1 tbsp oil
150g/ 5 oz bacon (, chopped)
1 medium onion (, finely chopped)
3 cloves garlic (, minced (or 1 1/2 tsp garlic paste))
3 x 400g / 14oz cans red kidney or other beans, drained and rinsed ((Note 1))
3/4 cup ketchup ((Note 2))
3/4 cup tomato passata / US tomato puree ((Note 3))
1/4 cup molasses ((Note 4))
2 tbsp cider vinegar
3/4 cup water
2 tsp mustard powder ((or 1 tbsp Dijon or American mustard))
1 1/2 tsp Worcestershire sauce
1/2 tsp cayenne pepper
3/4 tsp EACH salt & pepper (, plus more to taste)

Steps:

  • Heat oil over high heat (can skip oil if bacon is super fatty). Add bacon and cook for 2 minutes.
  • Add onion and garlic. Cook for 3 minutes until onion and bacon are golden.
  • Add remaining ingredients. Stir, bring to simmer, then place lid on.
  • Then either turn down heat to medium low (simmering gently) and cook on the stove for 1 hour, stirring every now and then so the bottom doesn't catch. OR bake at 160°C/325°F for 60 minutes.
  • SLOW COOKER option: Reduce water to 1/4 cup, transfer to slow cooker and cook for 6 hours on low.
  • The sauce should be thickened (cook with lid off for a bit if not thick enough) and glossy. Adjust salt and pepper to taste at the end. See notes for serving suggestions!

1 green pepper (diced)
1 onion (diced)
4 15 ounce cans pork and beans
1 cup ketchup
1 cup brown sugar
1 Tbs Worcestershire Sauce

Steps:

  • Fry up the bacon and crumble in pieces. Cut up the green pepper and onion and cook in the bacon grease until soft. Combine all ingredients together. Let simmer in pan on low for at least an hour.
  • Preheat oven to 350 degrees. Fry up the bacon and crumble in pieces. Remove the bacon with a slotted spoon and discard some grease. Add the green pepper and onion and fry until tender.
  • Combine bacon, green pepper, and onion, pork and beans, ketchup, brown sugar, and Worcestershire sauce in a 9x13 inch pan. Bake covered for 1 hour. You can also simmer in a large pot on the stove for 1 hour.

Adding salt to boiling water is almost a reflex action for many cooks. But when cooking dried pulses, such as beans, it is important not to add salt at the beginning of the process. If salt is added, this will harden the bean skins, making them less palatable. For the desired soft texture from dried beans, add salt at the end of the cooking time.

400g white beans, soaked overnight
100ml olive oil
2 medium brown onions, finely chopped
6 garlic cloves, finely chopped
150g streaky bacon, finely chopped (optional)*
1 tsp ground white pepper
3 tsp salt
2 tbsp tomato paste
300ml red wine
800g tin tomatoes
2 bay leaves
3 tbsp brown sugar
* Withhold this optional ingredient for the vegetarian version

Steps:

  • This is a regular on our menu at this time of year with sausages or even a piece of fish. You can omit the bacon for a perfect vegetarian dish. Preheat oven to 180C. Drain beans and place in a large saucepan. Cover well with cold water and bring to the boil. Simmer until cooked, about 30 minutes. Drain and reserve. Heat olive oil in a heavy-based saucepan. Add onion, garlic, bacon, pepper and salt and cook gently until soft, about 15 minutes. Add tomato paste and cook for two minutes. Add wine and reduce by two-thirds. Add tomatoes, bay leaves, sugar and beans. Bring to the boil, cover with a lid and bake for one hour, stirring occasionally.

It tastes great served with fresh cornbread or biscuits and honey. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy.

2 cups navy beans
½ pound bacon
1 onion, finely diced
3 tablespoons molasses
2 teaspoons salt
¼ teaspoon ground black pepper
¼ teaspoon dry mustard
½ cup ketchup
1 tablespoon Worcestershire sauce
¼ cup brown sugar

Steps:

  • Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
  • In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
  • Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

Steps:

  • Pick over and rinse 1 lb dried navy beans (2 1/4 cups). Soak in cold water to cover by 2 inches at least 8 hours. Alternatively, quick-soak beans (see cooks' note, below). Drain.
  • Put oven rack in middle position and preheat oven to 350°F. Rinse and pat dry 1 (1/4-lb) piece salt pork (rind discarded), then cut into 3 pieces.
  • Put beans and pork in an ovenproof 3-quart heavy pot with a lid. 2 (16 ounce) cans pork & beans, drained & rinsed
1 small onion, chopped (I like Vadalia best)
1 cup ketchup
1/2 cup packed light brown sugar
2 teaspoons dry mustard
2 tablespoons dark molasses
1/4 lb fully cooked bacon, sliced 1-inch pcs. (I don't recommend bacon bits)
salt & pepper

Steps:

  • Be sure to drain and rinse the beans. You can spray the crock pot with a small bit of Pam if you wish or use a non-stick pot.
  • Mix all ingredients in crock pot and slow cook on low for 2-3 hours, stirring now and again. Or on low heat for 1 hour on stovetop.
  • It is important to slow cook these beans for at least an hour so the sauce thickens to the beans.
  • You can use other types of beans, I have used Northern, Mexican (adding a bit of chili powder in the recipe), & Pinto.

