1/2 cup all-purpose flour
1/2 cup egg substitute or 2 large eggs, beaten
4 boneless skinless chicken breast halves (4 ounces each)
1/4 cup grated Parmesan cheese
1/4 cup dry bread crumbs
1 tablespoon butter, melted
2 large tomatoes, seeded and chopped
3 tablespoons minced fresh basil
1 tablespoon olive oil
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375°. Place flour and egg substitute in separate shallow bowls. Dip chicken in flour, then in egg substitute; place in a greased 13x9-in. baking dish. In a small bowl, mix cheese, bread crumbs and butter; sprinkle over chicken. , Loosely cover baking dish with foil. Bake 20 minutes. Uncover; bake 5-10 minutes longer or until a thermometer reads 165°., Meanwhile, in a small bowl, toss tomatoes with the remaining ingredients. Spoon over chicken; bake 3-5 minutes or until tomato mixture is heated through.

1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1/2 cup water
2 cloves garlic, minced
1-1/2 lb. boneless skinless chicken breasts, cut into bite-size pieces
1 tsp. dried basil leaves
1 cup KRAFT 2% Milk Shredded Mozzarella Cheese

Steps:

  • Heat oven to 400ºF.
  • Mix tomatoes, stuffing mix, water and garlic just until stuffing mix is moistened.
  • Place chicken in 3-qt. casserole sprayed with cooking spray; sprinkle with basil and cheese.
  • Top with stuffing mixture. Bake 30 min. or until chicken is done.

1 Cup Mozzarella Cheese, shredded
1 tsp Italian Seasoning, *check notes
1/2 tsp Onion Powder
Salt and Black Pepper
1/4 tsp Chili Flakes
1 Cup Tomatoes, 2-3 medium firm roma tomatoes, small diced (seeds discarded)
1 tbsp Balsamic Vinegar
1 tbsp Garlic, minced
4 tbsp Basil, chopped, more for garnish
1 tbsp Olive Oil, divided

Steps:

  • Preheat oven at 375 degrees Fahrenheit. Spay a rimmed baking sheet or a rectangular casserole baking dish with cooking spray.
  • Mix brushcetta ingredients in a bowl with 1/2 tbsp oil, 1/4 tsp salt and 1/4 tsp black pepper. Set aside.
  • Slice chicken breast lengthwise to yield two pieces per slice. Pat dry. Place in rimmed baking dish or casserole in single layer. Drizzle with remaining olive oil (top only). Sprinkle generous pinch of seasoning (mix of Italian seasoning, 1/2 tsp salt, and 1/4 tsp black pepper).
  • Spoon brushcetta on top of seasoned chicken breasts.
  • Top with shredded mozzarella cheese.
  • Bake in middle rack for 22-25 minutes or until chicken registers 175 in thickest part of thigh and cheese bubbling. Once done, transfer chicken to serving plate with wide spatula. (Don't discard the liquid of pan. It is very delicious and flavorful. Use it to season rice or refrigerate to use later as chicken stock.)
  • Garnish with fresh chopped basil. Serve with pasta, drizzle of balsamic glaze (optional, recipes in notes). Enjoy!

1/3 cup dry Italian bread crumbs
1/4 cup grated Parmesan cheese
1/2 cup flour
3 eggs (lightly beaten)
6 boneless skinless chicken breasts
1 Tablespoon butter (melted)
1 1/2 cups diced tomatoes
1 teaspoon minced garlic
1 Tablespoon olive oil
2 Tablespoons grated Parmesan cheese
2 Tablespoons fresh basil leaves (finely chopped)
1 Tablespoon balsamic vinegar
Salt and pepper, to taste

Steps:

  • Preheat oven to 375 degrees F.
  • Spray a 9x13-inch baking pan with nonstick cooking spray.
  • Combine bread crumbs and Parmesan cheese in a small mixing bowl.
  • Place flour and eggs in their own separate bowls.
  • Dip the chicken breast in the flour, then in the eggs, and then in the bread crumb/cheese mixture.
  • Place chicken breast in prepared baking pan and then repeat with the remaining chicken breasts. Pour melted butter on top of the chicken.
  • Bake for 30 minutes or until the inside is no longer pink and reaches 165 degrees F.
  • While the chicken bakes, mix tomatoes, garlic, oil, cheese, basil, balsamic vinegar, salt and pepper. Let it sit for about 15 minutes so that the flavors can meld together.
  • When chicken is finished cooking, spoon some of the fresh tomato mixture on each chicken breast and serve.

