3 skinless, boneless chicken breast halves, cubed
salt and ground black pepper to taste
4 garlic cloves, minced
2 ½ cups chicken broth
2 ½ cups heavy whipping cream
1 (16 ounce) package penne pasta
2 cups grated Parmesan cheese
2 cups shredded mozzarella cheese

Steps:

  • Heat oil in a skillet over medium heat. Add chicken, salt, and pepper; cook and stir until golden brown, about 5 minutes. Add garlic; cook until fragrant, about 2 minutes. Add broth and heavy cream; stir in pasta and bring to a boil. Reduce heat and simmer until pasta is tender, about 15 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Grease an 11x17-inch baking pan.
  • Pour 1/2 the pasta mixture into the prepared pan. Sprinkle 1/2 the Parmesan cheese and 1/2 the mozzarella cheese over the pasta. Layer remaining pasta on top; finish with remaining Parmesan and mozzarella cheeses.
  • Broil in the preheated oven until cheese is golden brown, 10 to 15 minutes.

4 boneless, skinless chicken breast halves
1 (12 ounce) package farfalle (bow tie) pasta
1 (14 ounce) can chicken broth
1 head broccoli, cut into florets
1 medium red bell pepper, thinly sliced
2 cloves garlic, minced
salt and pepper to taste
2 (8 ounce) containers chive and onion cream cheese
¼ cup freshly grated Parmesan cheese

Steps:

  • Place chicken in a saucepan, and add water to cover. Boil 20 minutes. Allow to cool, then pull meat into shreds.
  • Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes, or until al dente; drain.
  • In a large skillet over medium-high heat, combine chicken broth, red pepper, garlic, broccoli, salt and pepper. Cover, and simmer for 8 to 10 minutes, until broccoli is crisp-tender. Stir in cream cheese until smooth. Mix in chicken and pasta until evenly coated. Garnish with Parmesan cheese.

Coarse salt and ground pepper
3/4 pound bowtie pasta
1 pound chicken tenders, white tendons removed, halved lengthwise and again crosswise
2 tablespoons butter
1 pound small white button mushrooms, stems trimmed, halved
1/2 cup dry white wine
1/2 cup heavy cream
1/2 cup chopped fresh parsley

Steps:

  • In a large pot of boiling salted water, cook pasta until al dente, according to package instructions. Reserve 1/4 cup pasta water; drain pasta, and return to pot.
  • Meanwhile, season chicken generously with salt and pepper. In a large skillet, melt butter over medium-high heat. Add chicken; cook, turning once, until cooked through, about 5 minutes. Transfer to a plate.
  • Add mushrooms to pan; season with salt and pepper. Cover; cook over medium heat until mushrooms release their liquid, about 5 minutes. Uncover; cook, stirring, until liquid has evaporated, 3 to 5 minutes more. Add wine; cook, stirring, until evaporated, 2 to 3 minutes.
  • Reduce heat to low. Add cream and chicken; stir to coat. Transfer to pot with pasta; add parsley and pasta water (if desired). Toss to combine. Season again with salt and pepper; serve immediately.

I did a whole bunch of cooking yesterday, and boy are my skillets tired! But seriously, it was one of those days.

12 oz. weight Bowtie Pasta (farfalle)
4 tbsp. Butter
2 whole Boneless, Skinless Chicken Breasts
Salt And Pepper, to taste
2 cloves Garlic, Minced
3/4 c. Dry White Wine (may Substitute Low-sodium Chicken Broth)
1/2 c. Half-and-half
3 tbsp. Heavy Cream
Low Sodium Chicken Broth, As Needed For Thinning
3/4 c. Parmesan Shavings Or Grated Parmesan
2 tbsp. Fresh Parsley, Minced

Steps:

  • Cook pasta according to package directions. Drain and set aside. Salt and pepper both sides of the chicken breasts. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add chicken breasts and cook until deep golden brown on both sides and done in the middle. Remove from the skillet, slice into thin strips, and set aside.Add additional 2 tablespoons of butter to the skillet, followed by the minced garlic. Stir the garlic around the pan to avoid burning, and cook for 1 minute. Pour in wine (or broth), then let it bubble up and reduce for 1 1/2 to 2 minutes. Add half-and-half, cream, and extra salt and pepper, whisking constantly until it's all combined. Allow liquid to heat up and thicken for a few minutes. If it gets too thick, you may thin it with a little chicken broth. When the sauce looks good, remove it from the heat. Add Parmesan to the pan, then throw the hot pasta right on top of it. Toss it a bit. Add the chicken and continue tossing until it's all combined. Again, if it gets too gloopy, splash in a little broth (you may return the pan to low heat if it needs it.)Taste it, adjust seasonings, and top with minced parsley and extra Parmesan. Serve immediately!

