cheddar cheese, shredded

Steps:

  • Wash and peel potatoes then cut into cubes (about 3/4 inch). Boil in salted water for 5 minutes or until just tender. Drain then set aside.
  • Preheat oven to 375 degrees. Pierce pie pastry on bottom and along sides with a fork several times to vent the crust.
  • Sauté onion and leeks in butter over medium heat for about 10 minutes or until slightly caramelized. Add garlic then continue cooking for 3 minutes. Remove from heat.
  • Add thyme, salt, pepper and cream to onions then mix well. Add potatoes and HALF of cheese then gently fold until well combined.
  • Spoon mixture into pie pastry then top with remaining cheese. Bake at 375 degrees for 25-30 minutes or until cheese is just starting to brown.
  • Let pie rest 10 minutes before serving. Garnish with fresh thyme if desired.
