1/2 cup butter or margarine
1 small onion, chopped (1/4 cup)
1/2 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/2 teaspoon pepper
4 cups milk (1 quart)
6 eggs, slightly beaten
2 cups shredded Cheddar cheese (8 oz)
2 bags (12 oz) frozen corn, thawed, drained
1/2 cup chopped fresh parsley or 2 tablespoon parsley flakes
3/4 cup Progresso™ plain bread crumbs
3 tablespoons butter or margarine, melted

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish or 3-quart casserole with cooking spray.
  • In 4-quart Dutch oven, melt 1/2 cup butter over medium heat. Add onion; cook 3 to 4 minutes, stirring frequently, until tender. Stir in flour, salt and pepper until well blended. Stir in milk. Cook 4 to 5 minutes, stirring constantly, until thickened. Gradually stir in eggs and cheese. Stir in corn and parsley. Pour into baking dish.
  • In small bowl, mix bread crumbs and 3 tablespoons melted butter; sprinkle over corn mixture.
  • Bake uncovered 55 to 65 minutes or until mixture is set and knife inserted in center comes out clean. Let stand 5 to 10 minutes before serving.

3 tablespoons butter, plus extra for casserole
1/2 large onion, chopped
1 jalapeno, chopped
3 tablespoons all-purpose flour
2 cups milk
1 cup shredded Cheddar
2 eggs, beaten
1 (10-ounce) bag frozen corn
Salt and freshly ground black pepper 1/4 cup bread crumbs 1/4 cup grated Parmesan

Steps:

  • Special equipment: 8 by 8-inch casserole
  • Preheat oven to 325 degrees F.
  • In a large saucepan on medium heat, melt butter and saute onions and jalapenos until tender, about 5 minutes. Add flour and stir to coat evenly, being sure to not burn the onions. Cook flour until golden brown, about 3 minutes. Whisk in milk and cheese and stir until melted, then remove from heat. Add the eggs to a small bowl, and stir in 1/4 cup of hot mixture to temper the eggs. Stir add the egg mixture into the pan, along with corn, and season with salt and pepper, to taste. Pour into a buttered 8 by 8-inch casserole dish. In a small bowl, mix together bread crumbs and Parmesan cheese. Sprinkle evenly over top of casserole, place in the oven and bake until custard sets and the top is golden brown, about 45 minutes.

Steps:

  • Gather the ingredients.
  • Preheat oven to 350 F.
  • Melt butter in a saucepan over medium-low heat.
  • Add flour, stirring until mixture is well blended. Cook, stirring, for 1 to 2 minutes.
  • Gradually stir in the milk; add sugar and salt. Cook, whisking constantly, until smooth and thickened. ​The mixture will be thick.

2 stick butter, melted
1 pkg sour cream, (16 ounce)
2 can(s) whole kernel corn, undrained, (15 ounce)
2 can(s) creamed corn, (15 ounce)
2 box Jiffy corn muffin mix, (8.5 ounce)
1 c sugar
2 tsp vanilla extract

Steps:

  • 1. Preheat oven to 350 degrees. In a bowl melt butter; set aside to cool slightly.
  • 2. In a large mixing bowl beat together 6 eggs.
  • 3. Add sour cream, corn (with liquid), creamed corn, Jiffy corn muffin mix and sugar to eggs. Mix well.
  • 4. Add cooled melted butter to corn mixture. Mix well.
  • 5. Add vanilla extract to mixture (make sure this is done last).

1 tablespoon sugar
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper (or white pepper)

2 1/2 tablespoons melted butter
3 eggs (beaten)
1 cup buttermilk (can use whole milk)
1 teaspoon vanilla
1/2 teaspoon cinnamon
pinch nutmeg
2 cans (or 2 1/2 cups canned corn, rinsed and drained)
1 tablespoon sugar
1/2 teaspoon salt
1/8 teaspoon freshly ground pepper (or white pepper)
1 1/2 tablespoons flour
2 1/2 tablespoons melted butter
3 eggs (beaten)
1 cup whole milk
1 teaspoon vanilla
1/2 teaspoon cinnamon
pinch nutmeg

Steps:

  • Drain corn if canned. Thaw corn if frozen.
  • Drain corn and rinse off with cold water to get sodium off.
  • If you have a vitamix, mix one can corn until it is creamed. (optional)
  • Add in eggs , buttermilk, and all ingredients except the two cans of whole corn, until all is incorporated.
  • Pour into your baking dish. Then add in the two cans of whole corn and stir.
  • Mix ingredients in a 1 1/2 quart baking dish.
  • Bake at 350 degrees for 35-45 minutes, or when it no longer shakes in the middle, checking at 30 minutes.
  • Spray baking dish
  • Mix all ingredients together and bake at 350 for 35-45 minutes, checking at 30 minutes, until the center is set.

1 cup very fine yellow whole-grain cornmeal
Scraped kernels from 2 ears fresh sweet corn (about 1 cup)
2 tablespoons chopped fresh herbs such as parsley, chives, or basil
Coarse kosher salt and freshly ground black pepper
2 large eggs, separated

Steps:

  • Heat the oven to 375 degrees F. Butter a medium ovenproof casserole dish. Set aside.
  • Combine the milk and cornmeal in a medium saucepan and place over medium-high heat. Bring to a boil, whisking rapidly and constantly, until very, very thick, about 5 minutes.
  • Transfer the mixture to a large bowl. Add the corn kernels, herbs and the 2 tablespoons melted butter. Season with salt and pepper. Add the egg yolks, one at a time, stirring after each addition.
  • In a separate bowl, using a handheld mixer, beat the egg whites with a pinch of salt on high speed until stiff peaks form. Gently fold the egg whites into the warm cornmeal mixture.
  • Transfer the lightened cornmeal mixture to the prepared dish; smooth the surface with a spatula. Bake until puffed and golden-brown on top and the inside is firm but still moist, 20 to 35 minutes. Serve immediately.
