SOUTHERN BAKED BEANS & GROUND SAUSAGE

1.5 lbs ground hot breakfast sausage
1/2 C ketchup
1/4 C dark brown sugar
2 Tbsp spicy brown mustard
1 Tbsp Worcestershire sauce
1 tsp minced garlic
1 (28 oz can) pork and beans, (or 2 (15 oz) cans)
1 small yellow onion, (diced)
1/2 bell pepper, (diced)

Steps:

  • Preheat oven to 375° Fahrenheit. Spray 3 quart casserole dish with non stick cooking spray.
  • In a skillet on the stove top over medium heat, cook 1/2 lb hot ground sausage, browning and breaking it up into crumbles. When lightly browned and crumbled to desired size, remove from pan and set aside.
  • Slice 1 lb hot ground sausage into at least 10 patties. Using the same skillet as before, very lightly brown the sausage patties, but do not cook through. This makes sure they brown with a bit of crisp edges when baking later. Let patties drain on a paper towel.
  • In a large measuring cup, whisk together brown sugar, ketchup, spicy brown mustard, Worcestershire sauce and minced garlic to make the sauce for the beans. Set aside.
  • In a large bowl, mix together pork and beans, sausage crumbles, yellow onion, and green bell pepper. Stir in sauce from the previous step and mix thoroughly but gently. Pour bean and sauce mixture into the greased casserole dish. Top with sausage patties. Press the patties gently down into the beans.
  • Bake uncovered in preheated oven for 35-45 minutes. If necessary cover beans, with foil or lid around 25 minutes or so if the sausage begins to overbrown.

1 onion, chopped
3 cloves garlic, minced
1 jalapeno pepper , minced, if desired
1 red bell pepper, chopped or sliced
1 pound Polish sausage, kielbasa, or fully cooked bratwurst, cut into slices
2 (16-ounce) cans baked beans , undrained
1 (14-ounce) can diced tomatoes, undrained
1/3 cup ketchup
1/4 cup mustard

Steps:

  • Gather the ingredients.
  • In a large skillet, melt the butter over medium heat. Add onion and garlic; sauté and stir until tender, about 5 minutes. Add jalapeño pepper, if using, and green bell pepper; cook another 3 to 4 minutes.
  • Add the sausages to the skillet and cook until slightly browned, turning the sausages occasionally so they cook evenly.
  • Add the baked beans, tomatoes, ketchup, and mustard to the skillet and bring to a boil. Reduce the heat to low so the food is just simmering and cook, uncovered, stirring frequently, until slightly thickened, about 15 to 20 minutes. Serve immediately.

1 (8 ounce) can baked beans
1/2 lb pork sausage or 1/2 lb sausage meat

Steps:

  • roll out the pastry and cut into circles.
  • add 1 tsp baked beans and 1 tsp pork sausage.
  • fold the pastry in half and spread some butter or a beaten egg on top.
  • bake in a moderate over for 15 minute.

1/2 onion, chopped fine
1 small bell pepper, chopped fine
1/2 c light brown sugar
1/4 c ketchup
1 Tbsp yellow mustard
1 lb (roll) Jimmy Dean sausage

Steps:

  • 1. Cook sausage, onions, and bell pepper together in a large skillet.
  • 2. Meanwhile, in a large bowl, combine both cans of beans, brown sugar, ketchup, and mustard. Mix well.
  • 3. Add drained sausage to beans.
  • 4. Transfer all into a greased 9x13 casserole dish.
  • 5. Bake at 350 for about 30 minutes.

500g pack bread mix
8 sausages
2 x 420g cans baked beans
140g cheddar , grated
1 egg , beaten

Steps:

  • Prepare the bread mix following pack instructions. While the dough rises, make the filling. Skin the sausages and roll the meat into small meatballs, about 6-8 per sausage. Heat a large deep frying pan and brown the sausages. You may need to do this in batches. Once they're all brown, return them to the pan and pour in the beans. Mix to combine, then allow to cool a little while you roll the dough.
  • Heat oven to 200C/180C fan/gas 6. Grease 2 or 3 large, flat baking sheets. Divide the dough into 12 and roll out each one to a circle, roughly 17cm in diameter - and keep the remaining balls of dough covered with oiled cling film or a damp tea towel.
  • Taking each circle in turn, fill with a scoop of the bean mix and a little of the grated cheese. Fold in half, pressing well to seal. Crimp the edges then transfer to an oiled baking tray. Keep covered with oiled cling film while you make the rest. Brush with a little beaten egg and cook for 15-20 mins until puffed up and golden.
  • Remove and allow to cool slightly on a wire rack. Eat warm or at room temperature. If you would like to freeze the pasties, completely cool and freeze in a single layer on a flat tray covered well. Once frozen, transfer them to a freezer bag and seal well.
