2 pounds haddock fillets
1 can (10-3/4 ounces) condensed cream of shrimp soup, undiluted
2 tablespoons lemon juice
2 tablespoons sherry or reduced-sodium chicken broth
2 tablespoons finely chopped onion
4-1/2 teaspoons butter
2 garlic cloves, minced
1/4 cup dry bread crumbs
1/4 teaspoon Worcestershire sauce

Steps:

  • Place the fillets in a 13-in. x 9-in. baking dish coated with cooking spray. In a small bowl, combine the soup, lemon juice and sherry or broth. Pour over fillets. Bake, uncovered, at 350° for 20 minutes. , In a small nonstick skillet, saute onion in butter for 2 minutes. Add garlic; cook 1 minute longer. Stir in bread crumbs and Worcestershire sauce. Sprinkle over fillets. Bake 5-10 minutes longer or until fish flakes easily with a fork.

2 pounds haddock fillets
1 teaspoon salt
⅛ teaspoon ground black pepper
3 tablespoons butter
¼ cup minced onion
3 tablespoons all-purpose flour
1 teaspoon ground dry mustard
½ teaspoon salt
⅔ cup heavy cream
⅔ cup half-and-half cream
½ cup shredded sharp Cheddar cheese
½ cup shredded Monterey Jack cheese
¼ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly butter a medium or large baking dish.
  • Rinse and dry fillets. Season with 1 teaspoon salt and 1/8 teaspoon pepper.
  • In a skillet or frying pan, melt butter over medium heat. Saute onion in butter until golden. Stir in flour until completely incorporated. Stir in mustard, 1/2 teaspoon salt, light and heavy creams. Cook until thickened, stirring constantly. Remove from heat and stir in cheeses. Pour sauce over fish and sprinkle with paprika.
  • Bake in preheated oven for 30 minutes, until brown and bubbly.

2 pounds haddock fillets
salt and pepper to taste
1 (10.75 ounce) can condensed cream of mushroom soup
1 onion, thinly sliced
1 cup shredded mild Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly butter a 2 quart casserole dish.
  • Arrange fish fillets in the bottom of the prepared casserole dish, and sprinkle with salt and pepper to taste. Layer onion slices over fish. Spread cream of mushroom soup over all, and top with shredded cheese.
  • Bake in preheated oven for about 40 minutes, or until bubbly and fish flakes easily with a fork.

1 1/2 cups Onions, finely diced
1 1/2 cups Celery, finely diced
2-4oz Clarified butter
1# Cooked Native Maine shrimp, dried
8oz Crab meat, drained
4 oz. Chablis
32 oz Hi-Ho crackers, crushed
1 tsp Thyme
2 tsp. Garlic, minced
½ oz Dry parsley, chopped
1 tsp. White pepper
1 oz Worcestershire sauce
3 cups Mayonnaise
1 cups Sour Cream
2 Tblsp Oil
2 Tblsp Wine Vinegar
3 Tblsp Dill Weed
2 Tblsp Honey
1 oz Onion, minced
1 oz Celery, minced
1 ½ tsp Dijon Mustard
¾ tsp Garlic, minced
¼ cup Milk
1/8th tsp Salt
1/8th tsp White Pepper

Steps:

  • Sauté onions, celery, and garlic in butter until translucent. Combine thyme, wine, parsley, pepper and Worcestershire sauce. Mix well. Place crushed crackers in large bowl. Pour wine mixture into cooked veggies. Mix well. Combine veggie mixture with crushed crackers. Gently mix in seafood. Cool. Lay 6 oz haddock filet over 4 oz of stuffing. Top with 1 Tblsp dill dressing (see next recipe) and lightly cover dressing with buttered bread crumb. Bake in a casserole dish at 350″ with white wine and a little butter, for 25-18 minutes. For Creamy Dill Dressing: Combine all ingredients in a mixing bowl and whisk to blend. Refrigerate.

We had this at a potluck supper in Jackman Maine. My husband loved it so he tracked down the cook and got the recipe. The only thing he didn't get is the cooking time and I always 'wing it', so please check fish for doneness.

2 lbs haddock
1 cup cheddar cheese, shredded
1 cup condensed golden mushroom soup (Has to be golden!)
1/2 cup milk
1/2 cup water
Ritz cracker

Steps:

  • Spread the 1/2 of the fish out in a buttered casserole dish, single layer.
  • Sprinkle the cheese on top of fish.
  • Layer whole Ritz crackers on top of cheese to cover the fish.
  • Repeat layers, in same order ending with soup.
  • Pour the soup on the top and spread with spoon to cover.
  • Bake in a 350- 375 dgree oven for approximately.
  • 30-40 minutes or until fish is cooked through.

1 1/2 lbs haddock, cut into about 3-inch chunks
salt and pepper, to taste
4 tablespoons butter
2 garlic cloves, minced
3/4 cup sliced mushrooms
3 tablespoons flour
2 tablespoons dry sherry
1 cup milk
1/2 cup half-and-half
1/2 teaspoon dried tarragon
1/8 teaspoon paprika
1/3 cup breadcrumbs
1 teaspoon parsley
1 tablespoon butter, melted

Steps:

  • Preheat oven to 375.
  • Sprinkle the fish pieces with salt and pepper; arrange in a shallow baking.
  • In a saucepan, melt 3 tablespoons butter over medium-low heat; add garlic and mushrooms; saute until mushrooms are tender and golden. Stir in flour until smooth and dissolved into the butter.
  • Gradually stir in the sherry, milk, cream, tarragon and paprika. Continue cooking and stirring until thickened.
  • Pour evenly over haddock pieces in baking dish.
  • In a small bowl, mix together the melted butter, parsley and breadcrumbs; evenly sprinkle bread crumbs over haddock and sauce.
  • Bake at 375° for about 25 minutes, or until fish flakes easily with a fork.

1 small onion, chopped
1 tablespoon butter
1 tablespoon all-purpose flour
1 can (14-1/2 ounces) diced tomatoes, undrained

Pepper to taste
1/2 cup shredded part-skim mozzarella cheese

Steps:

  • In a nonstick skillet, saute the green pepper and onion in butter until tender. Stir in the flour until blended. Add tomatoes; cook and stir until thickened, about 3 minutes., Place the fillets, skin side down, in an 11x7-in. baking dish coated with cooking spray. Sprinkle with salt and pepper; top with tomato mixture. Bake, uncovered, at 350° for 20-25 minutes or until fish flakes easily with a fork. Sprinkle with cheese.
