Steps:
- Heat oven to 325°F. Place ham on rack in shallow roasting pan. Add 1/4 to 1/2 inch water to pan. Cover pan.
- Bake 45 minutes. Uncover pan; bake 45 minutes to 1 hour 15 minutes longer or until meat thermometer inserted in center, but not touching bone, registers 140°F.
- To make sauce, in small saucepan, mix all remaining ingredients with wire whisk until well blended. Cook over medium heat 10 minutes or until cranberry sauce is melted and mixture is thoroughly heated, stirring frequently. Cut ham into slices. Serve with sauce.

- Set oven to 325 degrees.
- In a small saucepan combine the cranberry sauce, brown sugar, fresh orange juice, cloves, cinnamon, allspice and black pepper, if using; heat slowly stirring until smooth.
- Place the ham on a rack in a shallow roasting pan with 1/3 cup water.
- Insert a meat thermometer in the ham.
- Bake until the thermometer reaches 125 degrees (about 1-1/2 to 2 hours).
- Brush a third of the glaze on the ham 30 minutes before the end of baking time.
- Spoon on the remaining glaze every 10 minutes (within the 30 minutes).
- After removing the ham from the oven, let stand for 15 minutes before carving.

- In a medium saucepan, bring the water, white sugar, cinnamon and salt to boil over medium-high heat. Stir to dissolve the sugar.
- Add a splash of lemon juice to the apples and toss. Rinse the cranberries, tossing the bruised berries.
- Add the tart cranberries and apples to the pot and cook for about 10 minutes until the cranberries pop and the crisp apples soften. Once the sauce has thickened, mash the diced apples and any remaining cranberries in the pot.
- Allow the sauce to cool then transfer to a bowl and refrigerate completely.

Fresh ham is, for my money, the most delicious cut of pork available. Serve it for a festive occasion, with Kasha and Mushroom Casserole, Sauerkraut Salad Provencal and Honey-Marinated Pears. If you wish to make a gravy (which the Russians don't usually do), degrease the pan juices, thicken with about 1 1/2 tablespoons of flour and add a bit of stock.

- Preheat the oven to 450 degrees F.
- With a sharp knife score the fat of the ham in a diamond pattern. Rub generously with salt and pepper. Mix together the mustard and brown sugar and spread all over the ham.
- Set the ham on a rack in a roasting pan, fat-side up, add 1 cup of the beer and 1 cup of the apple cider, the cloves and the bay leaves, and roast for 20 minutes.
- Reduce the oven temperature to 325 degrees F. degrees and continue roasting, basting occasionally with the pan juices, until a meat thermometer inserted diagonally into the thickest part of the ham registers 155 degrees F. about 3 1/2 to 4 hours. As the ham roasts, replenish the beer and the cider in the pan. If the top of the ham brown too much, cover it loosely with foil.
- Remove the ham from the oven and let stand, covered loosely with foil, for about 30 to 40 minutes, during which time the internal temperature will rise. Carve the ham into thin slices and serve with the pears.

- Score fat and put ham, fat side up, in a roasting pan. Rub with extra-virgin olive oil and season with plenty of salt and pepper all over. Cover loosely with foil and roast for 2 hours. Remove foil and roast for final hour uncovered.

- Cut diagonal slices into your ham on the fat side – stud each diamond with a whole clove. Rub your ham with olive oil and place cut side down in roasting pan, place about 1 cup water at the bottom of the pan, Cover your ham with aluminum foil. Bake for 1 hour.
- Make your cranberry sauce- add the cranberries, 3 tablespoons sugar alternative, 1 cup water, ginger, 1 teaspoon cinnamon, salt and orange zest into a pan on the stove top and cook over medium heat until the cranberries break down and warm and bubbly. We like ours a little chunky but you can cook and puree until smooth, if you wish. Set aside.
- Remove the aluminum foil from your ham and glaze your entire ham with the cooked cranberry sauce. For each pound of pre-cooked rump ham cook according to the chart above in the post. Place your halved cored apples in the roasting pan and sprinkle with a little cinnamon and sugar alternative. The total time in the oven for our 8-pound bone in ham was about 2.5 hours. 1.5 hours was with glaze. Brush every 15 minutes with a little additional cranberry glaze.
