For a change of pace, I like to serve these stuffed cucumbers in place of a lettuce salad. They're really refreshing, and a touch of French dressing makes them a colorful addition to any meal. -Mrs. Howard Phipps, Hernando, Mississippi

1 medium cucumber
1/2 teaspoon salt
3 ounces cream cheese, softened
1/4 cup chopped green pepper
2 tablespoons chopped onion
1/2 teaspoon Worcestershire sauce
1/8 teaspoon pepper
Dash paprika
French salad dressing, optional

Steps:

  • Cut cucumber in half lengthwise. Scoop out seeds and pulp, leaving a 1/4-in. shell. Place seeds and pulp in a colander. Sprinkle with salt; drain for 30 minutes. , Meanwhile, combine the cream cheese, green pepper, onion, Worcestershire sauce and pepper; mix well. Stir in 2-3 tablespoons drained pulp. Spoon into cucumber shells; sprinkle with paprika. Refrigerate until serving. Serve with French dressing if desired.

I invented this recipe out of a need for a way to use the surplus cucumbers from a friend's garden this summer. I had never heard of someone roasting cucumbers, and a quick internet search turned up nothing, so I thought it would make an interesting culinary experiment. As it turned out, though, I discovered a new family favorite! This fast and easy recipe makes a great side dish for any occasion. Great with chicken or steak! I've even eaten it by itself for a light lunch. What more could you ask for?

olive oil cooking spray
2 tablespoons butter, cut into small chunks
1 large cucumber - peeled, seeded, and cut lengthwise into spears
1 small sweet onion (such as Vidalia®), cut in half and sliced
1 teaspoon chopped fresh basil
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh cilantro
1 teaspoon chopped fresh mint

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch baking dish with aluminum foil. Spray the foil with olive oil cooking spray.
  • Spread pieces of butter into the baking sheet and lay cucumber spears over the butter. Top with slices of sweet onion and scatter basil, parsley, cilantro, and mint over the top. Spray the vegetables again with olive oil cooking spray.
  • Roast cucumber mixture in the preheated oven until cucumber spears begin to soften, about 10 minutes. Turn the cucumbers and onion slices over and return to oven; roast until cucumbers are tender, 15 to 20 more minutes.

BAKED FALAFEL WITH CUCUMBERS AND TAHINI



Baked Falafel with Cucumbers and Tahini image

Number Of Ingredients 12

1 large bunch fresh cilantro (about 3 cups leaves)
1 onion, thinly sliced (about 1 1/2 cups)
3 cloves garlic
1 teaspoon ground cumin
Kosher salt and freshly ground pepper
1 15-ounce can chickpeas, drained and rinsed
1/3 cup plus 2 tablespoons tahini
1/4 cup panko breadcrumbs
2 tablespoons extra-virgin olive oil
Juice of 2 lemons
5 Persian cucumbers, thinly sliced
2 to 3 pieces pita bread, cut into quarters

Steps:

  • Put a baking sheet on the middle oven rack and preheat to 450 degrees F. Pulse 2 cups cilantro, 1 cup onion, the garlic, cumin, 1/2 teaspoon salt and a few grinds of pepper in a food processor until finely chopped. Add the chickpeas and 2 tablespoons tahini; pulse to make a chunky paste. Scrape the mixture into a bowl and stir in the panko.
  • Form the chickpea mixture into twelve 2-inch patties (about 2 tablespoons each). Remove the baking sheet from the oven, brush with 1 tablespoon olive oil and add the chickpea patties. Bake, flipping the patties and rotating the pan halfway through, until golden and crisp, 20 to 25 minutes.
  • Meanwhile, mix the remaining 1/3 cup tahini with 6 tablespoons warm water and the juice of 1 lemon in a small bowl until creamy (it may look separated at first but it will come together). Season with salt and pepper; set aside. Toss the cucumbers with the juice of the remaining lemon, 1 cup cilantro, 1/2 cup sliced onion and 1 tablespoon olive oil in a medium bowl; season with salt and pepper.
  • Warm the pita in the oven. Serve the falafel with the cucumber salad, pita and tahini sauce.

This recipe was inspired by recipe#1722 by Traci & Jeff Poole1. Cucumbers make a lovely hot vegetable dish and maintain their crispness when baked. You may use them much like you would a Zucchini. In this recipe I used Cauliflower but other veggies would work equally well - Corn, Carrots & peas, just about anything. Try experimenting. This first time I didn't sprinkle with parmesan cheese but I will in the future. I hate wasting those lovely Cukes and this year they have gone crazy. This may be baked in your toaster oven.

