ROASTED BABY RED POTATOES
I made up this recipe myself...based on the taste and smell of my favorite potatoes from the to-go food bar at an Earth Fare organic grocery store. The taste is close, in fact I like mine better!

Steps:
- Place the red potatoes in a microwaveable bowl, add enough water to cover the bottom half. Microwave potatoes for 3-5 minutes to get them somewhat soft.
- Add all other ingredients together in a ziploc bag EXCEPT for the parmesan cheese -- set it aside for now.
- Remove potatoes from microwave and cut them in half.
- Place potatoes in the ziploc bag, shake until they are well covered with the mixture.
- Place the potatoes on a baking sheet, greased with a very small amount of peanut oil or cooking spray -- whatever you choose is fine, just so they don't stick.
- Sprinkle the potatoes generously with the parmesan cheese.
- Bake the potatoes at 400 for 20-25 minutes, turning them halfway through. Don't be afraid to let them brown as the crusty outside and tender inside makes them delicious.

- Preheat the oven to 375 degrees F (190 degrees C). Place potatoes in a saucepan, and add enough water to cover. Bring to boil, and cook until tender but still firm, about 10 minutes. Drain, and cool in a bowl of cold water.
- Cook bacon in a skillet over medium-high heat until evenly browned. Drain, crumble, and set aside.
- Remove cooled potatoes from water. Pat dry with a paper towel, and cut in half. Using a small spoon, carefully remove a small amount from center, leaving approximately 1/4 inch rim around each potato. Set reserved potato aside.
- In a bowl, mix together reserved potato, sour cream, bacon, seasoned salt, pepper, and chives. Spoon a small amount of mixture into each potato half and place on a baking sheet. Top each potato off with some shredded cheese.
- Bake for 10 minutes in the preheated oven, or until cheese is melted and potatoes are warmed through. Garnish with parsley, and serve.

- Heat the oven to 425°F. Put the potatoes on a large baking sheet and toss with the olive oil. Sprinkle with 1 tsp. of the thyme, 1 tsp. salt, 1/2 tsp. pepper, and toss again. Bake the potatoes until they feel perfectly tender when pierced with a skewer, 20 to 25 minutes. Remove from the oven and let rest until cool enough to handle, about 10 minutes. If not working ahead, increase the oven temperature to 450°F.
- Carefully hollow out each potato: Begin by slicing off the top; use a small spoon or a melon baller to scoop out most of the flesh inside, transferring it to a large bowl. Discard the tops. Mash the potato flesh with a masher or a fork, then combine it with the bacon, 1/4 cup of the chives, the crème fraîche, the remaining 1 tsp. thyme, 1/2 tsp. salt, and 1/4 tsp. pepper. Season to taste with more salt and pepper.
- Using a small spoon and your fingers, fill the hollowed potatoes with this mixture; it should mound a bit. Sprinkle on the cheese.
- Return the potatoes to the 450°F oven and bake until the filling heats through, 8 to 10 minutes. Sprinkle with the remaining chives and serve warm.

- 1. Preheat oven to 350 degrees. On a large oven proof pan, toss potatoes with evoo, salt and pepper.
- 2. Bake in oven for 30-35 minutes or until potatoes are fork tender. Remove from oven.
- 3. Cut potatoes on half. Slice off the bottom of each potato, a very small piece. This will enable the potatoes to sit properly on a platter.
- 4. In a mixing bowl, combine cream cheese, sour cream, cheddar cheese, shallots, roasted garlic, parsley, chives, bacon, salt and pepper to taste. Mix well.
- 5. With a small spoon , scoop out the middle of each potato. Smash potatoes and add to mixing bowl. Combine all ingredients thoroughly.

- 7. Remove and serve.

- Preheat oven to 375 degrees F. Place potatoes on a baking sheet, drizzle with olive oil and season with salt. Roast for 25 to 30 minutes, or until tender through to the center when pierced with a sharp knife. Remove from oven and allow to sit for about 15 minutes or until cool enough to handle.
- Slice the tops off the potatoes and use the tip of a sharp knife to outline the area you will scoop out, leaving a small rim on the inside of the skin so the potato skins will hold their shape. - Cut potatoes into 1" to 1 1/2" pieces. We didn't cut the really tiny taters. Place them in a large pot half full with warm water. Bring potatoes to a boil and cook for 7-9 minutes (they should be almost cooked) Drain, cover to keep warm, and set aside

ROASTED BABY POTATOES WITH EGGPLANT CAVIAR AND CREME FRAICHE

- Preheat the oven to 400 degrees F. Set a cooling rack into a baking sheet.
- Halve the eggplant lengthwise and score the flesh by making three long cuts down the middle and sides, making sure not to pierce the skin. Salt the eggplant and then place it
- cut-side down on the prepared cooling rack for 30 minutes to release moisture.
- Turn the eggplant over and remove the cooling rack. Using paper towels, dry the eggplant and the baking sheet of any moisture. Cut the eggplant into 1-inch cubes and place back on the baking sheet.
