- Preheat oven to 400°; lightly oil a baking sheet; cut the goat cheese crosswise into six pieces; whisk the egg and water together and place the bread crumbs in a shallow dish.
- Dip the cheese slices into the egg wash, dredge them in the bread crumbs and place them on the baking sheet; bake for 6 minutes or until lightly golden but not melted; cool.

- Halve the goat's cheeses horizontally and mix the nuts with the crumbs. Coat the cheese in the egg, then the nut mixture. Mark the cut side of the cheese with a large piece of nut to show which side up it should be.
- For the onions, heat the oil in a non-stick pan, then add the onions. Stir well and cook for 10 mins until softened and starting to turn golden. Tip in the balsamic vinegar and honey, season and stir over the heat until syrupy. If freezing, open-freeze the cheeses until solid, then wrap individually with cling film and foil. Pack the onions into a freezer bag once cool. To defrost, thaw the onions and warm gently in a pan.
- To cook and serve, heat oven to 200C/180C fan/gas 6. Place the cheese on a sheet of baking parchment on a baking tray and bake for 20 mins. If you're baking from frozen, add another 5 mins.
- Arrange the salad leaves on plates and spoon the onions on top. Add the goat's cheese, drizzle with any juice from the onions and serve immediately.

BAKED EGGPLANT WITH GOAT CHEESE
Crispy slices of baked eggplant smothered in marinara sauce, basil and goat cheese.

- Preheat oven to 400*.
- Spray a baking sheet with a non-stick spray or brush with oil for the eggplant slices.
- Wash the eggplant and slice it into thick, 1-inch slices. You should have 4 to 6 nice slices. Optional step: With a sharp paring knife, remove the peel from each slice. The skin is edible but it can be tough in larger, more mature eggplants.
- Sprinkle the eggplant slices with the salt on both sides and place them in a colander or on a plate. This will draw away the excess water and remove any bitterness from the eggplant. Let the eggplant slices sit in the salt for 30 minutes.
- While the eggplant is draining add the butter and garlic to a small skillet and cook over medium heat until the garlic is fragrant. Add the bread crumbs to the skillet and stir to coat them in the butter. Continue to cook, stirring frequently until the Panko crumbs become golden brown (about 4 to 5 minutes). Transfer the breadcrumbs to a plate.
- Rinse the eggplant slices under cold water to remove the salt. Wipe each slice dry with a paper towel and set on a plate.
- In a shallow dish or pie plate, mix the egg white, whole egg, and salt. Set aside
- Arrange the plate with the eggplant slices, the plates of eggs, and bread crumbs for assembly.
- Dip one eggplant slice into the eggs and then the bread crumbs, pressing down so the crumbs adhere. Place on the baking sheet, repeat with the remaining slices.
- Transfer the baking sheet to the middle rack of the oven and bake for 20 minutes or until slightly soft.
- Remove from the oven and flip each slice over. Top each slice with basil and marinara sauce. Finally, add a slice of the softened goat cheese to each eggplant slice.
- Return the baking sheet to the oven and bake for an additional 10 minutes. If you want to brown the tops further, turn the oven temp to broil for the last 2 to 3 minutes. Serve immediately

My sister-in-law told me about this recipe which she got from Paula Dean. Goat cheese marinated in olive oil, breaded and baked. This is one of my favorite ways to eat goat cheese!

- Cut each goat cheese round in half, down the middle, like separating an oreo cookie.
- Put in a glass dish and drizzle with olive oil, and salt and pepper to taste.
- Cover and marinate overnight.
- The next day, preheat oven to 400F and in a food-processor, blend white bread with italian herbs to make the bread crumbs.
- Roll the goat cheese halves in the bread crumbs and place on a baking dish and bake for ten minutes or until the bread crust is golden brown and the cheese soft and oozing.
- Serve with baguettes.
GOAT CHEESE BALLS
This crispy, baked goat cheese balls recipe with cranberries, honey, and pecans is a festive appetizer for any gathering. And cooks quickly!

- Line a baking sheet or plate that will fit in your freezer with parchment paper (and clear out some space in your freezer to hold it).
- Place the goat cheese and cranberries in a mixing bowl. With a sturdy spoon, break up the goat cheese and stir it together with the cranberries. Continue to stir and "smush" the cheese, until the cranberries are fairly evenly distributed (it doesn't need to be perfect or hold together at this point).
- Portion the goat cheese mixture and roll into 18 balls, distributing the cranberries evenly. (To get 18, I find it easiest to divide the mixture into 3 portions, divide each of those portions in half, then divide each half into 3). The balls will be about 1 1/4 inches or so each. Place them on the prepared baking sheet.
- Place the pecans in a food processor and pulse until they are finely ground (don't over blend and turn them into pecan butter). Alternatively, you can place them in a thick ziptop bag and crush them with a rolling pin (or wine bottle).
- Transfer the ground pecans to a shallow bowl and stir together with the panko, salt, and thyme.
- In a separate medium bowl, thoroughly beat the egg.
- Working one or two at a time, roll a goat cheese ball first in the egg mixture, then the panko mixture. Lightly pat to adhere the crumbs to all sides. I find it easiest to use one hand as the "wet hand" (this is the one you use for the eggs) and one as the "dry" hand (for adhering the crumbs). Place the ball back on the parchment paper. Repeat with the remaining balls.
- Freeze the balls for 30 minutes to harden. After 30 minutes, they are ready to bake, or you can transfer them to a ziptop bag for longer freezer storage.
- When you are ready to bake, place a rack in the center of your oven and preheat the oven to 470 degrees F. Line a baking sheet with parchment paper and arrange the goat cheese balls on top.
- Bake the goat cheese balls until the crumbs are lightly golden and crisp, about 7 to 10 minutes depending upon your oven. Keep an eye on them as they cook to ensure the coating doesn't burn. If your oven doesn't bake evenly and you notice the ones in the pack browning before the ones in the front, rotate your pan 180 degrees F.
- With a thin, flexible spatula (or by lifting up the sheet of parchment-be careful, they roll!) immediately transfer the balls to a serving plate (if you leave them on the sheet, they will melt).
- Let cool 1 to 2 minutes, then drizzle with honey. Enjoy immediately!

- Place the rounds of goat cheese in a flat dish and add onequarter cup of the oil. Add the thyme sprigs or sprinkle with one teaspoon dried thyme. Let stand eight hours or longer.
- Blend the remaining teaspoon dried thyme with the bread crumbs and set aside.
- Preheat oven to 400 degrees.
- Remove the cheese rounds and coat them all over with the breadcrumb-and-thyme mixture. Put them in an oiled baking dish and place in the oven. Bake six to 10 minutes or until cheese is lightly bubbling and golden.
- Meanwhile, blend the remaining half cup of oil with the vinegar, salt and pepper. Pour this over the salad greens and toss.

BREADED GOAT'S CHEESE

- Prepare dinner plates with a bed of dressed mesclun salad or apple slices.
- In a deep pot, slowly heat to 350 degrees enough vegetable oil to completely submerge the disks when deep fried. While this is heating up, set flour, egg and bread crumbs in a 3 separate shallow plates; dip each disk of cheese in flour, then in beaten egg and finally in fresh bread crumbs, making sure breading completely adheres to all surfaces leaving no cheese exposed.
- With a slotted spoon or skimmer, lower the breaded cheese into the oil. Do not overcrowd or the temperature of the oil will be lowered considerably and the cheese will be greasy.
