Steps:
- Cook bacon until almost crispy, let cool and finely chop.
- Caramelize onion in olive oil on medium low heat for 20 minutes. Add brown sugar a few minutes before finished. Sauté another 1-2 minutes, until the sugar is dissolved.
- Top the brie with the onions and chopped bacon.
- Bake at 350 degrees until soft and starting to ooze, about 10 minutes.
- Serve with French bread crostini's or crackers.

- Melt butter in heavy very large skillet over medium-high heat. Add onions; sauté until just tender, about 6 minutes. Add minced thyme, reduce heat to medium and cook until onions are golden, stirring often, about 25 minutes. Add garlic and sauté 2 minutes. Add 1/4 cup wine; stir until almost all liquid evaporates, about 2 minutes. Sprinkle sugar over onions and sauté until soft and brown, about 10 minutes. Add remaining 1/4 cup wine; stir just until liquid evaporates, about 2 minutes. Season to taste with salt and pepper. Cool. (Can be prepare 2 days ahead. Cover and refrigerate.)
- Preheat oven to 350°F. Unwrap Brie, reserving bottom of wooden box. Cut away only top rind of cheese, leaving rind on sides and bottom intact. Return Brie to box, rind side down. Place box on baking sheet. Top Brie evenly with onion mixture. Bake until cheese just melts, about 30 minutes. Transfer Brie in box to platter. Surround with baguette slices.

I got this recipe from my boyfriend's sister. It is absolutely amazing, and very easy to do. Spend a little bit of time preparing, and a lot of time enjoying! You can also garnish with candied walnuts.

- Preheat oven to 400 degrees F (205 degrees C). Place garlic on a baking sheet, and drizzle with olive oil. Roast for 15 to 20 minutes, or until soft. Set aside.
- Meanwhile, melt 1/4 cup butter in a skillet over medium heat. Cook and stir onion and apple in butter until tender and browned. Set aside.
- Arrange brie on top of thawed puff pastry. Top the cheese with the apple and onion mixture. Fold puff pastry over the cheese, and pinch closed. Brush with melted butter.
- Bake about 20 to 25 minutes, or until golden brown. Serve warm. Garnish with whole cloves of roasted garlic.

YUMMY! That is all I can think of when I am getting ready to make this! This is a great appetizer for a get together, shower or really just any time. This dish is perfect with entertainer crackers. If you like brie you are going to love this! I personally love the onions and will use the whole onion even though the recipe calls for only 1/2. This recipe pretty much is basic and can be altered to your liking. I have added more onion, I have added sometimes more or less butter, more or less sugar and every time the dish is wonderful! Once you make this you will decide what you like best. The melty, gooey cheese, the sweet sauce or the yummy sweet onions. Then go from there!

- Preheat oven to 300°F.
- Scrap the covering of the brie and place in baking dish large enough so that there is room around the cheese (about 1 inch or so).
- Melt butter in saute pan.

- Melt the butter in a large skillet over medium low heat. Add the onions and a sprinkle of salt and let cook, stirring occasionally, until the onions are soft and golden brown, about 20 minutes.
- Preheat the oven to 350. Cut the top white layer of the brie off of the cheese and discard. Put the cheese in a pan, a throwaway tin pan is fine, or put in tin foil.

- Place the brie wheel on a parchment lined baking sheet and pre-heat the oven to 350F. Using a sharp knife, score the top of the brie in an criss-cross. Set aside.
- Cut the onions in half from root to end and remove the outer skin. Cut in thin slices. Add the butter to a cast-iron skillet over medium-low heat. When the butter is melted, add the onions. When the onions are soft, but still white, add the thyme, salt, and ¾ of the Hormel Bacon Pieces. Let the onions slowly cook until they are soft and a rich caramel brown.
- After you have added the seasonings to the onions, put your brie in the oven for 20 minutes to bake.
- Remove from the oven, carefully place on a serving platter and top with the caramelized onions. Finish with remaining Hormel Bacon Pieces and serve with crackers.
