OVEN-BAKED FISH STICKS WITH EASY TARTAR SAUCE (KID-FRIENDLY)
Although cod is stated in the ingredients this recipe will work good using tilapia or white fish fillets. This will serve about 3 people, but can be easily doubled. The already crushed cornflake crumbs that you purchase in a small box will not work as well for this recipe, the texture is too fine and the fish sticks will not be as crispy, try to use regular cornflakes cereal and grind them in your processor. You can double the tartar sauce recipe if you prefer more sauce, try to make the sauce even up to a day ahead to blend flavors. This is a great recipe for kids of all ages LOL!

Steps:
- Set oven to 475°F (set oven rack to second-lowest position, or the middle rack).
- In a bowl mix together the mayo, sweet relish, garlic powder and lemon juice; whisk to blend, and season with salt and pepper, cover and refrigerate until ready to use.
- Process the cornflakes with a pinch of seasoning salt and black pepper on a processor until coarse crumbs form (leave the crumbs coarse, don't grind them to a fine texture) transfer the crumbs to a bowl and mix in lemon peel.
- In a small bowl mix together the melted butter with about 2-3 tablespoon fresh lemon juice until well combined.
- Season the fish with black pepper (and more salt if desired) then brush the fish with the lemon butter to coat on all sides.
- Dip the fish into the cornflake mixture coating completely.
- Arrange the fish on a lightly greased baking sheet.
- Sprinkle with any remaining cornflake mixture.
- Bake fish for about 7-10 minutes (depending on the size of the fish strips).
- Serve with the sauce.
SUNNY'S FRIED TUNA STICKS WITH WASABI MAYO SAUCE

Time 50m
Yield 8 to 10 fish sticks
Number Of Ingredients 13
Steps:
- For the sauce: In a medium bowl, mix together the mayonnaise, honey, soy sauce, lemon zest and juice and wasabi. Taste--it should be salty, sweet and a bit tangy. Balance the seasoning if needed. Refrigerate.
- For the tuna: In a large bowl, mix together the tempura batter, cold seltzer and soy sauce. You want the batter to have a pancake-like consistency; you may not need all the seltzer. Set aside in the refrigerator.
- Slice the tuna against the grain into 3/4- to 1-inch-thick sticks. You should be able to make 4 to 5 sticks from each tuna steak. If using skewers (not needed), push one down the center of each. Dust each tuna stick all over with salt and pepper, then some flour. Transfer to a baking sheet lined with parchment paper and freeze for 30 minutes.
- Meanwhile, add enough oil to a pot to deep-fry the fish sticks and heat to 375 degrees F.
- When ready to fry, remove the batter from the refrigerator and the floured tuna from the freezer. Check all sides to make sure the flour is still dusty and not soaked in; sprinkle with flour again if needed, then dip into the batter and fry until golden, about 2 1/2 minutes. Remove and season immediately with everything bagel seasoning or a pinch of salt. Serve with the dipping sauce.

FISH STICK DIPPING SAUCES: 15 EASIEST OPTIONS - JANE'S KITCHEN
From janeskitchenmiracles.com
- Old-Fashioned Tartar Sauce. To me, the best fish stick dipping sauce is tartar sauce. You just can’t beat a classic! The briny flavors of the pickles and capers just go so well with the crispy, savory fish sticks.
- Creamy Sweet Chili Sauce. This creamy, spicy, sweet, and tangy dipping sauce has it all. Although it’s not everyone’s favorite ingredient, the mayo here is crucial.
- Spicy Cajun Dip. I don’t know about you, but I love me some seafood po’boys! The warm kick from Cajun seasoning is so fitting when you’re talking about fish, shrimp, or scallops.
- Ranch Dressing. Classic ranch dressing is an amazing condiment for anything breaded, battered, and fried. This makes it an easy fish stick dipping sauce choice when you’re in a pinch.
- Jalapeno Tartar Sauce. If you want a modern spin on the classic, may I introduce this jalapeno tartar sauce? Instead of using traditional dill pickles and capers, you’re getting all the briny flavor from pickled jalapenos.
