The juiciest, most tender baked white fish with vegetables, using just about any firm white fish that you'd like - cod, tilapia, haddock, bass, catfish, grouper, etc. The fish is baked in between layers of onion, carrots, celery, peppers, tomatoes and fresh herbs.

2 1/2 lbs of firm white fish (tilapia, swai, cod, etc)
2 - 3 Tablespoons oil (grape seed (avocado, olive, sunflower, etor butter)
2 large onions (sliced)
3-4 carrots (grated)
2-3 celery stalks (sliced)
4 to matoes (seeded and grated or chopped)
1 large bell pepper (julienned)
3-5 garlic cloves (minced)
salt (ground black pepper)
1-2 Tablespoon mayonnaise (sour cream or yogurt, optional)
1/2 - 1 Tablespoon fresh parsley (dill, basil, minced)

Steps:

  • Cut the fish into smaller pieces and blot it dry with a paper towel to get rid of excess moisture.
  • Heat about 1/2 - 1 Tablespoon of oil in a nonstick skillet over high heat, season the fish on both sides with salt, ground black pepper and any combination of your favorite seasonings.
  • Cook the fish for about 2-3 minutes per side. It should still be partly raw in the center. Cook the fish in batches until it's all partly cooked. Transfer the fish to a plate while you prepare the vegetables.
  • Preheat the oven to 350 degrees Fahrenheit.
  • Prep all the veggies. Peel and halve the onions, and then thinly slice them. Peel the garlic and then mince them or use a garlic press. Peel and grate the carrots, thinly slice the celery and julienne the bell pepper. Remove the seeds from the tomatoes and grate the tomatoes on a box grater. Instead of grating the tomatoes, you can put them through the food processor or blender, or even chop the tomatoes.If you don't have fresh tomatoes, you can use canned diced tomatoes, tomato puree, or tomato sauce.
  • Heat another Tablespoon of butter or oil on medium high heat and add the onions, carrots and celery to the skillet. Season with salt and ground black pepper. Cook for 5-7 minutes, until the vegetables soften.
  • Add the bell pepper, tomatoes and garlic. Season with salt and pepper as well and more dry herbs and seasoning that you like. Cook for another 8-10 minutes. Add the fresh herbs once the vegetables are off the stove.
  • Spread half of the vegetables on the bottom of the baking dish that you will be using. Place a layer of fish over the vegetables. Spread the remaining vegetables over the fish.
  • Spread a thin layer of mayonnaise, sour cream or yogurt over the vegetables. This step is completely optional.
  • Cover the baking dish with a lid or aluminum foil and bake in the preheated oven for about 30-40 minutes. We are basically heating it all up evenly all the way through to the center, and then only waiting for the fish to cook through, which doesn't take long at all. The vegetables are already cooked.

Baked fish in individual foil packets, each served with a delicious mix of summer vegetables. This is a fun and easy to serve method that yield a very moist steamed-like fish!

1 1/2 lb black cod (sablefish)
1 bunch asparagus, (trimmed)
2 whole zucchini, (cut in rounds)
6 baby red onions, (thinly sliced )
1 handful cherry tomatoes
3 cloves garlic, (pressed)
3 tbsp olive oil
1 tsp dried oregano
1 pinch salt and ground pepper, (to taste)
fresh cilantro
Lemon slices

Steps:

  • Pre-heat oven to 400F degrees.
  • Cut fish into four equal pieces. Set aside
  • In a small glass bowl whisk the olive oil, minced garlic, oregano, salt and pepper. Set aside
  • Cut 8 pieces of aluminum foil that is big enough to accomodate the fish and vegetable.
  • Place one piece of foil on the counter/ work surface. On the first layer add 5-6 asparagus spears. On top of the asparagus place 6 zucchini rounds. Place the fish on top of the zucchini. Top the fish with 2-3 cherry tomatoes, whole or halved.
  • Season each fish and vegetable packet with garlic oregano oil.
  • Top the fish with a second piece of foil. Fold both bottom and top foil pieces together tightly.
  • Place the fish packets on a sheet pan and bake for 18-20 minutes.
  • Carefully open fish packets away from your face, as it will release lots of hot steam.
  • Completely remove the top foil. You can either serve the fish in foil packets or slide the fish and vegetables onto a plate. Add a lemon slice and fresh cilantro to each packet

A complete one-pan dinner with healthy, flavorful fish, perfectly cooked with your choice vegetables. Easy to make and easy to clean up making this a great weeknight meal.

5-6 new or red potatoes (washed and quartered)
2-3 tablespoons olive oil (divided)
fresh rosemary sprigs
4 whole cloves garlic (peeled and sliced in half)
6 carrots (peeled and cut into large pieces)
1 large onion (cut into wedges)
Salt and pepper
1 lemon (sliced into 6 pieces)
2 pounds Mahi Mahi (or other firm-fleshed fish, rinsed in cold water and dried with paper towels.)
2 teaspoons blackened seasoning (more or less to taste)

Steps:

  • Preheat oven to 400°F.
  • Toss the potatoes in a large bowl. Pour 1 tablespoon olive oil over the potatoes and toss to coat. Add the rosemary and garlic and toss again to coat evenly. (Don't wash the mixing bowl - set aside)
  • Spread the potatoes in a single layer on a large baking sheet. Season with salt and pepper.
  • Bake the potatoes for 15 minutes, then remove from the oven and turn the potatoes. Bake another 15 minutes and turn again, move the potatoes to one side of the pan.
  • Add the carrots and onion to the mixing bowl and toss to coat in any remaining olive oil. Add 1 teaspoon of oil if needed to cover the vegetables. Sprinkle with salt and pepper. Add the carrots and onion to the baking sheet and return to the oven for 15 minutes.
  • Remove the vegetables from the oven and make a hole in the center. Gently toss the fish fillets in the mixing bowl, adding more olive oil if needed to coat. Place the lemon in a single layer in the center of the baking pan and put the fish on top, skin side down. Sprinkle with the blackened seasoning and bake for 15-20 minutes or until the fish flakes easily and is just cooked through.
  • Allow the dish to rest for 5 minutes before serving.

