CHILI CHEESE CORN
"I got this yummy corn recipe from a co-worker more than 10 years ago," writes Nadene Melton from Euless, Texas. "It's so easy and tasty that it's become a favorite in our family-especially for holidays or special meals. I've had many requests for the recipe." TIP: To turn Nadene's creamy side dish into a convenient meal, simply add cooked chicken, beef or shrimp. Serve with a leafy tossed salad and crusty loaf of bread.

- In a large saucepan, combine cream cheese and butter. Cook and stir over medium heat for 4-5 minutes or until smooth. Stir in the remaining ingredients. Cook for 5 minutes or until heated through. Serve with a slotted spoon.

BA'CORN CHEESE
Steps:
- Place a 5-inch cast-iron skillet in the oven; preheat the oven to broil.
- Heat a wok or saute pan over high heat. Add the butter and bacon and cook until the bacon is crisp, about 20 seconds. Toss in the jalapeno and corn, season with a pinch of salt and pepper and cook until the corn kernels start to char a little bit, 20 to 30 seconds. Add the garlic and half of the scallions. Add the condensed milk, mayonnaise and 1/4 cup of the mozzarella and cook until the cheese is melted and the ingredients are well mixed, another 20 seconds. With a towel, grab your hot skillet from the broiler and carefully pour in the corn-cheese mixture. Sprinkle the remaining 1/4 cup mozzarella over the top and set under the broiler until golden brown, 30 to 45 seconds. Garnish with the remaining scallions.
BAKED CHILI CHEESE CORN
Steps:
- Preheat oven to 350º F. Mix all ingredients until well combined. Transfer to prepared large dish and bake until bubbling, about 30 minutes. Hint: grilling without the husk and basting with melted butter with your favorite herb or garlic will give you a very sweet ear of corn. Cook the corn until some of it is light to dark brown. The sugar in the corn caramelizes and you will not need to put anything else on it.
BAKED CHILI MAC
In searching what to make for dinner tonight, I took out a package of ground meat (buffalo, specifically) from the freezer, and found a box of elbow macaroni. Looked like Chili Mac makings to me! :) I had never made Chili Mac before (I just remember having it in the cafeteria when in grade school), so I took a look at what was here on Zaar... and was surprised not find many recipes for it. I put together a recipe out of what I found here and elsewhere online, but the below meat chili mac was somewhat adapted from Miss Annie's vegetarian Marvelous Macaroni Chili. Very tasty, very flexible! :) This is a Pantry Challenge recipe.

- Preheat oven to 350 degrees F.
- Cook the pasta according to package directions until al dente (if using regular macaroni this will take about 6 to 7 minutes, if using lower-carb versions it'll take about 15 minutes); drain and set aside.
- While pasta is cooking, in a large sauté pan cook the ground meat, onion, and garlic until meat is browned, about 5 to 7 minutes; drain fat if desired or necessary.
- Add the tomatoes, tomato paste, mild green chiles, beans, chili powder, ancho, oregano, cumin, pepper, salt, and tabasco (to taste) and simmer for 5 minutes.
- Add the cooked macaroni and stir well to incorporate.
- Pour mixture into a lightly pan-sprayed large casserole dish and sprinkle with the cheddar cheese.
- Bake at 350 degrees F for 20 to 30 minutes or until the cheese is golden and bubbly.
- Serve with a bit of sour cream for topping and veggies.
BAKED CORN

EASY CHILI CORNBREAD BAKE
Chili and cornbread go so well together, why not bake them in the same pan! I've been making this for years and my kids love it. I use ground turkey, but ground beef could be substituted if preferred. You can make this in individual 12- to 16-ounce casseroles if you prefer. Serve with tortilla chips and top with sour cream if desired.

- Cook turkey, celery, and onion in a skillet over medium heat until turkey is no longer pink, 5 to 7 minutes. Add chili powder, black pepper, cumin, and red pepper. Cook and stir for 2 minutes. - Preheat the oven to 400°F (200°C).
- In a liquid measuring cup or medium bowl, whisk the eggs and milk until well-combined.
- In a large bowl, add the flour, cornmeal, salt, baking powder, and baking soda, and whisk to combine.
- Make a well in the center of the dry ingredients, then pour in the wet ingredients and whisk until smooth. Add the melted butter and stir to combine.
- Grease a 9x13-inch (23x33-cm) glass baking dish with nonstick spray and line with parchment paper.
- Pour the cornbread batter into the pan, smoothing the top with a spatula.
- Bake for 25 minutes, or until a toothpick comes out clean. Let cool for about 10 minutes.
- In a large pan, heat the olive oil over medium heat. Add the onion and cook until softened, stirring frequently, about 5 minutes.
- Add the ground beef and break apart with a wooden spoon into small pieces. Add the salt, pepper, paprika, garlic powder, chili powder, and cumin. Cook, stirring frequently, until the ground beef is cooked through, about 5 minutes.

- Using the bottom of a utensil with a handle that is about 1-inch (2 cm) in diameter, poke multiple holes in the cornbread.
- Pour the chili over the cornbread and smooth the top with a spatula. Sprinkle the cheese over the chili.
- Bake for 3 minutes, or until the cheese is melted.
- Slice and serve with sour cream, scallions, and cilantro.

- Heat oven to 375ºF. Spray 8-inch square (2-quart) glass baking dish with nonstick cooking spray.
- Brown ground beef in large skillet over medium-high heat until thoroughly cooked, stirring frequently; drain.
- Add bell pepper and onion stir-fry, corn, taco seasoning mix and water; mix well. Cook over medium-high heat for 5 to 6 minutes or until liquid is absorbed, stirring occasionally.
- Meanwhile, in small bowl, combine refried beans and taco sauce; mix well.
- Spoon half of beef mixture into sprayed baking dish. Top with half of bean mixture and half of the corn chips. Top with remaining beef mixture and bean mixture. Cover with foil. Bake at 375ºF. for 30 minutes.
- Remove from oven. Uncover baking dish; top with remaining half of chips. Sprinkle with cheese.
- Return to oven; bake, uncovered, an additional 10 to 12 minutes or until thoroughly heated and cheese is melted. If desired, garnish with chopped fresh cilantro.
