This comes from Nigella Lawson's book Nigella Bites and was posted in response to a request on the noticeboard. I've never made it, but her recipes rarely fail!

- Put ham in a pan, add onion and pour over the Coke.
- Bring to the boil, reduce to a simmer, put the lid on and cook for around 2 1/2 hours or around one hour per kilo of meat.
- Preheat oven to 240 C degrees.
- When ham is cooked, take it out of pan and let cool.
- Remove skin, leaving a thin layer of fat.
- Use a sharp knife to make large diamond shapes in the fat.
- Put a clove in each diamond and spread treacle over skin.
- Pat mustard and sugar onto the sticky fat.
- Bake in a foil-lined pan for around 10 minutes, or until crispy and bubbly.

COLA & PINEAPPLE GLAZED HAM RECIPE

- Let the ham stand at room temperature for 90 minutes.
- Preheat oven to 275 degrees F. Set the rack at the lowest position. Rinse and pat dry the ham. Using a sharp knife, score the skin of the ham in a criss-cross pattern. Place ham in a roasting pan. Pour just 1 1/2 cups of the cola and 1 1/2 cups of grape juice into the pan and add additional water if necessary to bring the liquid level to 1/2 inch. Cover the pan tightly with tin foil.
- Roast in oven for 2 3/4 to 3 hours (about 15 minutes per pound) or until the internal temperature of the ham reaches 100 degrees F.
- While the ham is cooking, prepare the glaze. Combine the remaining 1 cup grape juice, 1 cup cola, the juice from the pineapple (reserve the pineapple slices for later) and the brown sugar in a small sauce pot and simmer on low for 20 minutes, until it becomes thick and glossy.
- Let stand at room temperature until ready to use (as the glaze cools, it will thicken up, making it easier to brush on the ham).
- Take the ham out of the oven when it reaches the first internal temperature of 100 degrees F. Turn the oven to 425
- degrees F. Brush the ham with about 1/4 of the glaze all over. Use toothpicks to stud the ham with the sliced pineapple, if desired. Once the oven comes to temperature, return the ham, uncovered to oven.
- Bake for 15 minutes until the liquid is bubbly and the ham has turned to a nice, deep golden brown. The internal temperature of the ham should be 140 degrees F.
- Remove ham to a cutting board and let rest for 15 minutes.
- Return the remaining glaze to the stove on medium-low heat to warm the glaze up for serving. Carve and slice the ham, drizzle a bit of the cola glaze on each plate.

- Put 2kg unsmoked boneless gammon joint in a large pan and cover with 2l cola. Add 1 chopped carrot, 1 quartered onion, 1 chopped celery stick, 1 cinnamon stick, ½ tbsp peppercorns and 1 bay leaf.
- Bring to the boil, then turn down to simmer for around 2 ½ hrs, topping up with boiling water if necessary to keep the gammon fully covered.
- Carefully pour the liquid away, then let the ham cool a little while you heat the oven to 190C/170C fan/gas 5.
- Lift the ham into a roasting tin, then cut away the skin leaving behind an even layer of fat. Score the fat all over in a criss-cross pattern.
- Mix 150ml maple syrup, 2 tbsp wholegrain mustard, 2 tbsp red wine vinegar and a pinch of ground cloves or five-spice in a jug.
- Pour half over the fat, roast for 15 mins, then pour over the rest and return to the oven for another 30 mins, baste half way through.
- Remove from the oven and allow to rest for 10 mins, then spoon more glaze over the top. Can be roasted on the day or up to 2 days ahead and served cold.

- Preheat the oven to 325 degrees F (165 degrees C).
- Use a knife to score a diagonal pattern onto the ham with the lines about 1 inch apart. Place the ham in a large roasting pan and pat brown sugar over the entire surface. Some will fall into the pan, that's okay.
- Bake the ham in the preheated oven until the sugar is melting off of it, about 30 minutes. Remove the ham from the oven and pour the cola, grape juice and juice from the pineapple into the pan. Baste the ham with the mixture and return it to the oven.
- Continue to bake in the preheated oven, basting every 20 minutes, for about 2 hours. Cut the pineapple rings in half. Remove the ham from the oven and float the pineapple rings in the drippings. Allow the ham to rest for about 10 minutes, then slice and serve with the pineapple and sauce.

- Preheat the oven to 350 degrees F. Coat a large roasting pan with cooking spray and place the ham in the pan.
- Rub the brown sugar all over the ham, making sure to get it in between the slices.
- Pour the can of Coca-Cola over the ham.
- Cover the ham and bake for 90 minutes, basting every 30 minutes.
- Uncover and bake for 30 minutes more or until until ham is browned and caramelized.
- Remove the ham from the pan and place on a serving platter. Spoon the glaze from the bottom of the pan over the ham.
- To thicken the glaze, pour the ham glaze from the bottom of the roasting pan into a small pot and bring to a simmer. Whisk together the cornstarch with 2 tablespoons of cold water.

