CRUNCHY FRENCH FRIED ONION FISH FILETS
The French fried onion in the crust on this fish give it a very nice flavor - you get a flavor of onion but it isn't overwhelming. I also like the crunchiness that the onions and panko gave the fish. This is a delicious and quick dish to serve to your fish loving family and friends.

Steps:
- 1. Spray large baking pan with cooking spray. Brush pan with olive oil.
- 2. Place French fried onions in a food processor. Grind until fine.
- 3. In large mixing bowl combine the French fried onions, and panko bread crumbs together.
- 4. Place buttermilk in shallow dish
- 5. Place egg in shallow dish.
- 6. Dip fish fillets in egg, then in buttermilk, and then coat with bread crumbs.
- 7. Place fish fillets in pan. sprinkle with salt and pepper. bake at 325 degrees for 16-20 minutes or until crust is golden brown.
FRIED ONION RINGS
These are very delicate and the best I have had. My ex was a fanatic when it came to onion rings, and thought this recipe to be the best he ever had. Have also made other veggies in this batter. Can be refrigerated or frozen, then reheated in oven or microwave. Carbonated water can be substituted for beer in this recipe.

OVEN FRIED ONION RINGS

- Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
- In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
- In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
- Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
- Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.

- Preheat the oven to 425°F. Grease a large baking sheet with cooking spray.
- Slice the onions into 1/2-inch wide rings then place the rings in a bowl of water.
- In a medium bowl, whisk together the flour, 1 teaspoon salt and 1/4 teaspoon pepper. In a second medium bowl, whisk together the egg whites and the mayonnaise. Add the breadcrumbs to a third medium bowl.
- Remove each onion ring from the water, shaking off any excess and then placing it immediately into the flour, tossing until it's thoroughly coated, then dip the onion ring into the egg white mixture until it's thoroughly coated and then into the breadcrumbs, pressing them firmly onto all sides of the onion ring. Place the onion ring on the prepared baking sheet and repeat the coating process with the remaining onion rings.
- Throughly spray the onion rings with cooking spray (this is optional, but it helps them brown more evenly). Bake the onion rings for 10 minutes then flip them once and bake an additional 5 minutes until they're golden brown and crispy. Serve immediately with your favorite dipping sauce.

- Preheat oven to 450 degrees F (230 degrees C).
- Separate onion slices into individual rings.
- Whisk egg whites with milk in a bowl until thoroughly combined; season egg mixture with a pinch of cayenne pepper. Place panko crumbs into a separate bowl.

KENTUCKY FRIED ONION RINGS

- PREHEAT manufacturer's recommended amount of vegetable oil in deep-fryer to 365°F (OR) preheat enough fat to onion rings in a deep heavy stovetop pot to 365°F (use a heat-safe thermometer to gauge).
- PEEL then slice 2 large sweet onions into 1/3-1/2 inch rings (you may use all of onion, or just the larger outer rings).
- INTO a medium bowl add 1 cup self-rising flour, 1 1/2 tablespoons prepared Recipe #453973, 2 teaspoons granulated sugar, and 1/2 teaspoon salt; MIX ingredients well; WHISK in 1 cup cold water and 1 egg until combined well, without over-mixing.
- ADD 1/3 cup all-purpose flour into a small bowl for the DREDGE; FILL another small bowl with 1/2 cup panko breadcrumbs (optional) if a panko breading is desired for the final coating.
- TOSS a few onion slices in the flour DREDGE until lightly coated.
- DIP a few floured onions into the BATTER; REMOVE rings one at a time using a fork or skewer, until 3 or four are battered.
- LIGHTLY coat onion rings in panko breadcrumbs, if using, lifting once again onto the fork/skewer.
- TILT battered/breaded onion rings off the skewer, onto the surface of hot oil; SHAKE fryer basket gently to prevent onion rings from sinking and sticking (which they inevitably do sometimes).
- TURN onion rings once, using the skewer, when light golden on the underside; CONTINUE frying just until light golden brown on both sides (don't overcook!); REPEAT with remaining onion rings.
- SEASON with a light sprinkle of salt if desired; SERVE with your favorite condiments and ENJOY!

- Cook spaghetti according to directions on the package. Cook to al dente, drain and set aside. Heat up soy crumbles. Add spaghetti sauce to skillet and heat. Combine onions, peppers and butter in small glass bowl. Cover and microwave 4 minutes on HIGH until soft. Add cream cheese and milk to vegetables and stir well. (If cream cheese is not soft, nuke it for 20-30 seconds to make it easy to spread.) Using a 10 x 6 dish, assemble in the following order: Thin layer of spaghetti sauce on the bottom of the casserole dish.