I am always looking for different ways to cook fish that my family will enjoy. I found this recipes several months ago at allrecipes.com I have made a few revisions to suit our taste. We all enjoy it. Hope you will too.

16 oz tilapia fillets
1 lemon sliced
16 oz frozen vegetetables (broccoli, cauliflower and carrots works well )
sprinkle of seasonings of your choice.
cooking oil spray

Steps:

  • 1. Preheat the oven to 400' Spray cooking oil on the bottom of a 9x13 baking dish. Place the tilipia filets which have been seasoned in the bottom of the baking dish.
  • 2. The seasonings I use ( sparingly) are garlic powder and blackend redfish seasoning (chef paul's) Top each filet with a slice of lemon. Arrange the frozen vegetables (which have been seasoned lightly to your liking) around the fish.
  • 3. Cover the dish and bake for 25-30 minutes until the vegetables are tender and the fish flakes easily with a fork. I serve the dish with a baked potato and a garden salad. Enjoy !

4 to 5 Frozen Fish Filets
1 - 1 1/2 Cups of Italian Style Bread Crumbs
3 to 4 Tablespoons of Olive Oil
2 to 3 Pinches of Salt
Fresh Ground Black Pepper

Steps:

  • Start with oven preheated 450 Degrees Fahrenheit.
  • Drizzle half of the Olive Oil into a 9 inch x 12 inch Pyrex Casserole Dish.
  • Place the Frozen Fish Filets in the Pyrex Casserole Dish Pyrex Casserole Dish. The size of the Filets will determine if you are able to place 4 - 5 filets. You can always use a second oven shallow casserole dish
  • Drizzle the remaining Olive Oil over the Filets.
  • Sprinkle the Salt over the Fish Filets (optional).
  • Season fish filets with Black Pepper.
  • Coat the fish filets with the Italian Style Bread Crumbs until you have evenly covered the tops of the filets. I typically sift / sprinkle the bread crumbs directly from the container onto the fish..
  • Place the uncovered Pyrex Casserole Dish on the middle rack in the oven and baked for 25 minutes.
  • When 25 minutes have passed, remove the Pyrex Casserole Dish from the oven and serve.

1 large fish fillet (I used walleye but any fillet is great!)
2 medium potatoes (wedges)
1 large carrot (sliced)
2 small peppers (red and green, cut in strips)
1 medium zucchini (sliced)
1 large tomato (sliced)
vegetable oil
1/4 teaspoon salt
1/4 teaspoon ground black pepper
juice from half a lemon
zest from half a lemon
3-4 garlic cloves (sloced)
medium or large baking sheet
aluminium foil
bamboo spatula
fork

Steps:

  • Pre heat oven to 475 F
  • Line a baking sheet with aluminium foil. Make sure you cover the surface evenly so the juice from the vegetables and fish won't spill out while cooking.
  • Place fish in the middle of the sheet.
  • Top with all vegetables.
  • Drizzle oil.
  • Add salt, pepper, lemon juice, lemon zest and garlic and mix well with your hands.
  • Wrap foil well and bake for 15 minutes.
  • Remove baking sheet from the oven, open the foil to expose the fish and return to oven. Bake for additional 5 minutes or until the fish gets a light golden crust.
  • Test with a fork as specified in the article above.
  • Enjoy your fish in foil!

EASY BAKED FISH WITH GARLIC AND BASIL

Easy, tender baked fish infused with garlic and basil. The secret to this juicy fish is in the quick fish marinade with a few spices, garlic, fresh basil, a little citrus and extra virgin olive oil. Serve it with lemon rice and my big white bean salad or any bright salad you love!

2 lb fish fillet like halibut
Salt and pepper
1 1/2 tsp dry oregano
1 tsp ground coriander
1 tsp sweet paprika
10 garlic cloves, minced
15 basil leaves, sliced into ribbons
6 tbsp extra virgin olive oil (I used Private Reserve Greek EVOO)
Juice of 1 lemon
2 bell peppers any color, sliced (I used 1 red and 1 green bell pepper)
2 shallots, peeled and sliced

Steps:

  • Pat fish fillet dry and season with salt and pepper on both sides.
  • Place the fish in a large zip-top bag. Add the oregano, coriander, paprika, minced garlic, basil, extra virgin olive oil and lemon juice. Zip the bag shut and massage to be sure the fish is evenly coated in the marinade. Marinated for 30 minutes or up to 1 hour in the fridge (see notes).
  • Heat oven to 425 degrees F.
  • Arrange bell peppers and shallots in the bottom of a 9 x 13 baking dish. Place the fish on top and pour the marinade over it.
  • Bake in heated oven for 15 minutes or until fish is done and flakes easily.