- Trim any excess skin and/or fat from the ham. Using a sharp knife, score the ham in a diamond pattern making 1/4-inch deep slices. Don't fret over getting this perfect - mine certainly wasn't! Place the ham (on its side - not face down) in the oven bag set in a large roasting pan. Roll the sides of the bag down so that the bag is open wide and you can get your hands around the ham easily. Combine brown sugar and dijon mustard in a small bowl and stir until thoroughly combined. Rub sugar mixture all over ham. Place orange wedges in the bottom of the bag around the ham. Pour the coke into the bag. Don't pour the coke over the ham or it will wash the sugar mixture off - just pour it in near the bottom of the ham. "Puff up" the bag a little so that the bag isn't touching the ham. Making sure to keep a "loose fit" around the ham, close the bag tightly with the provided tie. You should end up with what looks something like a two-day old mylar balloon with a ham inside it. ???? Using a small, sharp knife, make three small slits in the top of the bag for ventilation. Don't skip this step or the bag will burst wide open and the ham won't be able to self-baste. Move your oven rack just low enough that the bag won't touch the upper elements in your oven then bake at 350 degrees for 2-2.5 hours (2.5-3 hours if using a 13-15 pound ham) or until nicely browned and caramelized. Remove ham from oven and rest, inside the bag, for 30 minutes before serving. *Do not use a spiral sliced ham with this recipe. UPDATE: I have probably received over 200 comments and emails wanting to know why (WHY?!) you can't use a spiral ham for this so I guess I should explain here in the recipe (instead of below in the comments). Only large, solid cuts of meat can handle being cooked this long. If you cook a spiral ham using this recipe it will be dry and tough. In addition to the emails and comments I've received asking why you can't, I've received at least a dozen from people who did anyway and wrote to yell at me that their ham was dry and ruined. You're just going to have to trust me on this one.

- Mix the brown sugar and mustard in a small bowl. Set aside.
- Lightly spray your slow cooker with nonstick spray or brush with oil, if desired. Unwrap your ham, discard the included glaze packet, and place the ham in the slow cooker. If it fits on its side, perfect. If not, place cut side down.
- Pour the coke over the ham in a slow cooker. Then rub the sugar/mustard mix all over the ham. Cover.
- Cook the ham on low 4-6 hours until it reaches an internal temperature of 160 F. Use a brush to dab some of the cooking liquid in the bottom of the slow cooker over the top of the ham.
- Carefully remove the ham to a serving platter. This is easier with two people as the ham is very tender at this point. Brush with a little more of the coca-cola mustard glaze.

Only those who have never tried this raise an eyebrow at the idea. Don't hesitate, don't be anxious: this really works. No one who cooks it, cooks it just once: it always earns a place in every repertoire. For US cup measures, use the toggle at the top of the ingredients list.

- I find now that mild-cure gammon doesn't need soaking, but if you know that you're dealing with a salty piece, then put it in a pan covered with cold water, bring to the boil, then tip into a colander in the sink and start from here; otherwise, put the gammon in a pan, skin-side down if it fits like that, add the onion, then pour over the Coke. Bring to the boil, reduce to a good simmer, put the lid on, though not tightly, and cook for just under 2½ hours. If your joint is larger or smaller, work out timing by reckoning on an hour per kilo, remembering that it's going to get a quick blast in the oven later. But do take into account that if the gammon's been in the fridge right up to the moment you cook it, you will have to give it a good 15 minutes or so extra so that the interior is properly cooked. Meanwhile, preheat the oven to 240°C/gas mark 9/450ºF. When the ham's had its time (and ham it is, now it's cooked, though it's true Americans call it ham from its uncooked state) take it out of the pan and let cool a little for ease of handling. (Indeed, you can let it cool completely then finish off the cooking at some later stage if you want.) Then remove the skin, leaving a thin layer of fat. Score the fat with a sharp knife to make fairly large diamond shapes, and stud each diamond with a clove. Then carefully spread the treacle over the bark-budded skin, taking care not to dislodge the cloves. Gently pat the mustard and sugar onto the sticky fat. Cook in a foil-lined roasting tin for approximately 10 minutes or until the glaze is burnished and bubbly. Should you want to do the braising stage in advance and then let the ham cool, clove and glaze it and give it 30-40 minutes, from room temperature, at 180°C/gas mark 4/350ºF, turning up the heat towards the end if you think it needs it.
