- Preheat the oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
- Pour olive oil into a large resealable plastic bag and add potatoes. Seal the bag and shake to coat every piece with oil.
- Combine Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper in a second resealable bag. Pour oiled potatoes into the bag, seal, and toss well to coat.
- Spread potatoes on the prepared baking sheet.
- Bake in the preheated oven for 15 minutes. Flip potatoes over and bake until crisp on the outside and soft on the inside, about 15 minutes more.

- Preheat the oven to 400 degrees F.
- Peel potatoes and cut into half-inch thick slices (lengthwise) cut again into 1/2-inch thick fries. Place the potatoes into a pot with cold water and 1 tablespoon of salt. Bring up to a gentle boil and simmer until a paring knife tip goes through easily. Cooked about 3/4 of the way through.
- Drain carefully and put in a bowl. Add olive oil, 1 tablespoon salt, 1/2 teaspoon black pepper. Toss well and lay out in 1 layer on nonstick baking sheet. Bake until light brown.
- When brown, sprinkle with Parmesan and continue to bake until well-browned and crispy and the cheese is melted and caramelized, about 6 to 7 more minutes. Remove and let cool for 2 minutes. Serve.

- Place the potatoes in a mixing bowl and drizzle with olive oil. Season with garlic, thyme, and 1/4 teaspoon seasoned salt. Toss until evenly coated. Lift the fries out of the bowl and spread onto a nonstick baking sheet in a single layer. Save the remaining oil in the bowl.

- Wash and pat dry potatoes.
- The easiest way I have found is to take 2 - Gallon size bags, just throw them out after you're done. Easy, right?
- Slice your potatoes into strips, try to make the same size.
- Bag #1, add 3 Tbsp. of olive oil, then add the sliced potatoes. Close the bag and shake so that every piece gets an Oil Bath!
- Bag #2: Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper. Place your oiled potatoes inside the bag and toss well to coat.
- Spread potatoes on a parchment paper-lined baking sheet.
- Bake in the preheated 425°F oven for 15 minutes.
- Take it out, flip to the other side, and bake for an additional 15 min.

- Preheat oven to 450 degrees. Line 1 baking sheet with foil and coat baking sheet with cooking spray.
- Cut the potatoes lengthwise in half and in half again. Cut each piece into ¼-½ inch thick strips. Place on the baking sheet and toss with the olive oil and garlic. Use your hands to evenly coat. Spread the potatoes evenly over the entire pan. Season with a little salt and black pepper. - Slice the potatoes into 1/4" disks (leave skins on), then slice those disks into fries. Try and make sure all the fries are similar size so they cook at an even rate.
- Add fries to a bowl of cold water, give them a swish around with your hand then leave to soak for AT LEAST 20mins. This is important to draw out the starch from the potato, so the longer the better.
