BAKED HAM WITH PINEAPPLE
I first learned the technique for cooking pineapple ham for a themed dinner my husband and I hosted. Since it was widely known as the symbol of hospitality, pineapple was the star ingredient on our menu and on this lovely baked ham. -JoAnn Fox, Johnson City, Tennessee

- Place ham in roasting pan. Score the surface with shallow diagonal cuts, making diamond shapes; insert cloves into diamonds. Cover and bake at 325° for 1-1/2 hours. Drain pineapple, reserving 1/4 cup of the juice. Combine brown sugar and reserved pineapple juice; pour over ham. Arrange pineapple slices and cherries on ham. Bake, uncovered, 30-45 minutes longer or until a thermometer reads 140° and the ham is heated through.

A never-fail recipe that is a family favorite. Frequent basting during the cooking time is key to a delicious result. We can't help taking several tester bites while waiting for dinner to be ready. Makes great leftovers for sandwiches. A Maritime tradition with home-baked beans and bakery fresh bread. Also fantastic with potato scallop and buttered green beans.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Whisk beer, brown sugar, and Dijon mustard together in a bowl.
- Place ham cut side up in a large roasting pan; pour beer mixture over ham.
- Bake in the preheated oven until ham begins to brown, about 15 minutes, basting 4 to 5 times.
- Reduce oven temperature to 350 degrees F (175 degrees C). Cover roasting pan with lid or aluminum foil.
- Continue to bake until ham is heated through, about 90 minutes more, basting frequently.
- Remove lid and bake until ham is well browned, about 15 minutes more. Allow ham to rest for 10 to 15 minutes before carving.

Steps:
- Mojo sauce:.
- In a medium bowl combine garlic onion cumin salt and pepper.
- heat olive oil in a medium sauce pan over low heat.
- Add onion mixture and stir till softened about 10 minutes.
- Add orange juice, lime juice and vinegar and cook for 5 minutes to let flavors blend cool to room temp and remove 2 cups for the ham.
- Papaya salsa:.
- Peel and seed papaya and cut into 1/4 inch cubes.
- Place in a medium sized bowl and gently fold in tomatoes, jalapeno, red onion, cilantro, and lime zest.
- Toss in lime juice refrigerate for no more than 4 hours.
- Ham:.
- Preheat oven to 350°F.
- Place ham in a shallow roasting pan and score a diamond pattern into it insert cloves into points of the diamonds.
- Brush ham with mustard and sprinkle with brown sugar.
- Pour 1 cup of mojo sauce over ham.
- Bake on center rack for 2 hours or until 140°F on a thermometer (about 15-18 minutes per pound) basting every 20-30 minutes alternating with white wine and other cup of mojo sauce.
- Let stand for 15 minutes and serve with remaining mojo and papaya salsa.
