- Pat haddock dry; arrange in prepared baking dish. Sprinkle w/ salt and pepper.
- In a small bowl, mix together melted butter, lemon juice and minced garlic; evenly brush over haddock fillets.
- Evenly sprinkle fillets with parsley tarragon and paprika.
- Bake at 350 for 25-35 minutes of until opaque and flakes easily.

OVEN BAKED HADDOCK
We'd invited a couple of families over for dinner, and our daughter Joyce and her husband, Josh, said they were going to bring some fresh haddock. Josh wanted to find just the right recipe to prepare, and this is the one he chose. The topping--sliced plum tomatoes plus bread crumbs mixed with herbs and vegetables--adds nice flavor and color. It made a hit, and everyone really enjoyed the meal.

- In a large skillet, saute onion and celery in butter for 3 minutes or until tender. Add mushrooms; saute 1 minute longer or until tender. Remove from the heat; stir in the bread crumbs, salt, pepper, tarragon and rosemary if desired. , Place the fillets in a greased 11x7-in. baking dish. Sprinkle with lemon juice. - Preheat oven to 425 degrees Fahrenheit and prepare a rimmed baking sheet by spraying lightly with cooking spray. Set aside.
- Gently pat dry both sides of the haddock then season with salt. Place on the baking sheet.
- In a bowl, mix together all the ingredients for the topping then using your hands, gently and evenly spread it across all the haddock. It doesn't have to be perfect.

- Place oven rack to the upper middle position. Preheat oven to 425°F.
- Line a 13x9 baking dish or sheet pan with foil or parchment paper. Set aside.
- Put the breadcumbs and paprika into a shallow bowl or plate.
- Pat dry the haddock fillets with paper towels to remove excess moisture. Rub on all sides with the olive oil, salt and pepper.

- Preheat oven to 350 degrees.
- Put a spoonful of the melted butter in a baking sheet or dish and spread to coat the bottom.
- Combine the bread crumbs (1 cup) with the rest of the 6 tablespoons of melted butter.
- Salt and pepper both sides of the fish liberally (I used about 1 teaspoon kosher salt and 1/4 teaspoon pepper), and lay in the buttered baking dish.
- Spread bread crumbs - all of them - evenly over the top of the fish. I use my hands to sprinkle it on (it won't really stick like traditional breading - it's more like a topping).

- Preheat the oven to 425 degrees.
- Dry the fish filets very well with paper towels. Place the fish on a baking sheet that's been sprayed with cooking spray or use a piece of parchment paper to line the sheet. Season the fish with salt and pepper.
- Add the breadcrumbs, mayonnaise, parmesan cheese, Old Bay Seasoning, garlic powder and parsley to a bowl and mix to combine.
- Spread mixture on top of fish, dividing between the filets, using all of the topping. Bake for 10-12 minutes, depending on how thick your fish filet is.
