I serve this as a meatless main dish, but it also makes a nice side dish. It freezes and reheats well, so I'll sometimes double the recipe. It has a colorful combination of carrots, corn, beans and tomatoes.

2 celery ribs, chopped
1 large onion, chopped
1 medium green pepper, chopped
2 tablespoons canola oil
3 garlic cloves, minced
2 tablespoons chili powder
1/2 teaspoon ground cumin
1 can (28 ounces) diced tomatoes, undrained
2 cups frozen corn
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
1 can (15 ounces) tomato sauce
2 tablespoons picante sauce

Steps:

  • In a large Dutch oven, saute the carrots, celery, onion, green pepper in oil for 5 minutes. Add the garlic. chili powder and cumin; cook 1 minute longer. Stir in the remaining ingredients; bring to a boil. , Cover and bake at 350° for 45-50 minutes or until thickened and vegetables are tender.

2 tablespoon spicy brown mustard
2 tablespoon Worcestershire sauce
1 tablespoon soy sauce
4 tablespoon brown sugar
6 - 8 slices bacon, cooked and crumbled

Steps:

  • Preheat the oven to 350°F. Spray a 9 x 13 x 2-inch casserole dish with nonstick cooking spray.
  • In a 4- to 5-quart Dutch oven, brown the ground beef, onion, and bell pepper. Add the pork and beans, barbecue sauce, ketchup, mustard, Worcestershire sauce, soy sauce, and brown sugar to the mixture. Simmer for 5 minutes.
  • Transfer the mixture to the prepared casserole dish. Crumble bacon over the top of the casserole and cover with aluminum foil. Bake 45 minutes. Remove foil and continue to bake for an additional 10 minutes. Let the casserole stand 10 minutes before serving.

1 red bell pepper, finely chopped
2 (16 ounce) cans pork and beans

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Melt the butter in a skillet over low heat. Cook and stir until the onion has softened and turned translucent, 10 to 15 minutes.
