HOTDOGS AND SAUERKRAUT CASSEROLE

I know others would add all kinds of things to this casserole but my mother made simple meals for seven and so I also like it simple as well as I like the dogs to soak up the kraut taste. - 1. Place half of the saurkraut with juice in a baking dish. Add hotdogs, as many as you will feed, on top of sauerkraut. No need to grease pan.
- 2. Add second half of sauerkraut with juice on top of placed hotdogs. Baking dish size depends on how many people you are serving and dogs being used. If 6-8 dogs, use a 13x9. Make sure to have enough kraut to cover. Use a smaller baking dish if only making for one or two.
- 3. Bake at 350 degrees for 35-40 mins. I like to see little tinges of browning on the tops of the sauerkraut. If the dogs split open a little, no worries.
- 4. I do highly recomend pairing this with boiled potaoes with butter on top, green beans and applesauce as they just go so well together! You will not believe the flavor of the hotdogs! Sometimes I will put a little mustard on the hotdogs.
- 5. You can also use sausages instead of hotdogs. You can also put the dogs and the kraut in a bun with mustard on top and it is delicous with frys also. The flavor of the dog cooked in the kraut juice...its just to die for, if you love sauerkraut as I do!
BRATWURST, SAUERKRAUT AND BEAN CASSEROLE

- Preheat the oven to 350 degrees F (175 degrees C). Cook bratwurst in a skillet over medium-high heat just until nicely browned on the outside.
- Spread sauerkraut in the bottom of a 9x11 casserole dish, leaving a 2 inch margin at the edges. Sprinkle celery salt and brown sugar over the sauerkraut. Place the sausages on top. Pour the beans around the outer edge of the sauerkraut. Cover the dish with a lid or aluminum foil.
- Bake for about 45 minutes in the preheated oven, until bratwurst links are cooked through.

SERBIAN BAKED BEANS (PREBRANAC)
Serbian baked beans (prebranac) is a traditional dish that can be made with or without meat, ours being the latter. It's full of flavour using simple ingredients.

- Preheat the oven to 200 degrees Celcius (390 degrees Fahrenheit).
- Add the onions to a saucepan on high heat with the lid closed. Saute the onions until they become translucent, leaving the lid on between each stir. This will take about 10 minutes.
- Add in the olive oil and put the lid back on. Saute until the onions begin to brown, then remove from heat.
- Once the onions are done, add in the rest of the ingredients (besides the bay leaf). Give it a good stir.
- Add the bean mixture to a ceramic baking dish, and flatten it out with the back of a spatula.
- Once finished, pour boiled water (around 1½ cups / 330ml) to cover the beans completely. Making sure you are adding just enough to cover them.
- Place the bay leaf in the middle of the dish.
- Put the dish carefully in the oven and bake for around 60 minutes or until it starts to brown a little on the top.
- At this point, change the oven setting to grill and grill the top for 10-15 minutes. Keep an eye on it so that it doesn't burn.
- Remove from the oven and let sit for 10-15 minutes before serving.

BAKED BRATS IN CARAMELIZED SAUERKRAUT

- Preheat oven to 350F
- Brush the brats lightly with olive oil.
- Brown them in a hot pan for a few minutes on each side, until they take on some nice color. Note: I do this right in the same pan I'm going to bake in, so make sure it can accommodate everything, and is oven safe. A 9 or 10 inch cast iron skillet or grill pan works perfectly, I use this one.
- Remove the brats to a plate and set aside. Add the onions and apples to the same pan and saute over medium heat for a couple of minutes. Stir in the brown sugar.
- Add the spices and continue to cook, stirring often, for 2 more minutes.
- Add the sauerkraut and cider to the pan and mix well. Make sure to get all the browned bits from the bottom of the pan, that's great flavor!
- Bring the pan up to a boil, then add the brats to the pan and nestle them deep down into the kraut so they will braise in the oven.
- Bake, uncovered, for about 40-45 minutes, just until the brats are cooked through (internal temperature should be 160F) and the sauerkraut is nice and caramelized. Note: Give the sauerkrat a stir once or twice during cooking to redistribute the juices.
- Serve immediately, with plenty of grainy Dijon mustard.

SLOVENIAN BEAN AND SAUERKRAUT HOTPOT (JOTA)

- Drain the soaked beans and place them in a large saucepan filled with cold water to cover by several inches. Bring to a boil and continue boiling briskly for 10 minutes. Reduce heat and simmer for 45 minutes or until beans are tender but not mushy. Drain, rinse with cold water to stop the cooking process, and set aside.
- In a large saucepan, sauté the spareribs or bacon until the fat begins to render out. Add the onion and garlic, and sauté until onion is golden, but not browned. Stir in stock, tomato paste, potatoes and sauerkraut. Bring to a boil, reduce heat and simmer, uncovered and stirring occasionally, for at least 20 minutes or until potatoes and sauerkraut are very tender and the mixture is thick.
- Remove pork, cut into bite-sized pieces and return to the saucepan along with the cooked beans and warm through, about 10 minutes. Adjust the seasonings. Some cooks thicken their jota with a roux if it is too soupy. But this is a subjective matter and one person's idea of the proper thickness of a jota is definitely not another's. Serve it the way you like it.

- 1. In a small roaster combine all ingredients, except bacon. Bake covered at 350° for 2 hours. After baking for 2 hours, place bacon slices on top and bake covered for 1 more hour. Remove cover for the last 20 minutes of baking so bacon can crisp up a bit. ENJOY!
