BAKED APPLES WITH PRUNES, CINNAMON & GINGER
A simple, classic low-fat pudding to use up seasonal Bramleys

Steps:
- Heat oven to 200C/fan 180C/gas 6. Using a sharp knife, score a line around the equator of each apple. Put them into a baking dish with a small splash of water in the bottom.
- In a bowl, combine the ginger, cinnamon, prunes and sugar. Stuff the mixture into the apples so that they are well packed. Top each with a knob of butter and bake for 35-40 mins, or until cooked through. To test, pierce with a sharp knife - it should slide straight through. The apples can be cooked up to a day ahead, then warmed through in the oven or microwave before eating.
- Remove from the oven and baste the apples with the liquid left in the dish. Serve hot or warm with the ice cream.

- Preheat oven to 350 degrees F (175 degrees C). Grease a large baking dish with the butter.
- Mix brown sugar, vanilla sugar, cinnamon, and nutmeg in a small bowl. Layer about 1/3 of the apples in prepared baking dish; sprinkle with 1/3 of the sugar mixture. Repeat layers twice more.
- Bake in preheated oven for 30 minutes. Pour water over apples and continue baking until tender, about 15 minutes more.

- Layer apple slices in the bottom of an 8-inch glass baking dish.
- Mix water, butter, flour, and cornstarch together in a bowl until no lumps remain. Stir in brown sugar, cinnamon, and salt until smooth. Pour apples in the baking dish.
- Bake in the preheated oven, stirring every 10 to 15 minutes, until soft and juicy, about 45 minutes.

- Preheat your oven to 350F. Lightly oil a medium sized square or rectangular baking dish (mine was 7 x 13 inches; 8 x 8 or 9 x 9 square is fine, too).

- Preheat the oven to 400˚F. Thinly slice the apples into pieces about 1/8-inch thick. I don't take the time to peel the apples, but you can, if you prefer no peel. (The peels become very soft and tender when they cook!)
- In a 6-quart dutch oven, or 9x13 baking dish, toss the sliced apples with the coconut sugar, cinnamon, ginger, tapioca starch, orange juice, and salt. When the apples look evenly coated, cover with the lid (or use aluminum foil to tightly cover), and bake at 400ºF for 45 minutes.
- Remove the lid and give the apples a stir. Return to the oven to help any extra liquid evaporate, about 10 to 15 more minutes. The apples should be very soft, in a rich, caramelized sauce.
- Let the apples cool for 10 minutes, then serve warm with your favorite toppings, like whipped cream or vanilla ice cream.
