OVEN-BAKED BACON

Oven-Baked Bacon image

I always bake bacon in the oven! You just need to plan a bit ahead as the bacon takes longer. With baking, the bacon grease stays nice and clean and you can reuse it to saute vegetables or eggs for extra flavor.

BACON FOR THE FAMILY OR A CROWD

Bacon for the Family or a Crowd image

This is the way to get crisp bacon without having to constantly turn it, watch over it, or get burnt by splatters of grease. It 'fries' up flat and doesn't curl, which looks great beside a breakfast plate of eggs, and makes BLT sandwiches much easier. Very nice when feeding a family or crowd.

BACON FOR A CROWD

Bacon for a Crowd image

Whether you're hosting a group brunch or building BLT's for an army, these two sweet-and-salty toppings will add a little more oomph to your bacon.

Provided by Rick Martinez

Yield Serves 8

Number Of Ingredients 8

2 pounds thick-cut bacon
1/4 cup (packed) dark brown sugar
4 teaspoons chipotle chile powder
4 teaspoons smoked paprika
1 teaspoon kosher salt
1/4 cup pure maple syrup
2 tablespoons plus 2 teaspoons Dijon mustard
1/4 teaspoon cayenne pepper

Steps:

  • Place racks in upper and lower thirds of oven; preheat to 400°F.
  • If making Chile-Brown Sugar Rub: Whisk brown sugar, chile powder, paprika, and 1 tsp. kosher salt in a small bowl.
  • If making Maple-Mustard Glaze: Whisk maple syrup, mustard, cayenne, and remaining ½ tsp. kosher salt in another small bowl.
  • Divide bacon between two wire racks set inside large foil-lined rimmed baking sheets. Bake, rotating baking sheets front to back and top to bottom halfway through, until brown and crisp, 35-50 minutes (depending on the thickness of the bacon). Transfer to paper towels to drain.
  • Follow directions above, but generously sprinkle bacon with rub or brush with glaze about 5 minutes before it is done cooking. Rub should be melted and bubbling and glaze should look thick and caramelized.

Over the years, these beans have always been requested for any picnic or bbq we've held or have attended. Very easy too. Serves a large crowd but recipe can be scaled down to your liking. Kitty was a co-worker of mine years ago and passed along this recipe before she moved to the south.

  • Preheat oven to 400 degrees F. Line a baking sheet with aluminum foil or parchment paper. One pound of bacon fits perfectly on one baking sheet but you can cook two pounds of bacon at a time by adjusting your oven racks so that one rack is in the bottom third of the oven and the other is in the top third of the oven.
  • Arrange bacon slices close together in a single layer on the baking sheet. It's okay if the edges touch, you just don't want the bacon to overlap too much.
  • Place the baking sheet(s) of bacon in the oven and bake for 15-35 minutes, depending on the level of crispiness and doneness that you like and the type of bacon you are using. Flip halfway through baking, if desired, to get the bacon evenly crisp on both sides.
  • Remove the bacon from the oven and use tongs to transfer the individual slices to a plate lined with paper towels. Serve immediately or store in an airtight container or plastic bag and refrigerate up to 3 days.
