1/3 cup chicken stock
1 cup corn
1 garlic clove
1 teaspoon fresh ginger (small slice)
1 teaspoon sugar
1/4 cup panko breadcrumbs, to coat (or bread crumbs)
1 tablespoon italian seasoning
1/2 teaspoon garlic powder
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
2 cod fish fillets
olive oil
fresh chives

Steps:

  • Preheat oven to 400 degrees. Puree all sauce ingredients in a blender and blend well. Pour into a small saucepan and cook over medium-low heat. Stirring occasionally, cook until thickened. Season with salt & pepper to taste.
  • Meanwhile, in a shallow dish, mix Panko and seasonings. Brush fish fillets lightly with olive oil. Place fish bottom side down and place some Panko mixture on top, pressing firmly. Carefully place on baking sheet. Bake 15-20 minutes.
  • Spoon the ginger-corn sauce onto 2 serving plates and top with fish. Garnish with fresh chives and serve immediately.

This recipe for baked cod is one of the easiest ones I know. Cod fillets are covered with a delicious herbed bread crumb crust and baked in the oven. Serve with rice.

4 (4 ounce) cod fillets
1 pinch salt and freshly ground black pepper to taste
½ cup warm water
½ fish bouillon cube
¾ cup dry bread crumbs
¼ cup butter, cut into small chunks
1 bunch fresh parsley, chopped
1 tablespoon chopped fresh dill
2 teaspoons dried tarragon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Lay cod fillets in a baking dish and season lightly with salt and pepper.
  • Combine water and fish bouillon cube in a bowl. Stir to combine and pour over cod.
  • Mix bread crumbs, butter, parsley, dill, tarragon, salt, and pepper in a bowl with a fork until crumbly. Sprinkle evenly over cod.
  • Bake in the preheated oven until fish flakes easily with a fork and the crust is golden and crunchy, about 20 minutes.
