2 (7 ounce) cans whole green chile peppers, drained
1 ½ cups shredded Cheddar cheese, divided
⅓ cup milk
4 eggs, lightly beaten
salt and pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x12 inch baking dish.
  • Line the bottom of dish with green chiles. Sprinkle with 1/2 cup shredded cheese. Repeat layers twice more. In a medium bowl, whisk together milk and eggs. Season with salt and pepper. Pour egg mixture over chiles and cheese.
  • Bake in preheated oven for 25 to 30 minutes, or until filling is set. Let stand 5 to 10 minutes before serving.

6 oz monterey jack cheese (grated)
8 oz sharp cheddar cheese (grated)
7 oz canned mild chopped green chiles
2 tbsp flour
1/2 cup milk
8 eggs
Salt & pepper to taste

Steps:

  • Preheat the oven to 350˚F.
  • Mix the cheeses and then sprinkle 1 cup of the cheese (about 2/3) in the bottom of a casserole dish. Then dollop the green chiles evenly over the cheese.
  • Place the flour in the bottom of a bowl and use a whisk to slowly mix in a little of the milk to make a paste, then continue to pour the milk in while whisking until it is all smoothly combined. Then add the eggs into the milk, season with salt and pepper, and use the whisk to combine well. Pour the mixture into the casserole dish over the cheese and chiles.
  • Top the casserole with remaining cheese and then bake on the middle rack of the oven for 25-35 minutes or until eggs are set in the middle.
  • Remove from oven and let sit for 5 minutes then serve hot. Enjoy!

1 cup grated cheddar cheese
5 large eggs
2 tablespoons milk
1/4 teaspoon salt

Steps:

  • Adjust oven rack to center position and preheat oven to 350°F. Grease a 9-inch glass pie plate (or comparably sized baking dish) with butter or spray with nonstick cooking spray.
  • Evenly spread green chiles in the bottom of the prepared baking dish. Sprinkle grated cheddar on top. Set aside.
  • In a large bowl, scramble eggs. Beat in milk, salt, and pepper until well blended. Slowly pour eggs over green chiles and cheese. If any cheese is sticking up, press down on it with the back of a fork until submerged.
  • Bake in preheated oven for 25 to 30 minutes or until center is puffy and a thin knife inserted in the center of the eggs comes out clean. Allow to cool for a few minutes before slicing and serving warm.

6 corn tortillas ($0.35)
1/2 Tbsp cooking oil ($0.01)
2 Tbsp butter ($0.26)
8 large eggs ($2.16)
1 4oz. can diced green chiles ($0.69)
1/4 cup sour cream ($0.37)
2 oz. queso fresco or Monterey jack ($0.57)
2 green onions ($0.25)
1 Pinch salt & pepper ($0.05)

Steps:

  • Preheat the oven to 400ºF. Stack the tortillas and then cut them into six equal sized wedges. Place the tortilla wedges in a bowl and drizzle the cooking oil over top. Gently toss the tortillas until they are well coated in oil.
  • Spread the oil coated tortilla triangles out over a baking sheet in a single layer. Bake the tortillas for 8-10 minutes, stirring once half way through, or until they are golden brown and crispy. Leave the oven turned on.
  • While the tortillas are baking, prepare the other ingredients. Lightly whisk the eggs, drain the can of green chiles, measure the sour cream, and slice the green onions. Also gather 2 Tbsp butter and 2 oz. queso fresco or shredded Monterey jack cheese.
  • Add the butter to a large skillet and heat over medium, or just below medium. Allow the butter to melt, then swirl the skillet to coat the bottom and around the edges. Pour the eggs into the hot skillet and gently scramble the eggs until they are about 60% solid (if you want to skip the oven and cook it all on the stove top, cook the eggs until they are about 85-90% solid). Season the eggs with a pinch of salt and pepper.
  • Take the eggs off the heat and spoon the green chiles over the surface. Add the sour cream in dollops all over the eggs. Add the baked tortilla chips and then gently fold them into the eggs so they are half covered beneath the eggs. Finally, crumble the queso fresco or sprinkle shredded Monterey jack over top.
  • Transfer the skillet to the oven (still set to 400ºF) and bake for 5-8 minutes, or until the eggs are set and the cheese is melted. If cooking entirely on the stove top, place a lid on the skillet and place it over medium heat until the egg are fully set and the cheese is melted.
  • Sprinkle sliced green onions over top just before serving.

The sour cream is the key - it keeps the eggs moist, unlike many baked egg dishes that tend to be a bit dry. It's also fast and easy, with very little clean up! I like to use Mexican shredded cheese, but any cheese would probably be fine.

shredded cheese, your choice of cheese
1 (4 ounce) can diced green chilies
3 tablespoons sour cream
salt and pepper, to taste

  • Spray or grease small baking dish. Line bottom of dish with green chiles and spread evenly. Cover green chiles with shredded cheese and spread evenly.
  • Beat eggs with sour cream, using a fork. Add hot sauce and salt and pepper to taste, and mix well.
  • Pour into baking dish. Sprinkle with bacon bits and additional shredded cheese.
  • Bake in 350 oven for 30 minutes, or until eggs are set.

  • Preheat the oven to 400 degrees F.
  • In a medium straight-sided saute pan, heat the olive oil over medium heat. Add the onion and cook until soft, about 5 minutes. Add the capers, oregano, garlic, chile and orange zest. Cook for 3 more minutes. Add the tomatoes and tomato puree. Bring to a slow simmer and cook until thickened, 10 to 15 minutes.
