Steps:
- Heat oven to 375°F. Lightly spray 1 1/2- to 2-quart casserole with cooking spray.
- In 12-inch skillet, melt butter over medium heat. Cook onions in butter 30 to 40 minutes, stirring often, until caramel colored.
- In large bowl, mix cheeses, mayonnaise and onions. Spoon into casserole.
- Bake uncovered 30 minutes or until golden and bubbly. Serve with sweet potato chips.

- In a large non-stick skillet (or cast iron pan) melt the butter and olive oil over medium heat. Add the sliced onions and cook for about five minutes stirring as necessary. Then add in the thyme, sugar, and half of the salt.
- Stir to combine and cook until the onions are soft and golden brown. This will take about 20 minutes. Remove the onions from the heat; add in the balsamic vinegar. Stir to combine. Set aside to cool slightly.
- Preheat your oven to 400 degrees F.
- In a large bowl, stir together the cream cheese, parmesan cheese, gruyere cheese, sour cream, mayonnaise, half-and-half, garlic, black pepper, and remaining salt. After the onions have cooled slightly, stir them into the cheese mixture to combine.
- Spray a medium cooking dish with cooking spray and then fill it with your cheese and onion mixture.
- Bake for about 25-30 minutes or until golden and bubbly.
- Serve hot with sliced, toasted baguettes.

- Preheat the oven to 350 degrees F.
- Crumble the goat cheese into an oven safe dish and set aside.
- In a sauce pot combine the figs and sherry with enough water to barely cover the figs. Place the sauce pot over high heat and bring up to a bubble, cover and remove from the heat and let the figs plump while the onions are cooking.
- Pour the olive oil into a large skillet and place over medium heat. Add the onions, garlic, rosemary, salt and pepper and cook, stirring often, for about 10 minutes, or until lightly browned. Using a slotted spoon remove the plumped figs from the sauce pot, leaving behind any of the pluming liquid. Add the figs to the cooked onions, stir to combine and then spoon over the goat cheese. Place the dish into the top half of the oven for 20 minutes, until the edges begin to bubble.
- Remove and serve immediately with sliced baguettes.
BAKED GOAT CHEESE WITH ROASTED GARLIC AND CARAMELIZED ONION
Steps:
- Preheat oven to 350 degrees. Arrange garlic cloves in glass baking dish. Drizzle with vegetable oil. Cover and bake until garlic is very tender about 40 minutes for elephant garlic or 30 minutes for regular garlic. Transfer garlic to rack and cool. Melt butter in heavy large skillet over medium heat. Add onion and saute until tender and beginning to brown, about 15 minutes. Add brown sugar, stir until melted. Remove fro heat and cool. Arrange onion mixture on bottom of 8x8 inch glass baking dish. Sprinkle cheese over. Arrange roasted garlic atop cheese. (Can be prepared 1 day ahead, cover and chill.) Preheat oven to 350 degrees. Bake garlic until cheese melts but mixture is not bubbling about 25 minutes. Add balsamic vinegar, stir until well blended. Season to taste with salt and pepper. Transfer mixture to medium bowl. Sprinkle with basil. Serve warm or at room temperature with baguette slices.
