- Preheat oven to 375°. In a saucepan, heat butter over medium heat. Add apple, cranberries, pecans, brown sugar, cinnamon and nutmeg; cook and stir 5-7 minutes or until apple is tender., Cut Brie horizontally in half; place bottom half in a 9-in. pie plate. Top with half of the apple mixture; replace top. Top with remaining apple mixture., Bake, uncovered, 10-12 minutes or until cheese begins to melt. Serve warm with crackers.

PUFF PASTRY BAKED BRIE WITH PROSCIUTTO DI PARMA AND CRANBERRIES
A deceptively easy and (obviously) delicious puff pastry baked brie, stuffed with Prosciutto di Parma and cranberry sauce.

- Place pastry on a parchment-lined baking sheet. Spread cranberry sauce in a circle in centre of pastry. Scatter torn Prosciutto di Parma over cranberry sauce, then position the brie on top. Fold the corners of the pastry over the brie to cover it, then use the parchment paper to help you press the pastry snugly into the round shape. Freeze for 15 minutes while you preheat the oven to 400ºF.
- Just before baking, flip the brie over so the folded edges are underneath (it's easier to do this once chilled). Brush pastry all over with egg wash (or use a paper towel to dab it on). Bake for 25 minutes, or until crust is beautifully golden brown. Let stand 15 minutes at room temperature before cutting into it. The cheese will be melty and irresistible, but won't run out like hot lava.
PROSCIUTTO WRAPPED BRIE
This Prosciutto Wrapped Brie is one of the easiest dishes I've ever made, but it's bursting with flavor! Who knew that only 3 ingredients could taste so good?

- Lay four slices of prosciutto in a 5-inch pie pan.
- Put two slices going the other way.
- Cut the brie in half, spread 1 tablespoon of sugar-free preserves on the first half, then put the other half back on and spread preserves on top.
- Cover the brie with the six slices of bacon.
- Bake at 400F for 20 minutes, then broil for 2 to 3 minutes.

PHYLLO BAKED BRIE BITES WITH CRANBERRY AND PROSCIUTTO

- Start by preheating your oven to 350 degrees.
- Cut some of the rind off of your brie. Then, cube the brie into 1 inch squares and place in phyllo cups on a nonstick cookie sheet.
- Cut a slice of prosciutto and elegantly roll it and place it on top of the brie.
- If you prefer a tart appetizer, top it with a whole fresh cranberry. If you'd prefer it to be less tart, just use a half of cranberry, that's been tossed in lemon juice and sugar.
- Tuck in a bit of fresh thyme, then bake in the oven for about 13-15 minutes.
- You'll know they are done when the cheese is melty, the prosciutto starts to crisp a bit and the cranberry begins to blister.
- Finally, add a drizzle of honey to the top of your phyllo appetizer and serve!
EASY FRENCH BAKED APPLE BRIE

PROSCIUTTO AND BRIE CALZONE WITH APPLE

- For Dough: In the bowl of a standing mixer fitted with a dough hook, bloom the yeast by combining it with warm water and sugar. Stir gently to dissolve, then let stand 5 minutes until foam appears. Turn mixer on low and slowly add the flour, 1 cup at a time. Pour in 1/4 cup olive oil and add salt. When the dough starts to come together, increase the speed to medium. Stop the machine periodically to scrape the dough off the hook. Mix until the dough pulls away from the sides of the bowl, about 10 minutes.
- Turn the dough out onto a lightly floured work surface and fold over itself a few times. Form dough into a round and place in an oiled bowl, turn to coat the entire ball with oil so it doesn't form a skin. Cover with plastic wrap or damp towel and let rise in a warm place until doubled in size, about 45 minutes. Test the dough by pressing 2 fingers into it. If indents remain, the dough is adequately risen. When ready, knead the dough gently and divide in 4 balls. Sprinkle the rounds lightly with flour, cover, and let rest for 15 minutes. This will relax the dough, making it easier to stretch.
- For Calzones: Place a pizza stone in the oven and preheat to 400 degrees F. if you don't have a stone, simply grease a baking pan. Roll or spread the dough discs into 10-inch circles, leave the dough slightly thick so that the filling will not ooze out. Lay half the prosciutto, apples, Brie, and sage onto 1 side of the dough round and brush the outer edge with egg wash to help form a seal. Fold dough over to enclose the filling and form a large turnover. Roll up the edges with your fingers to close tightly and prevent leaking. Cut a few slashes in the top to allow steam to escape during baking and brush with egg wash. Repeat with remaining rounds. Sprinkle a pizza peel (or prepared baking pan) with cornmeal and carefully transfer the calzones. Bake directly on pizza stone for 25 to 30 minutes until golden brown. Let the calzones rest 10 minutes before cutting to allow the cheese to set.

- Preheat the oven to 375° and have ready an oven-safe, 2 1/2 cup-capacity brie baker, or shallow baking dish.
- Peel the apples, and cut into pieces, about a 1/2" dice. Add butter to a large skillet over medium heat. As soon as the butter has melted, add the diced apples, and stir to coat. Sauté for about 5 minutes, or until slightly softened, stirring often.