1 medium cucumber, peeled, cut in half lengthwise, seeds scooped out
2 tablespoons butter or 2 tablespoons margarine
1/2 teaspoon dried dill weed
4 cauliflower florets (enough to fill the cavity of the cuke)
1 -2 jalapeno pepper, finely chopped
1/2 cup chicken stock or 1/2 cup water
2 tablespoons light soy sauce
salt and pepper
3 tablespoons parmesan cheese (optional)

Steps:

  • Steam the cauliflower florets for approx 5 minutes- You want them to be crisp.
  • Place you prepared cucumber halves in a baking dish cavity side up.
  • Dot cucumber halves with butter/margarine, sprinkle with dill weed.
  • Divide the jalapeno and cauliflower between the two halves filling the cavities.
  • Season with salt and pepper.
  • Sprinkle on the soy sauce and parmesan cheese (if using).
  • Pour the stock/water between the halves on the bottom of the baking dish.
  • Bake uncovered in a 375°F oven for approx 30 minutes.
  • Time depends on the thickness of the cucumber.
  • Enjoy.

Cucumbers (- 3 small ones or 1-2 large ones)
Seasoning of choice:
1 teaspoon of smoked paprika
1 teaspoon of garlic powder
Salt to Taste
1 teaspoon of onion powder
1 teaspoon of garlic powder
Salt to taste
1 teaspoon of apple cider vinegar
Salt to taste
1 teaspoon of fresh lemon juice
1/2 teaspoon of ground black pepper

Steps:

  • Slice cucumbers thinly, about an 1/8 of an inch in thickness.
  • Pat cucumbers dry and add them to a bowl. Mix well with your seasoning of choice.
  • Line a baking sheet with parchment paper. Place the cucumbers onto the baking sheet, lying flat and separated.
  • Bake low and slow at 170 degrees Fahrenheit for 3-4 hours. Time will depend on how large your cucumbers are.
  • Remove the cucumbers from the oven once they are dried out and crispy.
  • Enjoy your healthy snack!

  • Slice cucumber very thin. Use a mandoline slicer for best results.
  • Remove excess moisture from slices using a paper towel.

3 eggs
1 cup vegetable oil
2 cups white sugar
1 teaspoon vanilla extract
1 cup coarsely chopped pecans
3 cups all-purpose flour
1 tablespoon ground cinnamon
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon baking powder
⅛ teaspoon ground nutmeg
⅛ teaspoon ground cloves

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Spray 2 5x9-inch loaf pans with cooking spray.
  • Place shredded cucumbers into a colander and let drain for about 30 minutes.
  • Stir eggs, vegetable oil, sugar, vanilla extract, drained cucumber, and pecans together in a large bowl. Whisk flour, cinnamon, baking soda, salt, baking powder, nutmeg, and cloves in a separate bowl. Stir dry ingredients into the cucumber mixture until batter is thoroughly combined. Spoon batter into prepared loaf pans.
  • Bake loaves in the preheated oven until lightly browned and a toothpick inserted into the center of each loaf comes out clean, 50 minutes to 1 hour. Let loaves cool in pans for 10 minutes before removing from pans to finish cooling on wire racks.

Kosher salt and freshly ground pepper
1 tablespoon unsalted butter, cut into small pieces
1/3 cup heavy cream
1/2-inch piece fresh horseradish, peeled
1 teaspoon finely grated lemon zest (from 1 lemon)

2 Medium Cucumbers
1 Tbsp Olive oil
1 tsp salt (or to taste)
2 tsp Vinegar (Apple cider vinegar or your favorite)

Steps:

  • Slice cucumbers very thin, trying to get consistent thickness so they will dry evenly. Use a mandolin slicer if available for best results. If you don't have a mandolin, use a very sharp knife.
  • Pat cucumber slices dry with a paper towel to remove as much moisture as possible. Place cucumbers in fairly large bowl and add the rest of the ingredients. Toss together gently but thoroughly to combine.
  • For dehydrator: Place cucumber slices on trays and dry at 135°F for 12 hours or until they reach your desired crispiness (start checking them at 10 hours).For oven: Place slices on parchment lined baking tray. Dry at 175°F for 3-4 hours, checking every hour to ensure they don't brown around the edges or burn. Turn them over half way through. Allow slices to cool before serving.
