- Rinse livers, pat dry and place in a resealable plastic bag. In a small bowl mix the flour, garlic powder, salt and pepper and add mixture to chicken livers. Seal bag and shake bag to coat. Set aside.
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon, leaving bacon fat in skillet, and set aside.
- Cook coated chicken livers in bacon fat covered over medium high heat until almost done, about 17 to 20 minutes. Add bacon strips and cook together until chicken is cooked through and juices run clear.

- Preheat oven to broil setting.
- Cut each slice of bacon in half and wrap around each chicken liver, securing with toothpicks.
- Broil until bacon is cooked and crisp on one side, then turn and repeat (about 6 to 8 minutes each side). Serve with honey in a bowl, for dipping.

- 1. Mix flour, garlic salt, black pepper. Dredge the chicken livers in the flour until well coated.
- 2. Heat 1 inch of oil in a skillet. Fry the coated chicken livers for 4 minutes per side. Remove to a plate with paper towel on it to drain.
- 3. In another skillet use tablespoon of leftover bacon grease to fry the onions in at the same time the livers are cooking. Top the finished livers with the bacon strips and onion slices.

- 1. Heat oven to 350*. Spray sheet pan with non-stick cooking spray or cover with parchment paper
- 2. Drain and rinse chicken livers. Cut larger pieces into smaller pieces
- 3. Place livers in a bowl, add spices, mix lightly to coat with spices
- 4. Cut bacon in half
- 5. Wrap one half of bacon around each liver, place on prepared pan. Lightly dust with garlic powder and black pepper. You do not need much salt for this dish!
- 6. Cook for 15min and check them. Livers will be done when they are browned and bacon is browned and crispy. Takes about 45min altogether.
- 7. Serve with a smokey BBQ or a rustic dijon style mustard.

- Cut bacon strips in half.
- Wash and pat dry livers.
- Sprinkle livers with garlic salt if using.
- Wrap each liver in a halved slice of bacon and secure witha toothpick.

- Preheat the oven to 375 degrees F (190 degrees C).
- Mix brown sugar, paprika, garlic powder, pepper, salt, and onion powder together in a small bowl. Rub 1/2 of the spice mix over chicken breasts.
- Wrap each breast with 2 to 4 slices of bacon, depending on size. Place in a baking dish and sprinkle remaining spice mix over top.
- Bake in the preheated oven until bacon is crispy and chicken is no longer pink in the center and the juices run clear, 25 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Serve topped with parsley.

TENDER BAKED CHICKEN LIVER RUMAKI
This version of these popular little hors d'oeuvres was shared with me by Chef Claude of the Pinetop Country Club chef, here in Arizona. He bakes his rumaki which leaves them still soft and moist when fully cooked rather than a hard, dry lump. My husband and I love this version and can make a meal of them! Since these marinate, you must start them early. Marinating time is not included in the preparation time.

- Wash and trim chicken livers; cut each in half. Cut bacon strips in half and precook strips halfway. This is important since otherwise they would not finish cooking in a timely manner when baked. Be sure not to cook the bacon till it is crispy or it will not wrap around the livers properly.
- Wrap one bacon strip around each liver half. Some people also include a water chestnut half with the liver, but I do not.
- Fasten bacon around liver with a toothpick.
- In a bowl or large plastic storage bag, combine the soy sauce, brown sugar and bourbon, if used. Add the prepared rumaki and cover the bowl or seal the bag. Allow to marinate for 6 to 8 hours or two hours at the least. Drain well.
- Arrange rumaki on a baking sheet with sides. Bake in a preheated 325 degree oven for 1/2 hour or until cooked as desired.

BBQ CHICKEN LIVERS... ALA THE DEEN BROTHERS
No, Paula's boys did not EVER claim making such a dish! However, they did do BBQ Chicken with an original BBQ sauce that is soooooooo good that I keep some made and on hand for both chicken and pork (chops). The sauce is a sweet tomato-based sauce which has just a slight heat that can be made more intense by increasing the mustard powder and/or cayenne pepper. I've done bbq-d chicken in the oven several times since having this BBQ Chicken at friends' home about a year ago. The last time I started with 2 whole chickens (cut into pieces myself) that had extra servings of livers in the cavities. I nestled the livers in one corner of the baking pan and covered them with the BBQ sauce just as the rest of the chicken... and baked the chicken as instructed. The livers were so good that I had to do the recipe again as a LIVERS ONLY version! WOW... unbelievably delicious! But then I love chicken livers (infrequently because of health issues about colesterol, fat, etc.).

- Preheat oven to 350 degrees F.
- Spray an 8x8 baking pan with non-stick spray.
- Rinse, drain, and dry the chicken livers on paper towels. (Season to taste if desired, I use a little seasoning salt & no pepper.).
- In a large bowl stir together all the bbq sauce ingredients.
- Reserve 1/2 cup of the barbecue sauce and set aside for later; use 1/4 cup later for basting & 1/4 cup as a side sauce when livers are served (if desired).
- Place the chicken livers into the bbq sauce remaining in the bowl, tossing to coat.
- Arrange the coated chicken livers in the sprayed 8x8 baking pan & cover with foil.
- Cook (covered), for 40 to 45 minutes or until cooked through, basting with the reserved 1/4 cup sauce after 20 minutes. **For oven roasting, cook uncovered for the last 15 minutes.
- **Instead of oven roasting, these livers can be barbequed on a grill using a foil-covered foil pan that is sprayed with non-stick spray. Place in a medium heat area on the grill. Cooking time may vary from oven method.
- Note: This recipe can be made "savory" with the addition of herbs of your choice -- or herb blends -- it never hurts to experiment.
