OVEN-BAKED BBQ PORK RIBS



Oven-Baked BBQ Pork Ribs image

These Oven-Baked BBQ Pork Ribs make it super easy to get tender, fall-off-the-bone ribs that are full of flavor every single time!

1 tablespoon kosher salt (or to taste)
1 teaspoon black pepper
2 teaspoons dry ground mustard
2 teaspoons smoked paprika
½ teaspoon garlic powder
½ teaspoon onion powder
¼ cup brown sugar (light or dark)
1 rack pork spare ribs (whole or St. Louis-style, about 3½ to 4 pounds)
1½ cups barbecue sauce

Steps:

  • Preheat the oven to 300°F.
  • In a small bowl, mix together the rub ingredients until well-combined.
  • Place the ribs on a double layer of aluminum foil large enough to wrap the ribs. Note: I always fold together two pieces of foil to make one big piece for each layer
  • Sprinkle the ribs with the rub on both sides, evenly covering the ribs.
  • Wrap the ribs with the foil (fold the foil over long-ways down the middle and then fold the sides up from the bottom so the juice doesn't leak out). Place the foil packet on a large baking sheet.
  • Bake for 3 hours or until the meat is tender.
  • Remove the ribs from the oven, open the foil, and let the ribs cool completely, about 45 minutes to 1 hour. Cooling the ribs will allow you to move them around more easily in the next steps without them falling apart. Note: If you want to make the ribs a day or two ahead of time, remove the ribs from the cooking liquid and store them covered in the refrigerator. When you are ready to serve them, proceed with the recipe.
  • While the ribs are cooling, preheat the grill to high.
  • Once the ribs are cooled, remove them from the foil and cooking liquid and grill, basting with the barbecue sauce and turning frequently, until they are heated through and the sauce begins to caramelize, about 10 minutes. Note: I usually cut the rack of ribs in half before grilling to make them easier to handle.
  • Cut the ribs into pieces. Serve with extra barbecue sauce, if desired.

Rib tips are the parts of the rib that are cut away to make St. Louis ribs. Some butchers call this the pork brisket. This cut has a lot of cartilage, but a low, slow cook softens the cartilage and makes it tasty. I like to cut them into small pieces. These meaty bits are a little easier to manage than ribs, and their meaty, chewy texture makes a great appetizer or a main dish. Serve with additional barbecue sauce, if desired.

1 ½ pounds pork rib tips
1 tablespoon seasoned salt, or to taste
¾ cup barbecue sauce, or to taste

Steps:

  • Remove silver skin from underside of rib tips, if it is there. Rub seasoned salt on both sides of the meat.
  • Line a baking pan with aluminum foil and place seasoned meat into the pan. Cover tightly with another piece of foil and refrigerate for at least 4 hours, up to overnight.
  • Preheat the oven to 250 degrees F (120 degrees C).
  • Bake in the preheated oven, covered and undisturbed, for 2 1/2 hours.
  • Remove from the oven and increase oven temperature to 350 degrees F (175 degrees C).
  • Uncover and drain the pan, if necessary. Brush barbecue sauce over ribs. Return to the oven and bake for 15 minutes.
  • Turn ribs and brush with additional barbecue sauce; continue baking for another 15 minutes. Repeat this twice more, for a total of 1 hour baking time at 350 degrees F (175 degrees C). Remove from the oven and cut into desired serving size, about 1 1/2 to 2 inches.
  • Set an oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Broil in the preheated oven to develop a bit of char, 2 to 3 minutes, watching carefully to make sure they do not burn. Remove from the oven and serve.

2 cups sliced onions
2 cups ketchup
2 cups water
4 teaspoons salt
¼ cup Worcestershire sauce
½ cup white vinegar
½ cup dark brown sugar
4 teaspoons dry mustard
4 pounds pork spareribs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine onions, ketchup, water, salt, Worcestershire sauce, vinegar, brown sugar, and mustard. Split ribs down the center between the bones.
  • Heat a large lightly oiled skillet over medium-high heat. Add ribs and sear until browned. This may have to be done in several batches.
  • Place ribs in a single layer in two baking pans or casserole dishes. Pour half of the sauce over the ribs, reserve remainder.
  • Bake ribs in preheated oven for 3 hours. Turn and baste meat every twenty minutes with remaining sauce, using all sauce by two hours. Continue turning and basting ribs using sauce in the pan during the last hour of baking.

