Steps:
- Preheat oven to 350°F/180°. Grease a donut pan with oil or butter. Set aside.
- Make the donuts: Whisk together the flour, cocoa powder, baking powder, baking soda, and salt in a large bowl. Set aside.
- In a medium bowl whisk egg with sugar until well combined. Add milk, yogurt, melted butter and vanilla extract, and whisk until combined. Pour into the flour mixture and mix until just combined. The batter will be thick.
- Fill donut cavities with batter ¾ way full using a spoon or a piping bag (much easier). Cut a corner off the bottom of the bag and pipe the batter into each donut cup.
- Bake for 9-10 minutes or until a toothpick inserted into the center of the donuts comes out clean. Allow to cool for 5 minutes in pan, then remove donuts from pan and transfer to a wire rack. Allow to cool completely before glazing.
- Make the chocolate glaze: Melt the chocolate, heavy cream, and butter gently in the microwave (in 30-second intervals, stirring in between) or a double boiler until smooth. Dip the tops of the donuts into the chocolate glaze, and place on a cooling rack to set.
- Donuts are best eaten the same day or keep them for up to 3 days in the refrigerator.

Steps:
- Preheat oven to 350 degrees. Lightly grease a standard donut pan; set aside. Beat the oil, eggs, sugar, pumpkin, spices, salt and baking powder until smooth and well combined. Add the flour and stir until just combined. Fill the wells of the donut pan 3/4 full, about 1/4 cup batter per donut. Bake for 15 minutes or until a toothpick inserted in the center comes out clean. Remove from oven, wait a few minutes and then use a toothpick to loosen and remove the donuts from the pan and place on a wire rack. Repeat with remaining batter. When donuts are cool, dip in the glaze. Makes around 17 donuts.
- Melt the butter in a small saucepan over medium heat and heat until golden brown specks appear in the bottom of the pan, swirling the pan occasionally. The butter will get foamy and if you swirl the pan around, you will see brown bits at the bottom and it will have a nutty smell. Remove from heat and pour into a medium bowl, using a rubber scraper to get all the brown bits at the bottom. Add the powdered sugar and vanilla and stir until smooth and well combined. Add enough milk, as needed, to reach desired glaze consistency. Dip tops of cooled donuts in glaze and set on a wire rack and allow glaze to harden.

- In the bowl of a stand mixer, gently stir together the yeast and half-and-half. Let sit for about 1 minute to dissolve the yeast. Add the flour, sugar, salt, and the eggs and mix on low speed with the dough hook for about 4 minutes, to combine the mixture and build gluten.
- After 4 minutes, slowly add the butter, a piece at a time, and continue to mix with the dough hook for 5 to 6 minutes, or until the butter is fully incorporated and the dough is soft and cohesive.
- Remove the dough from the bowl, wrap tightly in two layers of plastic wrap, and chill in the refrigerator for at least 6 hours or up to 18 hours.
- Line a baking sheet with parchment paper. On a well-floured work surface, roll out the dough into a 12-inch square about 1/2 inch thick. Using a 3-inch round cookie cutter, cut out as many doughnuts as you can. Discard the scraps (dough does not re-roll well). Arrange them on the prepared baking sheet, cover loosely with plastic wrap, and place in a draft-free area to proof for 2 to 3 hours, or until they are about doubled in height and feel pillowy.

- Place chocolate chips in a wide and shallow heat proof bowl. Heat the cream in a small sauce pan over medium-heat. Bring to a boil, watching very carefully as it will happen fast. When the cream has come to a boil, remove from heat and pour over the chocolate chips. Allow the cream and chocolate to sit for minute, then whisk completely smooth. Let the ganache cool for a few minutes before you dip the donuts.
- Once the donuts are cool enough to handle, dip them in the chocolate ganache, allowing excess ganache to drip back into the bowl before placing them back on the cooling rack; repeat with all donuts. Decorate wet ganache with chopped peanuts and sea salt, if desired. Let ganache set a few minutes, then serve! These donuts are best eaten the day they are made.

- In the bowl of a stand mixer fitted with the dough hook, combine the water, vanilla, yeast, eggs, and sugar. Gradually add in the flour then salt, mixing until absorbed. Add the butter and cream and beat on medium speed for 6 to 8 minutes, or until a smooth sticky dough forms. Remove the dough to a lightly greased bowl, cover, and let rise until doubled in size, about 1 to 1 1/2 hours. At this point the dough can also be refrigerated and allowed to rise overnight.
- On a lightly floured work surface, roll the dough out to about 1/2-inch thickness. Using a round cookie cutter, cut out 6 rounds from the dough. OR, tear off pieces of dough weighing 100 grams each and shape into balls. Place on a large parchment-lined baking sheet spacing far apart. Cover and let rise until puffy, about 30 minutes.
- In a medium bowl using an electric mixer, beat the cream cheese, peanut butter, heavy cream, sugar, and vanilla until very well combined.
- In a medium saucepan over medium heat, combine the butter, milk, corn syrup, and vanilla and heat until the butter melts. Decrease the heat to low and add the chocolate, whisking until melted. Turn off the heat and add the powdered sugar, whisking until smooth.
