OVERNIGHT FRENCH TOAST



Overnight French Toast image

If you have a crowd for breakfast, overnight French toast is a winning idea. Instead of standing over the stove, cooking slice after slice, it bakes in the oven and emerges puffed and golden and ready for a big glug of maple syrup. Try making it with a stale loaf that you forgot to eat amid all the other holiday goodies. A fat brioche, fruit-filled panettone or a braided challah all work well. Stay away from croissants, though: Their chewy interiors are best enjoyed fresh.

2 tablespoons unsalted butter, softened, plus more for baking dish
1 pound enriched bread, such as brioche, challah or panettone sliced 3/4-inch thick
1/4 cup golden raisins (optional)
6 large eggs
2 1/2 cups whole milk
1/2 cup heavy cream
1/3 cup light brown sugar
1/2 teaspoon ground cinnamon
Pinch of freshly ground nutmeg
1/2 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1/3 cup pecans, chopped (optional)
Confectioners' sugar for dusting (optional)
Maple syrup, for serving

Steps:

  • Butter a 2-quart baking dish. Butter the front sides of the slices of bread and shingle the slices upright in the dish, overlapping as necessary. Nestle the raisins evenly between the slices of bread but not on top.
  • In a large bowl, whisk together eggs, milk, cream, sugar, cinnamon, nutmeg, vanilla and salt until well combined. Pour the milk mixture over the bread and press the bread gently to absorb. Cover with plastic wrap and refrigerate overnight.
  • Heat oven to 350 degrees. Remove the plastic wrap. Sprinkle the pecans evenly over the top. Bake until puffed, golden and set in the center, 50 to 60 minutes. While baking, if the top begins to get too dark, tent with foil. Let stand 10 minutes. Dust with confectioners' sugar and serve with maple syrup.

8 eggs (beaten)
1 cup half-and-half
1 tsp vanilla extract
1 1/2 tsp ground cinnamon
1/4 tsp fine sea salt
1 loaf challah bread (torn into large pieces (approx. 5-6 cups))
1/2 cup unsalted butter
1 cup brown sugar (firmly packed)

Steps:

  • Combine eggs, half and half, vanilla, cinnamon and salt in large mixing bowl. Add challah bread pieces, gently stirring to coat bread with egg mixture. Pour into a lightly greased 10" square pan and set aside.
  • Melt butter and brown sugar in a small sauce pan over medium heat until combined with a smooth texture, about 5-7 minutes. Pour evenly over bread then wrap tightly with plastic wrap and place in refrigerator overnight.
  • Remove casserole from refrigerator, uncover and allow to rest for about 10 minutes.
  • Preheat oven to 350 degrees then bake for about 30-35 minutes until eggs are set and it's hot and bubbly (place aluminum foil on top if bread browns to quickly). Enjoy!

16 ounce challah bread loaf
6 eggs (large)
2 cups whole milk
3/4 cup heavy cream
1/4 cup sugar
1/2 cup brown sugar
1/2 teaspoon kosher salt
1 tablespoon vanilla
1/2 teaspoon nutmeg
2 teaspoons cinnamon
1/2 cup flour
1/2 Cup Cold butter
1/2 cup brown sugar (packed)
2 tsp cinnamon
1/2 teaspoon salt
syrup for drizzling

Steps:

  • Start by cutting or tearing your bread into bite sized pieces and laying them out on a baking pan. Toast your bread for 10 - 15 minutes at 225 degrees until your bread is crusty.
  • Remove bread and move to a 9 x 13 baking pan sprayed with non-stick spray. In a large mixing bowl, whisk together eggs, milk, heavy cream, sugar, brown sugar, vanilla, nutmeg, salt and cinnamon and then pour evenly over your Overnight Challah French Toast Casserole bread. Lightly push bread down to make sure all the pieces have been covered with the egg mixture. Cover pan with foil and move the refrigerator for at least 2 hours or overnight.
  • When ready, mix together flour, cinnamon, brown sugar, salt and cold butter in a mixing bowl. Remove Overnight Challah French Toast Casserole from the refrigerator and sprinkle flour mixture evenly over the top. Return the foil to the top of the casserole and bake in the oven for 25 minutes at 350 degree.
  • After 25 minutes, remove the foil and continue to bake for another 20 - 25 minutes. When done, remove from oven, drizzle with syrup and serve immediately.

