BEST BAKED FRENCH FRIES
The healthiest way to make fries is to bake them. It saves money and you can't beat the taste. I have been playing around with different ways to bake fries for some time now, and I feel this is the best recipe thus far. Baking time may vary depending on how thick you cut the fries. Enjoy!

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with aluminum foil; spray with cooking spray.
- Place sliced potatoes in a colander; sprinkle sugar over potatoes. Set aside until liquid is released from potatoes, 20 to 30 minutes. Drain liquid and dry potatoes well.
- Mix potato slices, olive oil, garlic powder, salt, and black pepper in a resealable bag until evenly coated. Spread coated potato slices in a single layer, leaving space around each potato, on the prepared baking sheet.
- Bake in the preheated oven for 20 minutes; flip fries and continue baking until crisp and browned, about 20 more minutes.

- Gather the ingredients. Position the rack in the lower part of the oven. Preheat the oven to 450 F.

BAKED FRIED BAKED POTATO
This was a new way to enjoy a potato. You have heard of twice baked potato, but have you ever heard of baked fried baked potatoes? I invented this recipe and my family loved it! It was baked, fried and yummy goodness!

- 1. Preheat oven to 400. Rub olive oil on potato halves. Salt and pepper to taste.
- 2. Wrap potatoes in foil and lay on cookie sheet, bake 30 minutes or until tender but not mushy.
- 3. Heat a tablespoon of olive oil in skillet on medium-low heat. Saute onions, bell pepper till tender. drain on a paper towel.
- 4. Heat canola oil in a deep skillet or deep fryer.
- 5. Add the rest of the season to flour. Add salt and pepper about a teaspoon of each and mix to combine.
- 6. When potatoes are cool enough to handle roll each half into flour and fry till golden brown.
- 7. Lay on cookie sheet and divide the cheese and top potatoes. bake another 5 minutes.
- 8. Place potatoes on a serving platter and top with one tablespoons of sour cream. Top each potato with the onion mixture.
VEGGIE POTATO FRITTERS
Steps:
- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
- In a clean kitchen cloth, very sturdy paper towels, or cheese cloth, squeeze out the liquid from the shredded potatoes and zucchini. Really put some muscle into it and just when you think you've squeezed all the liquid out, squeeze a little bit more! This will get rid of most of the starch from the potatoes and the liquid from the zucchini so that the fritters will bake up nice and crispy! DO NOT SKIP THIS STEP!
- Add all the ingredients to a mixing bowl and mix well to combine.
- Taking about 1/4-1/3 cup of the mixture, form it into a thin patty shape with your hands. Place it on the parchment lined baking sheet and press down slightly to flatten. Repeat with the remaining mixture.
- Bake for 20 minutes. Gently flip the fritters over. Bake another 10-15 minutes until golden brown on both sides and crispy on the edges.
- Serve with Spicy Smoky Ketchup, vegan sour cream or plain yogurt, or your favorite dipping sauce.
