TOMATILLO CHICKEN
This chicken stew uses the flavor of the whole chicken and tangy tomatillos and traditional Mexican enhancements such as cilantro, garlic, and onion to full advantage.

- In a food processor, puree tomatillos; set aside. In a large Dutch oven or heavy pot, heat oil over medium-high. Season chicken with salt and pepper and add to pot, skin side down. Cook until browned on one side, 6 minutes. Transfer to a plate.
- Add jalapenos and onion to pot and cook, stirring frequently, until slightly softened, 3 to 5 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in tomatillo puree and hominy, if using; season with salt and pepper. Nestle chicken, skin side up, in sauce. Cover pot; simmer until chicken is cooked through, 22 to 25 minutes. Stir in cilantro; season with salt and pepper.

CHICKEN BREAST WITH ROASTED TOMATILLO SAUCE

Steps:
- Lightly oil a rimmed baking sheet or baking pan and roast tomatillos and jalapeno or chilies under a hot broiler, 4 inches or so from the heat source, 3 to 4 minutes, or until they are blistered and splotchy brown with, maybe, a few black spots. Turn them and roast on the other side. Cool, then transfer tomatillos and chilies to a food processor fitted with the metal blade or blender along with any of the juices on the pan. Process or puree until smooth.
- Meanwhile, over medium heat in a heavy-bottomed saucepan, heat 2 tablespoons olive oil. Add onions and garlic and cook, stirring, about 6 minutes until golden brown. Raise heat to medium high, add tomatillo puree and cook 3 minutes until sauce darkens and is very thick. Add broth, brown sugar and 1/4 cup cilantro. Stir, reduce heat and simmer, uncovered, 10 minutes or until sauce thickens. Season with salt and pepper. Set sauce aside.
- Season chicken liberally with salt and pepper. Heat 3 tablespoons olive oil over medium-high heat in an oven-proof skillet large enough to hold chicken in one layer. Add chicken, skin side down, and cook 5 minutes until skin is richly browned. Turn and cook on bone side 2 minutes or so. Remove chicken from pan and pour out all but 1 tablespoon fat. Add tomatillo sauce and bring to a simmer. Nestle chicken pieces, skin side up, in the sauce, place in preheated 375-degree oven and bake 15 minutes, or until chicken is cooked. (Check with point of a small knife near the bone to make sure chicken is cooked through.)
- Place one piece of chicken in each of four shallow bowls, spoon sauce around, top with crema or queso fresco and sprinkle remaining cilantro over.

ROASTED TOMATILLO SAUCE

- Preheat the oven to 400 degrees F.
- Spread the tomatillos, garlic, jalapenos, bell pepper, poblano and onion on a baking sheet and season with salt and pepper. Drizzle with olive oil and toss everything to coat. Roast until the vegetables are soft, 10 to 15 minutes. Let cool for a few minutes.
- Remove the seeds from the peppers. Put all of the roasted vegetables and the cilantro into a food processor or blender. Process until still a bit chunky. Thin with some water if it is too thick. Stir in the lime zest and juice. Let cool completely.
- Use immediately or pour into freezer bags, label and freeze.
CHICKEN WITH TOMATILLO AND CILANTRO SAUCE

- Move broiler rack into position closest to flame. Set broiler to medium. Place tomatillos and chiles on a rimmed baking sheet; broil until soft and blackened in spots, about 5 minutes. Turn; broil other side 5 minutes. Remove from broiler and transfer to a food processor; blend. Increase broiler heat to high. Place chicken on same baking sheet and sprinkle with salt. Broil chicken until browned, about 9 minutes. Turn; broil other side 9 minutes. Heat oil in a large saucepan over low heat; cook onion and garlic, stirring occasionally, until soft and golden, about 5 minutes. Add pureed tomatillos and chiles; simmer uncovered, 2 minutes. Add cilantro and 1 teaspoon salt. Gently place chicken in sauce. Simmer, covered, until meat is cooked through, about 20 minutes. Sprinkle with pumpkin seeds and cilantro. - On a baking sheet spread Tomatillo (husked and rinsed), quartered yellow onion, garlic cloves (unpeeled), and poblano. Broil until skin is charred (about 4-5 minutes). Take out, flip roasted side down, then broil again for another 4-5 minute or until veggies are soft. Once done, take out and leave aside to cool a bit.
- Transfer roasted tomato, onion, cumin, oregano, 1/2 tsp salt, lime juice, chicken stock into a blender along with sheet pan drippings. Squeeze to extract pulp out of garlic. Add pulp to blender (discard skin). Scrap off skin and seeds of poblano. Add pulp to blender (discard seeds and skin).
- Process in blender until sauce is smooth and pureed. I use Vitamix and let it run for 2 minutes on medium, then 1 minute on high for smooth sauce. Taste and adjust salt and black pepper. Transfer to a container and use with your favorite Mexican meal. Enjoy!

- Remove and discard the husks from the tomatillos then wash them under running water. Combine the tomatillos and water in a saucepan. Bring to a boil and simmer until the tomatillos are tender, about 10 minutes. Puree the tomatillos with the cooking liquid and set aside.
- Coat a nonstick skillet with cooking spray. Add the oil and heat over medium-low heat. Cook the minced garlic, onion and chile in the oil until tender, 1 to 2 minutes. Stir in the tomatillo puree. - Slice the top off the head of garlic so the tips of the cloves are exposed. Place the garlic on a sheet of tin foil, drizzle 1/2 tablespoon of olive oil over the top, and wrap the garlic in the foil. - SAUCE: Position a rack near the top of the oven. I use the highly preset, closest to the broiler. Preheat the broiler for about 10 minutes. If using fresh chicken, you can cook it at this time. Add the tomatillos, 1 whole poblano pepper, garlic, and quartered onions on a baking sheet and bake for 8-10 minutes turning halfway through. Remove the tray from the oven and immediately cover with a sheet of foil. This will allow the peels to loosen. Remove the peel from the garlic, poblano (remove the ribs and seeds), and tomatillos. Place the veggies into a food processor along with the cilantro, unroasted poblano (deseeded and ribbed), and baby spinach (if using) and blend until it breaks down into a sauce. Add the sour cream and chicken broth and continue to pulse until almost smooth, you can also add 1/4 teaspoon of cumin and season with salt and pepper to taste if desired.
- CHICKEN: Bring a large pot of water to boil with a pinch of salt. Add the chicken to the pot, remove from heat and cover. Let cook for 25-35 minutes or until the chicken is poached and completely cooked through. Shred the chicken, set aside.
- PIE: Cut the tortillas down the center. Preheat the oven to 375ºF. Place 4 pieces of the tortillas in a 9x9 baking dish. Don't worry if there's a little bit of space between the tortillas, that's okay. Add a layer of the chicken followed by 1/3 of the sauce and 1/3 of the cheese. Repeat the layers again. The final layer will have tortillas, then the sauce and finally the cheese.
- BAKE: Bake the enchilada pie for 20-25 minutes or until the cheese melts. Sprinkle with cilantro and cotija cheese and serve with the lime wedges.
