4 x 150- 180g / 5 - 6 oz fish fillets (, about 1.5cm / 1/2" thick, skinless and boneless (Note 1))
50g / 4 tbsp unsalted butter
1/4 cup cream, heavy / thickened ((See Note 2 for sub options))
1 - 2 garlic cloves (, minced)
1 tbsp Dijon mustard
1 1/2 tbsp lemon juice
Salt & pepper
1 1/2 tbsp eschallots (French onion) (, finely chopped (Note 3))
Fresh parsley and lemon slices (, to serve)

Steps:

  • Preheat oven to 200°C / 390°F (all oven types).
  • Place fish in a baking dish - ensure the fish isn't crammed in too snugly. See video or photos in post. Sprinkle both sides of fish with salt and pepper.
  • Place butter, cream, garlic, mustard, lemon juice, salt and pepper in a microwave proof jug or bowl. Microwave in 2 x 30 sec bursts, stirring in between, until melted and smooth.
  • Sprinkle fish with shallots, then pour over sauce.
  • Bake for 10 - 12 minutes, or until fish is just cooked. Remove from oven and transfer fish to serving plates. Spoon over sauce, and garnish with parsley and lemon wedges if using.

1 teaspoon diced pimientos, drained
1 teaspoon Worcestershire sauce
1/2 teaspoon dill weed
1/2 teaspoon minced chives

1/8 teaspoon cayenne pepper
1-1/2 cups soft bread crumbs
FISH:
6 flounder fillets (3 ounces each)
5 tablespoons butter, melted
2 tablespoons lemon juice

Steps:

  • Preheat oven to 375°. In a large skillet, melt butter. Add onion, celery and green pepper; saute until tender. Add shrimp; cook and stir until shrimp turn pink. Add broth, pimientos, Worcestershire sauce, dill, chives, salt and cayenne; heat through. Remove from heat; stir in bread crumbs., Spoon about 1/2 cup stuffing onto each fillet; roll up. Place seam side down in a greased 13x9-in. baking dish. Drizzle with butter and lemon juice. Sprinkle with seasonings. Bake, uncovered, 20-25 minutes or until fish flakes easily with a fork.

2 fresh tilapia filets *4 ounces
12 frozen shrimp, defrosted and tails removed
1/2 cup of low sodium chicken stock
2 tablespoons of heavy cream
1 tablespoon of butter
1 tsp of black pepper
1/2 tsp dried chives

Steps:

  • Peel and devein the shrimp. Place the shrimp on one half of a lined sheet tray with parchment paper and the tilapia on the other half of the baking sheet. Bake the tilapia and shrimp at 425 for 6 minutes. Take the pan out and flip the shrimp and tilapia to the other side. Bake for another 4 minutes.
  • To make the sauce, simmer a 1/2 cup of chicken stock until about reduced to 1/4 cup. Add in some butter and heavy cream and the chives. You can use fresh if you want.
  • To serve, place the shrimp over the fish. Top the tilapia fillets with 2 tablespoons of the sauce. Enjoy

1/3 cup Private Reserve Greek extra virgin olive oil
1/4 cup white wine vinegar
1 tsp fresh grated ginger

Steps:

  • Preheat oven to 400 degrees F.
  • Make the sauce. In a small bowl, add all the sauce ingredients. Whisk to combine.
  • Place the vegetables on the largest sheet pan you have (like this one). Pour 1/4 cup of the sauce on top, and work with your hands to make sure all the veggies are well coated. Spread the veggies out in one layer. Bake in heated oven for 10-12 minutes or so.
  • Meanwhile, in a large bowl, add the shrimp. Pour the remaining sauce on top, and again toss to make sure all the shrimp is well-coated.
  • Remove vegetables from the oven. Push vegetables to one half of the pan, and add the shrimp on the other half of the sheet pan. Shrimp should be in one layer, do not crowd.
  • Place pan back in oven. Bake for 5 minutes or so until shrimp is done, do not over-bake.
  • Remove from oven. Finish with a drizzle of extra virgin olive oil, freshly squeezed lemon juice, and parsley. Serve with a side of your favorite grain or this simple Lebanese rice.

1 clove minced garlic

4 red snapper fillets or 4 similiar fish

1/4 cup minced onion
1 clove minced garlic
1/4 cup minced parsley
1 tablespoon chopped capers
1/4 teaspoon dried basil
1/4 teaspoon dried tarragon
1 cup dry breadcrumbs
1/4 cup mayonnaise
1/3 cup freshly grated parmesan cheese
lemon wedge (to garnish)

Steps:

  • Make the marinade: Whisk together the first four ingredients, adding salt and pepper to taste Place the fish in one layer in a baking dish, skin side up.
  • Pour all but 1/4 cup marinade over the fish and let them marinate, covered, in the refrigerator for 3 hours.
  • Stir together the shrimp, onion, garlic, parsley, capers, basil, tarragon, crumbs, mayonnaise, Parmesan and the remaining marinade.
  • Salt and pepper to taste, and mix until combined well.
  • Bake the fillets in the marinade, skin side down, in the middle of a preheated 400 degree oven for 10 minutes.
  • Spread evenly with the topping and cook for 10 minutes more, until topping is light golden brown.

4 fillets of mahi mahi, grouper or snapper
1 lb raw, peeled and deveined shrimp
4 teaspoons unsalted butter
Salt and pepper to taste
Parsley for garnish

Steps:

  • You'll need foil to cover the pan or if you prefer you can bake them individually en papillote.
  • Season the fish with salt and pepper, stuff the fillets with shrimp, if fillets are thin you can fold it over, if it's thick then open it carefully with a sharp knife.
  • Place a teaspoon of butter on each fillet, cover and bake 20 to 25 minutes.
  • Remove the foil, but take care not to burn yourself with the steam. Serve immediately with mashed potatoes, vegetables or a green salad.