1 cup uncooked orzo pasta
1 cup chicken broth
4 tablespoons butter, melted, divided
4 cloves garlic, minced
¾ teaspoon salt, divided
¼ teaspoon ground black pepper
2 cups halved cherry tomatoes
1 pound skinless, boneless chicken breast halves
1 teaspoon Italian seasoning
¼ teaspoon red pepper flakes
1 cup shredded mozzarella cheese
¼ cup fresh basil pesto
¼ cup balsamic glaze
2 tablespoons thinly sliced fresh basil or basil chiffonade

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
  • Spread orzo evenly in the prepared baking dish. Add broth, 2 tablespoons melted butter, garlic, 1/2 teaspoon salt, and pepper; stir to combine. Spread tomatoes evenly over top.
  • Place chicken breasts on a cutting board and trim any visible fat. Drizzle remaining 2 tablespoon melted butter over chicken, then sprinkle with Italian seasoning, remaining 1/4 teaspoon salt, and red pepper flakes. Place chicken over the tomatoes and cover the baking dish with foil.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  • Remove foil and sprinkle chicken with mozzarella cheese. Bake until cheese is melted, 5 to 7 minutes longer.
  • Drizzle pesto and balsamic glaze over each serving and garnish with basil.

4 chicken breasts (boneless, skinless )
2 tomatoes (diced)
1/2 cup shredded Mozzarella cheese (or more, if desired)
4-6 cloves garlic (roasted & minced (or use one whole bulb roasted garlic, if desired))
1/4 cup fresh basil (chopped (or one teaspoon dried basil))
Salt and pepper (to taste)
3/4 cup sun-dried tomato salad dressing (divided use)

Steps:

  • Place chicken in plastic bowl or ziplock bag with ½ cup sun-dried tomato salad dressing and marinate 24 to 48 hours.
  • Remove chicken and place in 9x13" glass baking dish that has been sprayed with cooking spray.
  • Pour any remaining marinade over top of the chicken.
  • Bake, uncovered, at 400° about 45 minutes. (Really large chicken breasts may need 60 minutes).
  • Meanwhile, as chicken is baking, prepare bruschetta topping: chop tomatoes and put in a small bowl.
  • Add roasted garlic, basil, salt, pepper, remaining sun-dried tomato salad dressing and mozzarella cheese.
  • Stir to combine and set aside.
  • After chicken has baked about 45-60 minutes (for large chicken breasts, it may take less time for small ones), remove from oven and turn chicken pieces over.
  • Place bruschetta carefully over each chicken breast and bake an additional 8-10 minutes, or until cheese is melted.

Steps:

  • In a separate bowl, mix the chopped tomatoes, garlic, basil, parmesan and salt and pepper together until everything is combined.
  • Heat a large oven-safe skillet over medium-high heat and add a small drizzle of olive oil. Add the chicken pieces (don't add all the liquid yet!) once the skillet and the oil is hot and brown the chicken pieces on both sides for about 4-5 minutes per side.
  • Once the chicken has browned, pour in the leftover marinade over the chicken and bake for about 20-25 minutes or until the chicken breasts reach an internal temperature of 74 degrees Celsius (165 Fahrenheit).
  • Remove the chicken from the oven and top with the cherry tomato mixture, along with a drizzle of balsamic glaze or balsamic vinegar, and some more grated parmesan cheese.