Cheesy Chicken and Bow Tie Pasta...a simple, totally yummy weeknight dinner! Everybody needs some comfort food now and again, and this pasta dish is just that. This chicken and pasta recipe is such a quick and easy meal!

8 oz bow tie pasta
2 chicken bouillon cubes
1/4 cup chicken stock, plus 2/3 cup reserved
1 Tbsp butter
1 small onion, diced
2 small celery ribs, diced
1 tsp minced garlic
4 cups cubed cooked chicken (or 1 Rotisserie chicken, meat shredded)
8 oz diced Velveeta
1 (10.75 oz) can cream of chicken soup
1/4 cup heavy cream
salt and pepper to taste
parsley for garnish (optional)

Steps:

  • In a Dutch oven bring 2 quarts water and 2 chicken bouillon cubes to a boil. Once boiling, cook pasta according to package directions.
  • While water is boiling heat 1/4 cup chicken stock and 1 Tablespoon butter in deep sided skillet. Add in diced onion and celery and cook until soft. Add in minced garlic and cook another 2 minutes. Liquid will be evaporated at this point. Next add in chicken, Velveeta, Cream of Chicken soup, heavy cream and remaining 2/3 chicken stock. Cook until cheese has melted, stirring occasionally. Salt and pepper to taste.
  • When pasta is done cooking, drain and add back to the pot. Pour cheese and chicken sauce over pasta and stir to combine.
  • Garnish with fresh parsley. Serve immediately.

1 (2.25 ounce) can sliced olives (drained)
1 (16 ounce) bottle Italian dressing
1 cup grated Parmesan cheese

Steps:

  • Cook pasta as directed on package, adding broccoli to the cooking water for the last 2 minutes; drain.
  • Toss chicken pieces, tomatoes, pepper, cheese, olives and dressing together in a large bowl.
  • Add pasta and broccoli, toss lightly.
  • Sprinkle with Parmesan cheese and serve.

  • Cook pasta according to package directions. Meanwhile, drain tomatoes, reserving 1-1/4 cups juice; set aside., In a large saucepan, melt butter over medium heat. Rasta pasta is creamy pasta tossed with Caribbean style jerk chicken and sauteed bell peppers. This dish is so full of flavor, and makes a great weeknight dinner that can be made in just half an hour! It's creamy, rich, spicy, and cheesy.

1 pound (450 grams) pasta
2 chicken breasts (or 2 cups of shredded rotisserie chicken)
2 tablespoons vegetable oil (1 tbsp for frying chicken and 1 tbsp for sauteeing bell peppers)
3 tablespoons jerk seasoning (1.5 tbsp with the chicken, and 1.5 tbsp goes in the sauce)
3 bell peppers (preferably in different colors - sliced)
½ cup green onions (sliced)
2 cloves garlic (minced)
¼ cup (60 ml) vegetable or chicken stock
½ cup (120 ml) heavy cream
½ cup (80 grams) parmesan cheese (grated)

Steps:

  • Cook pasta according to the package instructions, take it out at "al dente" as you will cook it more in the next steps.
  • I'm using rotisserie chicken in this recipe, but if you are using raw chicken breast then cube it, toss in jerk seasoning and cook until it's golden and cooked through. Then remove from the pot, and set aside to add later.
  • Add vegetable oil to a heavy bottomed pot, and saute bell peppers with green onions. Add the minced garlic and cook until it's fragrant.
  • Add jerk seasoning to the pot.
  • Add heavy cream, chicken and vegetable stock to the pot. Simmer for a few minutes or until the sauce thickens, mix in the parmesan in the sauce and then mix in the pasta.
  • Garnish with chopped chives, green onions or parsley and serve.

1 can(s) 13oz.cambells chedder cheese soup
4 frozen grilled chicken breasts (cook to pkg. directions)
1/4 tsp garlic powder
1 pkg 15oz. shredded 5 pizza cheese

Steps:

  • 1. Cook pasata noodles until they are aldente then drain. Mix cooked pasta with cheese soup and cooked grilled chicken (I purchase the sam's frozen precooked grilled chicken breasts or grill your own)
  • 2. Before I add the grilled chicken I chop it up, then add it to the pasta mixture.
  • 3. Then mix in the garlic powder and the pkg. of pizza cheese. Blend gently and put mixture into 13x9 baking dish. Bake at 350 for 20 minutes covered with foil. Then remove foil and cook 10 more minutes.
