Number Of Ingredients 8

1/2 c. Brown Sugar - firmly packed
1 c. Soy Sauce
2 t. Worcestershire Sauce
1 t. Garlic - minced
1/2 t. Black Pepper
2 T. Bourbon (opt.)
1/2 c. Chopped Pecans - toasted
1-2 Salmon Filets (2-2 1/2 lb. total)

Steps:

  • Combine all ingredients except the Pecans and Salmon in a bowl.
  • Place Half the marinade and the Salmon in a Ziploc bag - squeeze out the air and zip the bag tightly.
  • Set aside the other half of the marinade to use as a glaze.

  • While the glaze is simmering, preheat the oven to 400 degrees.
  • Place the chopped pecans on a flat baking pan which has been covered with aluminum foil or parchment paper.
  • Toast the pecan for 3-5 minutes until they darken a little and they start to smell sooo good.
  • Watch closely - the nuts can burn quickly!
  • Cover a baking dish or pan with aluminum foil.
  • Spray the foil-covered pan with cooking spray.
  • Take the Salmon out of the marinade and discard the marinade.
  • Place the Salmon (skin-side down) on the prepared pan.
  • Sprinkle the salmon with the toasted pecans pressing the pecans firmly into the salmon.
  • Brush or spoon 1/3 of the glaze onto the salmon.
  • Place the salmon in the oven.
  • Re-glaze the salmon with the glaze every 8-10 minutes (about 3 times).
  • Bake at 400 degrees for a total of 20-25 minutes until the salmon flakes easily.

BAKED BOURBON AND BROWN SUGAR SALMON NUGGETS

Baked Bourbon and Brown Sugar Salmon Nuggets image

Expensive restaurant dish that's best enjoyed in the comfort (and budget) of your own home. This recipe is a great base to enjoy as-is or play with to suit your creative tastes. This dish packs a flavor punch, so use milder side dishes like a rice pilaf and your favorite green beans to cool down the taste buds between bites and avoid sensation overload. It doesn't have to be expensive, but it does taste expensive! Have fun with it and share your variations in the reviews section to help inspire others.

Time 1h5m

Yield 6

Number Of Ingredients 10

8 ounces honey roasted peanuts
1 tablespoon ground black pepper
6 tablespoons butter
1 cup packed brown sugar
⅔ cup bourbon whiskey (such as Jack Daniel's®)
⅓ cup soy sauce
1 tablespoon crushed garlic
1 teaspoon onion powder
1 ½ pounds salmon fillet, skinned
1 serving cooking spray

Steps:

  • Place peanuts in a large resealable bag and pound into fine crumbs with a rolling pin, meat mallet, or flat side of a can. Add pepper; mix well.
  • Melt butter in a nonstick saucepan over medium heat. Add brown sugar, bourbon, soy sauce, garlic, and onion powder. Bring to a boil; cook until sauce thickens and has a syrupy consistency, 20 to 30 minutes. Remove from heat and let cool until it is still hot to the touch but not scalding, about 5 minutes.
  • Cut thinner parts of salmon fillets into strips and place in a small bowl. Coat with a little bit of the sauce. Cut thicker parts of salmon fillets into 1-inch cubes and place in the saucepan; stir to coat with sauce. Let sit until flavors combine, about 10 minutes.
  • Preheat oven to 450 degrees F (230 degrees C). Grease a large glass baking dish with cooking spray.
  • Place strips of salmon on one side of the baking dish and cubes on the other, making sure all pieces are coated with sauce but not overlapping. Sprinkle peanut and black pepper mixture evenly on top.
  • Bake in the preheated oven until strips flake easily with a fork, 5 to 6 minutes. Remove from the dish and continue baking until cubes flake easily with a fork, about 5 minutes more.

BOURBON GLAZED SALMON

Bourbon Glazed Salmon image

This simple salmon with bourbon glaze is absolutely delicious! It's a simple and delicious weeknight dinner that only requires 7 ingredients - and it's perfect for the whole family!

Provided by Jovita | Yummy Addiction

Categories     dinner     Main Course

Time 30m

Number Of Ingredients 7

4 salmon fillets (6 oz. (170g) each, skin on)
1/4 cup bourbon
1/2 cup packed dark brown sugar
1/2 cup soy sauce ((use reduced sodium for less salt))
1/2 teaspoon garlic powder
1/2 teaspoon Dijon mustard
salt and pepper (, to taste)

Steps:

  • Preheat oven to 425 F.
  • For the glaze: In a small saucepan, combine the bourbon, sugar, soy sauce, garlic and mustard. Bring to a boil and simmer on low for 10-15 minutes, or until reduced by half. Remove from heat and let sit to thicken.
  • Pat salmon fillets dry and season with salt and pepper on both sides. Lay the salmon skin side down on a lightly oiled wire rack set over a baking sheet (to catch the drips). If you don't have a rack, a baking sheet will work just fine. Bake for about 10-15 minutes or so, depending on the size of your fish. When the salmon is nearly done, turn the broiler on in your oven. With a food brush, spread the glaze on top of the salmon. Be generous with your glaze!
  • Return to the oven and broil (not too close to heat) for about 30 seconds. Watch carefully that glaze doesn't burn. Repeat the process: take out the salmon, brush with more of the glaze and broil for a few seconds. Remove from oven.
  • Arrange the fillets on each plate and drizzle each serving with the remaining glaze. Enjoy!

  • In a medium saucepan, combine the bourbon, maple syrup, brown sugar, Worcestershire, soy sauce, garlic, and apple cider vinegar. Bring the mixture to a boil over medium high. Continue to simmer rapidly, stirring almost constantly. The mixture will look very active and almost foamy. Continue to cook, stirring constantly, until mixture has thickened and reduced by about half, 3 to 5 minutes. Remove from the heat.
  • Position racks in the center and upper third of your oven and preheat the oven to 375 degrees F. For easy clean up in case the glaze leaks, line a large baking dish or rimmed baking sheet with parchment paper, then place a large piece of aluminum foil on top. Remove the salmon from the refrigerator and let stand at room temperature for 10 minutes while the glaze cools and the oven preheats.
  • Place the salmon on top of the foil. Sprinkle with the salt and pepper. Rub to coat, then brush the glaze all over the top.

  • For the bourbon glaze: In a small saucepan over medium heat, combine the bourbon, brown sugar, Worcestershire sauce, honey, Dijon mustard, vinegar, garlic powder, and 1 teaspoon kosher salt. Simmer the mixture, stirring frequently until the sugar has dissolved. Continue to gently simmer the glaze, without stirring, until it has reduced by half, 12 to 15 minutes. Cool for at least 15 minutes before using, to give it a chance to thicken up.
  • For the salmon: Position a rack in the upper third of the oven and preheat the broiler. Line a baking sheet with parchment paper. Season the flesh side of each fish fillet with 1/2 teaspoon salt and 1/2 teaspoon pepper (or if they don’t have skin, sprinkle 1/4 teaspoon salt and 1/4 teaspoon pepper on each side). Place them, skin-side down, side by side on the baking sheet. Broil for 4 minutes. Remove the salmon from the oven and, using a pastry brush, brush liberally with some of the bourbon sauce. Return the baking sheet to the broiler for 1 minute. Or, if you fillets are particularly thick, check for doneness, and if necessary, go a little longer.
  • Brush the fillets again with the bourbon sauce and transfer to a platter. Pour the extra sauce into a serving dish, and serve alongside the salmon for drizzling and dipping. (If you brush the sauce on too soon, the sugars in the glaze could burn, so doing it toward the end of cooking and then once more when the fish is out of the oven works out perfectly.)
