BAKED BRIE WITH FRUIT
Prepare this simple appetizer in just 15 minutes, then grill a few minutes more. Serve with a variety of fresh fruits.

Steps:
- Cut off a thin slice from the top of the Brie to remove the rind; discard. Place round of Brie in a 6-inch cast-iron skillet or disposable foil pan. Spread top of brie with orange marmalade, leaving a 1/2-inch border.
- Place skillet or pan on the grill rack. Grill directly over low coals. Cover and grill for 8 to 10 minutes or till brie is softened and warmed. Place the almonds, hazelnuts or pecans around the border.
- Serve with fruit, French bread slices, assorted crackers and/or melba toast, if you like. Makes 8 servings.

BAKED BRIE WITH BOOZY FRUIT

- Preheat oven to 350 degrees. Toast pecans on a baking sheet until darkened slightly, 10 to 12 minutes. Grind in a food processor.
- Increase heat to 400 degrees. Unfold pastry on a lightly floured work surface. Sprinkle pecans evenly over half of pastry; fold over other half and pinch edges to seal. Cut pastry in half crosswise; pinch cut edges to seal. Roll out one half to an 8-inch square.
- Brush 1 tablespoon Dijon on one side of Brie. Place in center of rolled-out pastry, mustard-side down. Brush remaining 1 tablespoon Dijon on top of Brie. Roll out remaining half of pastry to a 9-inch square. Center over Brie and gently press around it to remove any air pockets. Trim pastry, leaving a 1/2-inch border around Brie. Transfer to a parchment-lined baking sheet. Gather dough scraps and reroll to 1/8 inch thick. Using cookie cutters or a paring knife, cut out leaf shapes and score cutouts to create veins. Transfer cutouts to sheet with Brie. Freeze until pastry is firm, about 20 minutes.
- Brush top and sides of pastry with egg. Adhere cutouts to top of pastry in a decorative pattern, and brush cutouts with egg. Bake 30 minutes. Reduce heat to 350 degrees and continue baking until pastry is puffed and golden brown, 25 to 30 minutes more (if it's browning too quickly, loosely cover with foil). Serve hot, with Boozy Fruit, apple wedges, and baguette slices.

- In a small saucepan, heat sugar and water until sugar is dissolved. Add berries. Bring to a boil. Reduce heat; simmer, uncovered, for 3 minutes. Combine cornstarch and cold water until smooth; gradually stir into the pan. Bring to a boil. Cook and stir for 2 minutes or until thickened. Remove from the heat; let stand for 10 minutes., Place bottom half of cheese in a small ungreased cast-iron or ovenproof skillet; pour 1/2 cup berry mixture over cheese. Top with remaining cheese and berry mixture. , Bake, uncovered, at 400° until cheese is softened, 8-10 minutes. Serve with chips.

- Place dried cranberries and water in a bowl let soak for 1 hour to rehydrate. Transfer cranberries and liquid to a medium sized sauce pan over medium heat. Add orange juice, orange zest, Grand Marnier, Ginger, Salt & Pepper to the cranberries. Simmer for 10 minutes until liquid reduces. Remove from heat and allow to cool.
- Brush a large baking sheet with melted butter. Unroll Phyllo dough. Cover the dough with plastic wrap, and a damp towel. Transfer 2 sheets of dough to a clean surface to work on. Using edge of work surface, stack 2 sheets of Phyllo parallel to side of work surface. Imagine you are going to build a rectangular box using the Phyllo, then trim the edges, to place your brie. Begin to build each side, brushing with butter to help hold in place. Layer until you have a closed box, you should use about 12 sheets of Phyllo. Using a sharp knife, trim Phyllo so corners are rounded. Once all Phyllo is trimmed you should have a cylinder. Place brie in the center of Phyllo. Spread 1 ½ cups cranberry relish evenly over cheese. Cover top of cheese with 2 layers of Phyllo dough. Tuck in edges of Phyllo dough so corners are even and neat. Brush Phyllo again with butter. Using a spatula, transfer Phyllo to baking sheet. Chill in fridge for at least 3 hours. When ready to bake, preheat oven to 400 degrees
