BAKED CHICKEN BRUSCHETTA

Steps:
- Take out your Chicken Breast, trim the fat off of them, and cut them in half
- In a bowl, add in and mix together your Eggs and Olive Oil
- In another bowl or dish add in your dry ingredients
- Mix your dry ingredients together
- Dunk your Chicken Breast pieces in your Egg mix and put them in a baking dish
- Pour your dry mix on top
- Flip your pieces around a few times
- Sprinkle your Cheese over the top
- Spoon your Salsa on
- Sprinkle on 1 Teaspoon of Italian Seasoning
- Bake on 400F/204C for 30-35 minutes

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x13-inch glass baking dish with cooking spray.
- Toss the cubed chicken with the salt in a large bowl. Place the chicken in a layer into the bottom of the baking dish. Stir together tomatoes, water, garlic, and stuffing mix in a large bowl; set aside to soften. Sprinkle the cheese on top of the chicken, then sprinkle with the Italian seasoning. Spread the softened stuffing mixture on top.
- Bake uncovered until the chicken cubes have turned white and are no longer pink in the center, about 30 minutes.

- In a medium mixing bowl, combine the fresh tomatoes, minced garlic, diced red onion, balsamic vinegar, olive oil, basil, and salt. Mix until combined. Set aside.
- Preheat the oven to 425 degrees F. Spray a 13×9 inch baking pan with nonstick spray.
- Season both sides of the chicken breasts with zesty Italian seasoning. Place chicken in the baking pan.
- Bake chicken in the oven for 25-30 minutes, or until chicken is done (reaches 165 degrees when tested with a meat thermometer).
- Remove chicken from the oven. On top of the chicken breasts add the shredded cheese. Top each chicken breast with one-fourth of the bruschetta mixture. Place chicken back in the oven for 5 minutes, or until cheese is melted.
- Remove the baking dish from the oven and serve.

- Preheat oven to 375 degrees F.
- Spray a 9x13-inch baking pan with nonstick cooking spray.
- Combine bread crumbs and Parmesan cheese in a small mixing bowl.
- Place flour and eggs in their own separate bowls.
- Dip the chicken breast in the flour, then in the eggs, and then in the bread crumb/cheese mixture.
- Place chicken breast in prepared baking pan and then repeat with the remaining chicken breasts. Pour melted butter on top of the chicken.
- Bake for 30 minutes or until the inside is no longer pink and reaches 165 degrees F.
- While the chicken bakes, mix tomatoes, garlic, oil, cheese, basil, balsamic vinegar, salt and pepper. Let it sit for about 15 minutes so that the flavors can meld together.
- When chicken is finished cooking, spoon some of the fresh tomato mixture on each chicken breast and serve.
