BAKED CHIPOTLE TOFU
Tofu is baked in a Mexican inspired chipotle marinade. This tofu is great as a main entree or on a sandwich!

Steps:
- Drain the tofu and press the tofu for at least 30 minutes.
- Preheat the oven to 400 F. Have a large ceramic baking dish ready. A 9 by 13 pan is a good size to use for this recipe.
- Slice the tofu 8 slices.
- Add the lager, chopped chipotles, adobo sauce, lime juice, avocado oil, tomato paste, garlic and salt. Whisk to combine.
- Add the tofu to the marinade in a single layer. Poke each slice with a fork several times, then flip the tofu over and press into the marinade.
- Bake for 20 minutes. Remove from the oven and bake another 20 minutes or until most of the marinade has been absorbed.
- Serve!

- Preheat oven to 400°. Blot tofu dry. Cut into 3/4-in. cubes. Place on a clean kitchen towel; cover with another towel. Place a cutting board on top; gently place a large cast iron skillet on top. Let stand 10 minutes. , Meanwhile, in a shallow dish, whisk together soy sauce, olive oil, sesame oil, salt, garlic powder and pepper. Place cornstarch in a separate shallow dish. Add tofu to soy mixture; turn to coat. Add tofu, a few pieces at a time, to the cornstarch; toss to coat. Place on a parchment paper-lined baking sheet. Bake until cubes are golden brown and crispy, 25-30 minutes, turning halfway through. Garnish with green onions, if desired.

- Note use 1 to 2 peppers or to taste.
- Press and Drain the tofu. For an even firmer texture, freeze, thaw then press and drain.
- Preheat oven to 450°F On a lightly oiled baking sheet place the onions and tomatoes. Sprinkle with the garlic and salt [to taste] Drizzle with 2 tbsp oil and toss.
- Roast for 30 minutes. Stir every 10. Tomatoes should be tender and the onion brown around edges. [note you can also simmer them on stove top however it changes the taste a bit].
- Toast the cumin seeds in unoiled pan until fragrant [1 minute] Grind.
- Place the Rosted veggies in food processor with cumin, cloves and 1 tbsp oil and puree to smooth. Add the peppers one at a time. Puree between each. Now do the tofu.
- Reduce oven to 375°F Slice each tofu cake horizontally into 3rds. Stack and cut into slices on diagonals [make an X] You should get 12 pieces each cake.
- Whisk the Braggs, oil and water. Arrange tofu on baking sheet and toss with soy sauce mix. Bake until crisp around edges about 45 to 60 minutes. NOTE IF YOU DID NOT PRESS THIS WILL NOT HAPPEN. Turn tofu gently at 15 minute intervals.
- Transfer sauce to pan and warm on medium heat, stir constantly, when hot add tofu. Toss and add salt to taste. Cook for about 3 to 5 minutes.

- Start by making the baked tofu. Preheat the oven to 400°F and line a baking sheet with parchment paper. Stir the adobo sauce, lime juice, tomato paste, maple syrup, and garlic together in a small bowl. Season with salt to taste, and if needed thin the mixture with some water—you'll want something with about the consistency of barbecue sauce.
- Arrange the tofu cubes on the parchment and brush with about a third of the adobo sauce mixture. Bake for 15 minutes. Flip the tofu cubes and brush with another third of the sauce mixture, reserving about a third. Bake 15 to 20 minutes more, until lightly browned.
- While the tofu bakes, generously coat the bottom of a large nonstick skillet with oil and place it over medium heat. When the oil is hot, add the plantain slices to the skillet. Cook for about 4 minutes on each side, until nicely browned. You can do this in batches if needed, adding oil to the skillet between batches as needed. Transfer the plantain slices to a paper-towel lined plate.
- Place about a fourth of the baked tofu cubes in a strip near the center of a tortilla, then arrange about a fourth of the plantain slices in a strip next to the tofu, and drizzle with some of the reserved adobo sauce mixture. Top with a fourth each of the avocado slices, lettuce, and cilantro. Roll into a burrito and repeat until all tortillas and fillings are used. Serve.

- Preheat the oven to 400 ºF. While the oven is preheating, press the tofu. Cut the tofu into 8 slices widthwise. Arrange the slices on a lint free kitchen towel, or paper towel. Wrap the towel around the tofu to cover and then place a heavy skillet, pot, or a baking sheet and some books on top. Leave to drain for around 30 minutes.
- Mix the chipotle barbecue sauce with 1/2 cup of water. In a square baking dish or small baking tray, spread some barbecue sauce to coat the bottom. Arrange the pressed tofu on the sauce and brush the rest of sauce over top the tofu to coat.
- Bake for 15 minutes, then flip the tofu and bake an additional 10 minutes. The barbecue sauce should be thick and bubbly. Let cool for a few minutes before serving.
- Serve the tofu with collard greens with some rice or mashed potatoes and sprinkle herbs on top for garnish.