4 slices fresh ginger
2 pounds pork loin rib tips
boiling water as needed
2 tablespoons rock sugar, or to taste
1 ½ tablespoons white vinegar
1 tablespoon soy sauce

Steps:

  • Heat a cast iron pan over medium-high heat. Add oil, ginger and pork rib tips, in that order, to the hot pan. Stir-fry ribs until the surface of the ribs turns golden on all sides, about 5 minutes.
  • Pour enough boiling water on top of the ribs so the ribs are just covered with water. Cover with a lid and cook for 10 minutes. Remove lid and keep cooking until the water is almost absorbed, 5 to 20 minutes more. Be careful not to burn the ribs. Add rock sugar, vinegar, and soy sauce. Stir until well combined and cook until sauce thickens, 1 to 2 minutes.

2.5 tsp paprika powder
2 tsp garlic powder ((sub with onion powder))
1.5 tsp onion powder ((sub with garlic powder))
1 tsp cayenne pepper ((omit for not spicy))
1.5 tsp dried thyme
1.5 tsp dried oregano
1.5 tsp salt
0.5 tsp black pepper
2 - 2.5kg / 4 - 5lb pork ribs (2 racks)
3/4 cup sweet alcoholic apple cider (hard cider) (, or apple juice (Note 2))
1 tbsp olive oil
1/2 cup apple cider vinegar ((Note 3))
1 1/2 cups tomato ketchup ((or Aussie tomato sauce))
1/2 cup water ((or use remaining apple cider!))
1 1/2 tbsp molasses (, orginal (not blackstrap, Note 4))
1/3 cup brown sugar
2 tsp mustard powder
1 1/2 tsp garlic powder
2 tsp Worcestershire sauce
1 tsp salt
1 tsp black pepper

Steps:

  • Combine the Rub ingredients and rub onto both sides of the ribs (most on meaty side). Set aside to marinate for 20 minutes (or overnight).
  • Preheat oven to 160°C/320°F (all oven types).
  • Place ribs on a tray in a single layer. Pour apple cider underneath the ribs, cover with foil then bake for 1 hour 30 minutes or until the meat is pretty tender (Note 5).
  • Remove from oven, turn up to 180°C/350°F. Remove foil, drizzle with olive oil, then return ribs to oven for 15 minutes or until rub becomes nice and crusty.
  • Line a new tray with foil then baking / parchment paper (you'll thank me later).
  • Remove ribs from oven, transfer to lined tray. Pour any juices from tray over the ribs.
  • Flip ribs so the bonier side is up. Slather with Barbecue Sauce, then bake 10 minutes.
  • Remove from oven, then turn ribs over so the meaty side is up. Slather with Barbecue Sauce, bake 5 minutes. Repeat 2 or 3 more times until you've got a thick glaze on the ribs.
  • Cut ribs into individual or multiple rib portions and serve with remaining Barbcue Sauce!

1 rack baby back pork ribs
1 cup barbeque sauce

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).

  • Place ribs meat-side down on aluminum foil. Prick back of rib rack several times with a knife.
  • Generously apply coating of dry rub to all sides of rib rack.
  • With rib rack meat-side down, fold foil around it to create a tight seal. Transfer to sheet pan.
  • Bake in preheated oven until tender and cooked through, about 2 hours. Remove and cool 15 minutes.
  • Increase oven temperature to 350 degrees F (175 degrees C).
  • Open foil, drain and discard any accumulated juices and fat. Brush barbeque sauce on all sides of rack.
  • Place rack meat-side up and return to oven, leaving foil open. Bake for 10 minutes, remove from oven, and brush another layer of barbeque sauce on meat-side only. Repeat baking and brushing with sauce 4 more times, for a total of 50 minutes baking time.
  • Cut rack into individual rib segments and serve with more barbeque sauce.
