EASY BAKED FISH WITH GARLIC AND BASIL



Easy Baked Fish with Garlic and Basil image

Easy, tender baked fish infused with garlic and basil. The secret to this juicy fish is in the quick fish marinade with a few spices, garlic, fresh basil, a little citrus and extra virgin olive oil. Serve it with lemon rice and my big white bean salad or any bright salad you love!

2 lb fish fillet like halibut
Salt and pepper
1 1/2 tsp dry oregano
1 tsp ground coriander
1 tsp sweet paprika
10 garlic cloves, minced
15 basil leaves, sliced into ribbons
6 tbsp extra virgin olive oil (I used Private Reserve Greek EVOO)
Juice of 1 lemon
2 bell peppers any color, sliced (I used 1 red and 1 green bell pepper)
2 shallots, peeled and sliced

Steps:

  • Pat fish fillet dry and season with salt and pepper on both sides.
  • Place the fish in a large zip-top bag. Add the oregano, coriander, paprika, minced garlic, basil, extra virgin olive oil and lemon juice. Zip the bag shut and massage to be sure the fish is evenly coated in the marinade. Marinated for 30 minutes or up to 1 hour in the fridge (see notes).
  • Heat oven to 425 degrees F.
  • Arrange bell peppers and shallots in the bottom of a 9 x 13 baking dish. Place the fish on top and pour the marinade over it.
  • Bake in heated oven for 15 minutes or until fish is done and flakes easily.

One-pan dishes like this are great, because they deliver a big flavour punch with minimal washing up. This five-ingredient wonder is all about beautifully fragrant, fluffy rice, perfectly steamed fish and soft, juicy cherry tomatoes, accompanied by a flavour-packed tapenade straight from your store cupboard.

300 g white basmati rice
6 heaped teaspoons green olive tapenade
350 g ripe mixed-colour cherry tomatoes
½ a bunch of fresh basil, (15g)
500 g white fish fillets, such as haddock, skin off, pin-boned, from sustainable sources

Steps:

  • In a large shallow casserole pan on a high heat, mix the rice with 2 heaped teaspoons of tapenade, then pour over 600ml of water.
  • Put the lid on and let it come to the boil while you halve the tomatoes and, in a bowl, mix them with 1 tablespoon each of olive oil and red wine vinegar.
  • Taste, season to perfection with sea salt and black pepper, and tear in most of the basil leaves.
  • Cut the fish into four equal-sized pieces and place in the pan, pushing them into the rice.
  • Scatter over the dressed tomatoes. Put the lid back on and boil for 10 minutes, or until the rice is cooked through, then remove the lid and cook for a further 2 minutes until all the liquid has evaporated.
  • Spoon the remaining tapenade over the fish, pick over the remaining basil leaves, drizzle lightly with extra virgin olive oil, and dish up.

½ cup chicken broth
¼ cup butter
2 tablespoons dry white wine
1 tablespoon fresh lemon juice
½ teaspoon dried basil
½ teaspoon salt
¼ teaspoon ground black pepper
1 ⅓ cups instant rice
1 red onion, chopped
1 red bell pepper, chopped
1 cup frozen peas
2 cloves garlic, chopped
1 pound sole fillets
2 plum (Roma) tomatoes, thinly sliced
1 lemon, quartered

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Heat chicken broth, butter, wine, lemon juice, basil, salt, and black pepper in a saucepan over medium heat until butter is melted, about 5 minutes.
  • Stir rice, onion, bell pepper, peas, and garlic in prepared baking dish. Arrange sole fillets over rice mixture and top with tomato slices. Pour butter mixture over fish, rice, and vegetables. Cover baking dish with aluminum foil.
  • Bake in preheated oven until fish is easily flaked with a fork and rice is tender, 20 to 25 minutes. Serve with lemon wedges.

10 oz frozen (chopped) Broccoli, thawed & drained
1 TB grated Parmesan cheese

1 TB Lemon Juice
Paprika to taste
1/2 C shredded Cheddar Cheese

Steps:

  • In an 8x12" dish, combine bouillon mixture with other spices and uncooked rice. Bake, covered, for 10 minutes. Top with broccoli & Parmesan cheese. Place fish diagonally down center of dish. Drizzle with lemon juice and sprinkle with paprika. Bake, covered, at 375 for 20 to 25 minutes or until fish flakes easily with fork. Stir rice. Top fish with cheese & bake, uncovered, 3 minutes longer.

1/2 of a bay leaf, crushed. Parsley sprigs. Place fish in baking dish. Spread crackers over top and sprinkle with cheese to taste. Pour melted butter over top and sprinkle with garlic salt if desired. Bake at 325 degrees for 20 minutes. For rice, add onion and garlic to half of melted butter in skillet. Add uncooked rice.
