RASPBERRY BAKED BRIE

Steps:
- Heat oven to 350°F. Unroll dough; separate crosswise into 2 sections. Press each section into 6-inch square, firmly pressing perforations to seal. Place cheese on center of 1 dough square; top with jam and raspberries.
- With small cookie or canapé cutter, cut 1 shape from each corner of remaining dough square, 1 inch from center of square; set cutouts aside. Place square on top of cheese round. Press dough evenly around cheese, folding bottom edges over top edges; press to seal completely. Place on cookie sheet.
- Brush dough with beaten egg. Arrange dough cutouts on top; brush with egg.
- Bake 25 to 30 minutes or until golden brown. Remove from cookie sheet; place on serving plate. Cool 10 minutes. Serve warm with crackers. Store in refrigerator.

Steps:
- Preheat the oven to 400 degrees.
- Open the sheet of puff pastry onto a large cutting board.
- Using a rolling pin, roll the puff pastry to a 1/4" thickness.
- Place the wheel of brie in the middle of the puff pastry.
- Add the raspberry preserves on top of the brie.
- Gently fold over the brie to cover it completely.
- Move the brie wheel to a baking sheet.
- Brush on the egg/water mixture.
- Wipe away any egg collected under the brie on the baking sheet.
- Bake for 35-40 minutes or until golden brown.
- Allow to cool for five minutes before serving.

- Preheat the oven to 375°F. Combine the egg yolk and water in a small bowl, then set aside. Slice the Brie in half (like a bagel) so you have two circles. Place the puff pastry on a nonstick or parchment paper-lined cookie sheet. Spoon out 1 tablespoon of the raspberry jam and drop it in the middle of the puff pastry. Spread the jam into a circle approximately the size of the Brie. Place one half of the Brie, rind-side down, on the jam. Spread 1 tablespoon of jam over the Brie then sprinkle the almonds and cranberries on top. Place the second half of the Brie, rind-side up on top, and spread with the remaining raspberry jam. Brush the edges of the puff pastry with the egg wash, then fold up the edges to cover the cheese. Trim any excess pastry and press to seal. Flip the covered Brie over and brush the other side with the remaining egg wash. Bake for 25 minutes, or until golden brown. Remove from the oven and let stand for 15 to 20 minutes before serving. Serve with crackers, baguette, apples, or grapes.

- Drain raspberries, reserving juice; add enough water to juice to measure 1-1/2 cups. Pour into a Dutch oven. Add raspberries and cranberries; stir in pectin. Bring to a full rolling boil over high heat, stirring constantly. Stir in sugar; return to a full rolling boil. Boil and stir 1 minute., Remove from heat; skim off foam. Ladle hot mixture into six hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

BACKED BRIE WITH WALNUTS & RASPBERRY JAM

- Preheat the oven to 300F. Take the brie cheese out for the wooden or paper container and unwrap it. With a knife, cut off only the top rind of the cheese leaving the sides and bottom rind intact. Place the cheese on a oven plate and sprinkle the walnuts all over the top of the cheese. Place the cheese in the oven and bake it at 350F for approximately 30 minutes. Take the cheese out of the oven, put the raspberry jam around the cheese and serve with your favorite cracker or thin slices of baguette. Enjoy it :))
