1 package (6 ounces) chow mein noodles, divided
2 cups cubed cooked chicken
4 celery ribs, chopped
1 large onion, chopped
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1 cup milk
1 can (8 ounces) sliced water chestnuts, undrained
1 jar (4-1/2 ounces) sliced mushrooms, undrained
1/2 cup cashews

Steps:

  • Sprinkle half of the chow mein noodles into a greased 13-in. x 9-in. baking dish. In a bowl, combine the chicken, celery, onion, soups, milk, water chestnuts, mushrooms and cashews. Spoon over the noodles; top with remaining noodles. Bake, uncovered, at 325° for 35-40 minutes or until heated through.

300 g Egg Noodles (10½ oz)
300 g Chicken Breast (Two Pieces )
1 Carrot
50 g Beans Sprout (Big Handful)
50 g Shredded Cabbage (Big Handful)
2 Garlic Cloves
4 Spring Onions
9 tbsp Vegetable Oil (See notes)
1 tbsp Garlic Paste
1 tbsp Ginger Paste
1 tbsp Soy Sauce
1 tsp Black Pepper
2 tsp Bicarbonate Of Soda (Baking Soda)
1 tsp Salt
2 tbsp Oyster Sauce
2 tbsp Soy Sauce
2 tbsp Vinegar
1 tbsp Brown Sugar
1 tbsp Sesame Oil
1 tbsp Chilli Sauce
½ tsp Salt

Steps:

  • Cut the chicken breast into long strips and place in a mixing bowl. Add the marinade ingredients: garlic paste, ginger paste, black pepper, bicarbonate of soda (baking soda), salt and dark soy sauce into the mixing bowl. Mix until evenly distributed and the chicken is fully coated in the marinade. Set the chicken aside for later use.
  • Chop your vegetables (carrot, cabbage, garlic and spring onions) for later use.
  • Make the chow mein sauce by mixing together oyster sauce, soy sauce, vinegar, brown sugar, sesame oil, chilli sauce and salt in a small bowl.
  • Heat the wok or frying pan on a medium to high heat and add oil. When hot, add the chicken breast and stir fry for 2 to 3 minutes or until cooked and remove from the wok.
  • Add oil to a clean wok or frying pan, stir fry the bean sprouts, shredded cabbage and carrots in the frying pan for 1 to 2 minutes or until softened and keep aside for later use.
  • Add oil to a clean wok or frying pan, stir fry the spring onions for 1 minute before adding the garlic and stir for an extra 1 minute. Then add the egg noodles inside and stir for 1 to 2 minutes.
  • Add the cooked chicken and mix together, then add the chow mein sauce and mix until the sauce is evenly distributed. Finally, add the cooked vegetables, mix well and serve.

Chicken chow mein is so much better than takeout! It is filled with chicken, veggies, classic chow mein noodles and the best homemade chow mein sauce. You will love this one pan dinner!

1 lb chicken breast (boneless, skinless)
3 tbsp oil
12 oz chow mein noodles ((uncooked noodles))
2 cups cabbage
1 large carrot (julienned)
1/2 batch green onions
2 garlic cloves
6 tbsp oyster sauce
3 tbsp low sodium soy sauce
3 tbsp light sesame oil ((not toasted))
1/2 cup chicken broth
1 tbsp cornstarch
1 tbsp granulated sugar

Steps:

  • In a small mixing bowl, use a whisk to combine oyster sauce, granulated sugar, sesame oil, soy sauce, chicken broth and cornstarch. Set aside.
  • Cook your noodles according to package instructions then drain, rinse with cold water and set aside.
  • Heat a large wok or pan with olive oil over medium-heat. Cut your chicken breasts into bite-sized strips and cook them in the oil until golden brown. Remove strips and set aside.
  • Add carrots, cabbage and pressed garlic and saute for a few minutes until veggies are slightly softened and the cabbage is a bit translucent.
  • Add chicken and noodles back into the pan. Pour sauce over the top and continue cooking all the ingredients together for another 2 minutes.
  • Garnish your chow mein with chopped green onions and serve the noodles straight from the pan and piping hot!

This simple casserole version of chicken chow mein makes great use of leftover chicken or turkey and is easy on the budget and your time. I don't measure or weigh the amount of chicken I use but the original recipe calls for 3 pounds so I've left the recipe that way. I just use whatever I have left over, or I'll stew a few chicken breasts or pieces if I'm starting from scratch. If you've got 2-3 cups of chicken you'll be in good shape. For a little extra kick add some red pepper flakes. You can easily cut this recipe in half for a smaller family.

1 (12 ounce) can chow mein noodles (the crunchy kind)
2 cups celery, chopped
1 cup onion, chopped
1/4 cup green pepper, chopped
3 lbs cooked chicken, cut up
2 (11 ounce) cans cream of mushroom soup
1 (11 ounce) can water
1 tablespoon soy sauce (I prefer Kikkoman's Lite)

Steps:

  • Preheat oven to 350 degrees F.
  • In bottom of 9x13 casserole dish, put a layer of chow mein noodles followed by chicken and vegetables. Top with remaining noodles.
  • Mix soup with 1 can of water. Spoon soup mixture over vegetables.
  • Drizzle soy sauce over all.
  • Bake at 350°F for 30-40 minutes.
  • Enjoy!

I got this recipe from a co-worker. It's one of her daughter's favorite meals. We liked the combination of chow mein noodles and cashews. It's a good week night dinner or a way to use up leftover chicken. I have also started adding a can of sliced water chestnuts.

2 cups diced cooked chicken
1/4 cup chopped onion
1 cup finely slivered celery
1 tablespoon butter
1 (10 3/4 ounce) can cream of mushroom soup
1/3 cup chicken broth
1 tablespoon soy sauce
3 drops hot pepper sauce
1/8 teaspoon pepper
1 cup chow mein noodles
1/3 cup cashews

Steps:

  • Saute onion and celery in butter.
  • Add soup, broth, soy sauce, hot pepper sauce and pepper. Stir in chicken and simmer 5 minutes.
  • Pour into a 1 qt casserole dish and top with chow mein noodles and cashews.
  • Bake at 350 for 20 minutes.