1 Challah bread (cut into one inch cubes)
12 ounces fresh blueberries or 2 cups frozen blueberries (thawed)
1 8- ounce package cream cheese (cut into 16 cubes)
8 eggs
2 cups milk
1/2 cup heavy cream
3/4 cup sugar
2 tablespoons vanilla
1/2 cup flour
1/2 cup packed light brown sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 stick (8 tablespoons cold butter)

Steps:

  • Spray an 9 X 13-inch baking dish with cooking spray.
  • Place half of the bread cubes into the prepared baking dish and evenly distribute half of the blueberries and half of the cream cheese cubes.
  • Place the remaining bread cubes on top along with the remaining blueberries and cream cheese.
  • In a medium bowl, whisk together eggs, milk, cream, sugar and vanilla.
  • Evenly pour mixture over the bread and blueberries.
  • Cover with plastic wrap and place into refrigerator to sit overnight.
  • In a medium bowl, combine flour, brown sugar, and cinnamon. Mix thoroughly.
  • Cut butter into small pieces and with a pastry cutter or two forks, blend butter into mixture until it resembles coarse meal.
  • Place mixture into a plastic bag. Seal and refrigerate overnight. This step can also be done in the morning before placing baking dish into the oven.
  • When ready to bake the next morning...
  • Preheat oven to 350 degrees F.
  • Uncover the baking dish and sprinkle the butter mixture evenly around the top.
  • Bake uncovered for 45 - 55 minutes. 45 minutes will give you a softer, slightly unfinished middle whereas 55 minutes will be firmer.

1 teaspoon ground cinnamon
1/8 teaspoon ground cardamom
1/8 teaspoon ground nutmeg
1 cup whole milk
2/3 cup part-skim or whole-milk ricotta
1 1/2 teaspoons vanilla
1/2 teaspoon kosher salt
6 large eggs
1 lemon, zested and juiced
4 tablespoons unsalted butter, melted
12 thick-sliced (3/4- to 1-inch) day-old challah bread slices
1 cup frozen blueberries
Powdered sugar, for serving

Steps:

  • Combine the brown sugar, cinnamon, cardamom and nutmeg in a small bowl and mix to combine. Set aside. In a large bowl, add the milk, ricotta, vanilla, salt, eggs and lemon zest. Whisk to combine and set aside. Pour the melted butter in a 9-by-13-inch casserole dish. Dip each slice of bread lightly in the egg mixture and shingle the bread in the casserole dish, sprinkling a large pinch of the sugar mixture on each layer. Pour the remaining egg mixture on top of the bread and then pour the remaining sugar mixture on top. Cover with aluminum foil and refrigerate for at least 6 hours and up to overnight.
  • Preheat the oven to 375 degrees F. Bake the casserole for 30 minutes. Uncover and bake until the custard is set and the bread is golden brown, an additional 15 minutes.
  • Meanwhile, add the blueberries and lemon juice to a small saucepot. Cook over medium heat until the berries burst and thicken and the sauce begins to bubble, about 15 minutes.
  • When ready to serve, spoon the blueberries over the center of the casserole and sprinkle with powdered sugar.

  • Whisk eggs in a bowl until fluffy, then add milk. Whisk in sugar, cinnamon, and vanilla extract and transfer mixture to a shallow bowl.
  • Soak challah slices in the bowl in batches for 3 minutes on each side.
  • Melt butter in a skillet over medium heat. Cook challah slices in batches until browned, about 3 minutes. Turn and continue to brown on the other side, about 2 more minutes. Add more butter if necessary.
