BAKED CAULIFLOWER
This recipe caught my eye when it was posted in our local newspaper. We love cauliflower, but get bored with the usual "steamed with plastic cheese sauce" version I usually make out of laziness! This is delicious and easy to make. Also, we actually ate the leftovers the next day - unheard of with our usual version! (Note...I used more cheese than the recipe called for, just because we love cheese.)

Steps:
- Preheat the oven to 350 degrees. Brush the sides and bottom of a 9" square baking dish (you may have to use a larger dish if your cauliflower was huge) with the butter.
- Clean and separate the cauliflower into bite-size florets. Bring a large pot of water to a boil and add a bit of salt. Toss in the cauliflower and cook until just tender, about 5 minutes, depending on how small you cut the cauliflower. Drain well, cool in very cold water, and then drain well again.
- Place the milk, flour, paprika, cayenne, and nutmeg in a small pot and whisk to combine. Set over medium heat and bring to gentle simmer, whisking frequently. When the sauce has thickened, whisk in the cheddar cheese and season to taste with salt and white pepper.
- Arrange the cauliflower in the buttered baking dish and pour the cheese sauce over the cauliflower. Sprinkle with the fresh parmesan cheese.
- Cover with foil and bake for 15 to 20 minutes. Test the cauliflower to see if it is done to your liking. If not, bake 5 to 10 minutes longer. Once done, remove the foil and bake a further 10 minutes. or until golden and bubbly.

- In a stainless steel vegetable steamer, steam the cauliflower for about 15 minutes, until tender.
- When the vegetable is tender, remove it from the steamer, and place it in a casserole, with a cover, just large enough to hold the head. Pour the egg over the top of the cauliflower, add salt and pepper, and top with the cheese.
- Bake, covered at 375 degrees for 10 minutes, or until the cheese has melted and the egg is cooked.

Steps:
- In a large skillet, saute onion and garlic in 2 tablespoons butter and oil until onion is tender.
- Add the cauliflower, salt, pepper, and saute for 2 minutes.
- Transfer to a greased 1-qt. baking dish.
- Melt remaining butter and toss with bread crumbs.
- Sprinkle over cauliflower mixture.
- Cover and bake at 350° for 15 minutes.
- Uncover and bake for 10 minutes or until heated through.
- Sprinkle with cheese and bake 3-5 minutes longer or until cheese is melted.

BAKED CAULIFLOWER WITH BECHAMEL SAUCE
Tasty dish you can enjoy with family or as a party dish. It looks like a lot, but is fast and easy! Serve with rice.

- Parboil cauliflower in water and salt for 4 minutes. Drain and let stand.
- Sauté onion in 1 tbsp oil until glassy.
- Then add ground beef, salt, pepper, and nutmeg. Cook on medium flame stirring occasionally till cooked, let stand.
- Sauce:.
- Melt butter and oil over low flame. Remove from flame and stir in the flour, blending thoroughly. Return to flame, and as the mixture starts to bubble, move to side of flame and add 1/3 cup of milk very gradually, stirring constantly to prevent lumps. Return to low flame and cook, stirring and increasing the sauce in small doses with stock, the remaining milk, and seasoning until it reaches the desired thickness (should me creamy thick). Remove from stove and quickly add the egg.
- Mix 1/4 of sauces with cauliflower then in a small greased baking dish arrange half of the cauliflower. Add a layer of the meat, then the second half of the cauliflower. Top with the remaining sauce and bake for 30 minutes or when top is golden at 350°F.

CREAMY BAKED CAULIFLOWER
This recipe was printed on the back of a packet of Continental cream of chicken soup. I have type the recipe as per the packet but when I first made the recipe I substituted half the cauliflower with other veges like asparagus and carrot. There is nothing stopping you from using any veggie you wish. Hubby thought it was a recipezaar recipe and rated it five!

- Place soup mix, milk and water into a saucepan and stir until boiling.
- Pour over cauliflower.
- Sprinkle with combined breadcrumbs and cheese.

- Separate cauliflower into flowerets (small pieces).
- Cook till barely tender about 5 minute.
- Drain very well.
- Treat an 8" x8" baking dish with cooking spray.
- Spread a layer of cauliflower in dish nestle about half the ham in all the nooks & crannies.
- Sprinkle lightly with salt & pepper, and 1/2 the parmesan cheese.
- Repeat layer.
- Mix egg, sour cream, onion & tomato paste.
- Pour over the top.
- Mix melted butter with crumbs and spread over the top.
- Bake at 350F for 20 -30 min until golden.
