- Heat oil over high heat (can skip oil if bacon is super fatty). Add bacon and cook for 2 minutes.
- Add onion and garlic. Cook for 3 minutes until onion and bacon are golden.
- Add remaining ingredients. Stir, bring to simmer, then place lid on.
- Then either turn down heat to medium low (simmering gently) and cook on the stove for 1 hour, stirring every now and then so the bottom doesn't catch. OR bake at 160°C/325°F for 60 minutes.
- SLOW COOKER option: Reduce water to 1/4 cup, transfer to slow cooker and cook for 6 hours on low.
- The sauce should be thickened (cook with lid off for a bit if not thick enough) and glossy. Adjust salt and pepper to taste at the end. See notes for serving suggestions!

- This is a regular on our menu at this time of year with sausages or even a piece of fish. You can omit the bacon for a perfect vegetarian dish. Preheat oven to 180C. Drain beans and place in a large saucepan. Cover well with cold water and bring to the boil. Simmer until cooked, about 30 minutes. Drain and reserve. Heat olive oil in a heavy-based saucepan. Add onion, garlic, bacon, pepper and salt and cook gently until soft, about 15 minutes. Add tomato paste and cook for two minutes. Add wine and reduce by two-thirds. - Pick over and rinse 1 lb dried navy beans (2 1/4 cups). Soak in cold water to cover by 2 inches at least 8 hours. Alternatively, quick-soak beans (see cooks' note, below). Drain.
- Put oven rack in middle position and preheat oven to 350°F. Rinse and pat dry 1 (1/4-lb) piece salt pork (rind discarded), then cut into 3 pieces.
- Put beans and pork in an ovenproof 3-quart heavy pot with a lid. Add 4 1/2 cups water, 1 large onion (finely chopped; about 2 cups), 2 chopped garlic cloves, 1/2 cup Grade B maple syrup, 1 tablespoon dry English mustard (preferably Colman's), and 1 teaspoon freshly ground black pepper and stir to combine. THE ONCE AND FUTURE BEANS

- Heat oven to 250 degrees F.
- Soak beans in a plastic container overnight in just enough cold water to submerge them completely.
- Place a cast iron Dutch oven over medium heat and stir in the bacon, onion, and jalapenos until enough fat has rendered from the bacon to soften the onions, about 5 minutes. Stir in the tomato paste, dark brown sugar, and molasses.
- Drain the beans and reserve the soaking liquid. Add the drained beans to the Dutch oven. Place the soaking liquid in a measuring cup and add enough vegetable broth to equal 4 cups of liquid. Add the liquid to the Dutch oven and bring to a boil over high heat. Add in cayenne, black pepper and salt. Give them a stir and cover with the lid. - first step is to soak the beans overnight. I make sure to fill the bowl with enough water to allow for the beans to expand. This turns out to be about 1 inch of water over the beans.
- The next day you chop the bacon, dice the jalapenos and onions and add them to your pan. Alton Brown recommends a cast iron dutch oven. I don't have a cast iron dutch oven but I do have a 4 qt cast iron skillet. I used this and it turned out just fine. I would imagine this baked bean recipe would also work well in a crock pot as long as you do the initial sauteing in a regular frying pan. Over medium heat sautee the onions, jalapenos and bacon until the onions are soft (about 5-8 min).
- Stir this around for a little bit and then strain the beans and add them to the skillet. Save the water the beans were soaking in and then add 4 cups of this water to the skillet. It may seem like a lot of liquid but all this liquid will reduce by quite a bit during the cook. Add the cayenne pepper, salt, and pepper and bring this to a boil over high heat.