1 medium onion, chopped
1/2 medium green pepper, chopped
3 large cans (28 ounces each) pork and beans
3/4 c. barbecue sauce
1/2 c. brown sugar
1/4 c. distilled or cider vinegar
2 tsp. dry mustard or 2 tablespoons Dijon

Steps:

  • Adjust oven rack to lower-middle position and heat oven to 325 degrees.
  • Fry bacon in large, deep sauté pan skillet until bacon has partially cooked and released about 1/4 cup drippings. Remove bacon from pan and drain on paper towels.
  • Add onions and peppers to drippings in pan and sauté until tender, about 5 minutes.
  • Add beans and remaining ingredients bring to a simmer. (If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients).
  • Pour flavored beans into a greased 13-by 9-inch (or similar size) ovenproof pan. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.

Steps:

  • Preheat the oven to 350 degrees F. Coat a 2 quart baking dish with cooking spray.
  • Cook the bacon in a skillet over medium heat until partially done. Remove the bacon from the pan.
  • Pour some of the bacon fat out of the pan, leaving about 1 tablespoon of fat in the pan.
  • Add the onions to the pan and cook for 3-5 minutes or until translucent. Season the onions with salt and pepper to taste.

1 ½ c. yellow onion (about 1 onion, diced)
1 c. green bell pepper (about 1 bell pepper, diced)
56 oz pork and beans (undrained (I used two 28 oz cans))
¼ c. ketchup
¼ c. molasses
2/3 brown sugar
¼ c. apple cider vinegar
2 tsp dry mustard
1 tsp garlic powder

Steps:

  • Preheat oven to 325 degrees F.
  • Cook bacon according to package directions. Drain on paper towel, Then chop into 1 inch pieces and set aside.
  • In the same pan that you fried the bacon, wipe away all but 2 tsp of grease. Cook the yellow onion and green peppers until almost fork tender (they will finish cooking in the oven).
  • Combine all ingredients EXCEPT for bacon and stir until combined. Pour bean mixture into a lightly greased 9x13 pan.

salt and pepper (to taste)
1/2 lb bacon (cooked, drained, and cut into small pieces or crumbled - OPTIONAL)

Steps:

  • Rinse and pick through beans thoroughly. (You want to pick out any bad beans that are cracked, darker then the rest, has holes or is shriveled. Also keep an eye out for small rocks - I rarely see these but I know it can happen.)
  • Combine beans, onion, dark brown sugar, molasses, apple cider vinegar, mustard, water, and black pepper in a 6 quart slow cooker. (Bacon gets added here if you are using.)
  • Stir just until ingredients are combined. Cover and cook on low until the beans are tender, about 12 hours.
  • Stir in salt to taste and additional pepper if desired. Start with half a teaspoon and go from there.
  • Turn slow cooker to warm until ready to serve.

2 onions , roughly chopped
2 celery sticks, roughly chopped
2 carrots , roughly chopped
2 tbsp Dijon mustard
2 tbsp light muscovado sugar
½ tbsp black treacle or molasses
2 tbsp tomato purée
800g piece pork belly
handful parsley , roughly chopped

Steps:

  • Soak the beans in a large bowl of cold water for at least 4 hrs or overnight. Heat oven to 180C/160C fan/gas 4. Drain and rinse the beans and put in a large flameproof casserole with 1.5 litres water. Boil for 10 mins, skimming off any scum that appears on the surface.
  • Add the onion, celery, carrot, Dijon mustard, sugar, treacle or molasses and tomato purée. Stir until everything is well mixed, then bury the piece of pork in among the beans. Cover tightly and cook in the oven for 2-2½ hrs until the beans and pork are very tender. Check halfway through the cooking time and top up with hot water from the kettle if necessary.
  • Take the pork out of the pot. Cut into large chunks and serve with the beans, sprinkled with parsley.

1/4 cup tomato paste
1/4 cup dark brown sugar

1 teaspoon black pepper
2 teaspoons kosher salt

Steps:

  • Heat oven to 250 degrees F.
  • Soak beans in a plastic container overnight in just enough cold water to submerge them completely.
  • Place a cast iron Dutch oven over medium heat and stir in the bacon, onion, and jalapenos until enough fat has rendered from the bacon to soften the onions, about 5 minutes. Stir in the tomato paste, dark brown sugar, and molasses.
  • Drain the beans and reserve the soaking liquid. Add the drained beans to the Dutch oven. Place the soaking liquid in a measuring cup and add enough vegetable broth to equal 4 cups of liquid. Add the liquid to the Dutch oven and bring to a boil over high heat. Add in cayenne, black pepper and salt. Give them a stir and cover with the lid. Place the Dutch oven in the oven for 6 to 8 hours, or until the beans are tender.

  • first step is to soak the beans overnight. I make sure to fill the bowl with enough water to allow for the beans to expand. This turns out to be about 1 inch of water over the beans.
  • The next day you chop the bacon, dice the jalapenos and onions and add them to your pan. Alton Brown recommends a cast iron dutch oven. I don't have a cast iron dutch oven but I do have a 4 qt cast iron skillet. I used this and it turned out just fine. I would imagine this baked bean recipe would also work well in a crock pot as long as you do the initial sauteing in a regular frying pan. Over medium heat sautee the onions, jalapenos and bacon until the onions are soft (about 5-8 min).
  • Stir this around for a little bit and then strain the beans and add them to the skillet. Save the water the beans were soaking in and then add 4 cups of this water to the skillet. It may seem like a lot of liquid but all this liquid will reduce by quite a bit during the cook. Add the cayenne pepper, salt, and pepper and bring this to a boil over high heat.
